Welcome to A Feast of Music 2017, Celebrates Russia: Music from the Golden Age

We are thrilled to have you here tonight and know that you are in for an unforgettable experience of scrumptious cuisine, fine wines, and brilliant performances of music. Tonight’s music includes an array of pieces by great composers of Russian history— from Mussorgsky’s familiar “Pictures at an Exhibition”; the heartbreaking Final Scene Duet from Tchaikovsky’s Onegin, and a grand finale of Tchaikovsky’s Serenade for Strings in C Major. Whatever won- ders you take away from this fabulous evening, the true contentment you may derive from tonight is the knowledge that your donations will support scholarships for NEC’s dedicated, passionate students.

Traditional Russian cuisine comprises of rich and hearty foods. This evening we are delighted to ofer a delicious menu of creative Russian cuisine for our culinary enjoyment. We are deeply appreciative to Badagoni Vineyards for generously donating fantastic wines to pair with each course of the meal. Grounded in the Republic of Georgia’s history in viticulture, the Badagoni winery has modernized their techniques and brought in wine experts from Italy to produce delicious as well as environmentally sound wines. We hope that you will enjoy them, in addition to a sampling of special wine crafed using ancient techniques in clay amphorae!

A cultural icon approaching its 150th anniversary in 2017, New England Conservatory (NEC) is recognized worldwide as a leader among music schools. Located on Boston’s Avenue of the Arts, NEC ofers rigorous training in an intimate, nurturing community to undergraduate, graduate, and post-graduate music students from around the world. Its faculty of 225 boasts internationally esteemed artist-teachers and scholars. NEC alumni go on to fill orchestra chairs, concert hall stages, jazz clubs, recording studios, and arts management positions worldwide. Half of the Boston Symphony Orchestra is composed of NEC-trained musicians and faculty.

NEC is the oldest independent school of music in the United States. Founded in 1867 by Eben Tourjée, its curriculum is remarkable for its wide range of styles and traditions. On the college level, NEC features training in classical, jazz, and Contemporary Improvisation. Graduate and post-graduate programs supplement these core disciplines with orchestral and professional chamber music training. Additional programs, such as Entrepreneurial Musicianship, assist students in developing the skills and knowledge needed to create a gratifying career in music, enhancing the NEC experience.

Through its Preparatory School, School of Continuing Education, and Community Programs and Partnerships Program, the Conservatory provides training and performance opportunities for children, pre-college students, and adults. Through its outreach projects, it allows young musicians to engage with non- traditional audiences in schools, hospitals, and nursing homes—thereby bringing pleasure to new listeners and enlarging the universe for classical music, jazz, and Contemporary Improvisation. Currently more than 750 young artists from 46 states and 39 foreign countries attend NEC on the college level; 1,500 young students attend on the Preparatory level; and 325 adults participate in the Continuing Education program.

It is my great pleasure to welcome you to New England Conservatory’s annual scholarship fundraising gala, which celebrates the extraordinary talents of our students and the diversity of musical styles and genres of NEC. In keeping with the Conservatory’s founding in the late 19th century, this year’s gala features the Golden Age of Russia and its notable contributions to music and culture.

A Feast of Music is one of the highlights of our year and afords the opportunity to share the passion and dedication of our students. Tonight, you will hear a wide variety of repertoire from Tchaikovsky and Rachmaninof to Sviridov and a special arrangement of Russian folk music. This broad range is representative of life at the Conservatory on a daily basis and fulfills our mission to embrace a wide range of music at the highest level. These values are instilled throughout the entire institution, College, Preparatory School, and Continuing Education, as you will hear and see this evening.

Complementing this wonderful music, Chef Laurent Poulain has designed a superb multi- course menu of contemporary Russian specialties, which will be paired with wines generously donated by Badagoni Vineyards from the Republic of Georgia, Vinolytics, and Pure Italian. It’s truly a feast on every level!

EXECUTIVE CHEF LAURENT POULAIN Laurent Poulain is the executive chef at Fairmont Copley Plaza. Passionate about local and regional ingredients, Chef Poulain incorporates the seasonality of New England into his menus as well as throughout the culinary oper- ation at Fairmont Copley Plaza. Chef Poulain has been an integral member in launching the 140 Supper Club, an intimate monthly invitation only dinner series tucked away inside Fairmont Copley Plaza. Chef also hosts the Holiday Bacchanal which features a lavish five-course dinner and wine pairing where the hotel’s dramatic lobby is transformed into a sophisticated winter wonderland with guests dining at a farmer’s table running the length of the space.

Prior to joining Fairmont Copley Plaza in October of 1996, Laurent Poulain was the exec- utive chef of the Ritz Carlton in Rancho Mirage, California, a four star, four diamond, 239 room resort property. Mr. Poulain oversaw daily activities of this resort’s three restau- rants to ensure guest satisfaction with high-quality food preparation and presentation. Earlier in his career, Mr. Poulain was the executive sous chef at both the Ritz Carlton in St. Louis, Missouri, and the Ritz Carlton in Mauna Lani, Hawaii, where he received the presti- gious “Leader of the Year” Award and the Malcolm Baldridge Quality Award. He was also a sous chef at the Marquis de Lafayette restaurant in Boston’s Swissôtel, which was one of Boston’s top-rated restaurants in the late 1980s.

Before moving to America, Chef Poulain studied and worked in his native France, where he was sous chef at several restaurants including La Braise, Chez Miocque, Club Mediter- anee in Paris, and Le Premanoir, a private luxury resort. Mr. Poulain is a graduate of the Centre de Formation d’Apprenties in Caen, France, where he received his C.A.P. in 1982.

Mr. Poulain has taught classes on “Cooking with the Master,” and has been featured on the Television Food Network, as well as a variety of local network afiliates. He has cooked at the prestigious James Beard House in New York, as well as at the Conde Nast Dining Room. Chef Poulain has also taught cooking classes at Fairmont Copley Plaza, and other venues. Most recently, Chef Poulain was the guest celebrity chef at the New England Conservatory’s Annual Feast of Music.
