"Use It Up" Vegetable Fried Rice Ingredients: This is a great recipe to use up bits of leftover meat or vegetables so - 3 eggs. lightly beaten they don't go to waste. Leftover cold cooked rice works best. Try any - 1 tbsp oil fresh or frozen veggies, but make sure they are chopped bite-size if - 1/2 cup chopped onion using fresh, or thawed and drained if they are frozen. - 2 cloves garlic, minced (or 1/2 teaspoon garlic powder) - 3 cups cold leftover cooked brown or white rice (brown rice is preferable) - 2 cups of vegetables of choice, chopped into bite-size pieces - 1 Tablespoon low sodium soy sauce (or 1/2 Tbsp. regular soy sauce + 1/2 Tbsp. water) - Optional flavor enhances: ground black pepper, more soy sauce, sesame seeds - Optional: if desired, add 1 cup of cooked, chopped meat, fish, or chicken at the end

Instructions: 1. Spray a deep 12" with cooking spray and place over medium heat. 2. Pour lightly beaten eggs into skillet. Cook without stirring until eggs are completely cooked (2-3 minutes). Remove eggs from skillet and put on a plate. Cut eggs into strips and set aside. 3. Return skillet to burner and switch to medium-high heat. Add oil, onion, garlic, and any fresh vegetables being used. Cook while stirring occasionally until the onion has softened. 4. Stir in the rice and add thawed frozen vegetables being used, along with the soy sauce. Stir occasionally until hot. 5.
