  • Taco Head by Viola Canales
Taco Head by Viola Canales Mama used to pack two bean tacos for my school lunch each day. Every morning she'd get up at five to make a fresh batch of flour masa. She'd roll out and cook one tortilla at a time until she had a big stack of them, nice and hot, and then she'd fill each with beans that she'd fried in bacon grease and flavored with chopped onion in her huge cast-iron skillet. And each morning I would sit at the kitchen table and say, "Mama, can I please have some lunch money too, or a sandwich instead?" But the reply was always the same: "Why, mi’ja? You already have these delicious bean tacos to eat." It wasn't that the tacos weren't good; it was that some kids called all Mexican Americans beaners, so the last thing I needed was to stand out like a big stupid sign. All the other kids either bought their lunch at the cafeteria or took nice white sandwiches. I started going to the very end of the cafeteria, to turn my back and gobble up my tacos. Then I started eating each taco by first putting it in a bag. It would take me all of five minutes to eat, and then I'd go outside to the playground. I was always the first one there, often the only one for quite a while. But I didn't mind, except on really cold days, when I wished I were still inside. On one cold day, I so dreaded going outside that I started eating my second taco rather slowly.

What’s the secret to a flavorful spice mix for your taco evening? Most premade spice mixes don’t manage to get it right, and they end up tasting relatively mediocre compared to a taco from your favorite Mexican grill or fast food joint. The secret to any good spice mix – is to blend it yourself. We have a few tricks up our chef sleeves for the perfect taco spice recipe. Have you tried to make your tacos taste like Taco Bell, but can’t seem to get it right? We have a spice recipe that produces perfect seasoning that mirrors the spice used by this famous fast food chain, give it a try and see for yourself. 1. Try the Basics and go Fresh Here’s a secret recipe for a typical taco spice mix that breathes life into your taco’s. Blend these ingredients and store them in a mason jar in the back of your fridge to keep them fresh. Spices tend to last for quite a while. Spices come dried and crushed in most cases, so they’re easy to blend by whisking in a large mixing bowl – remember to wear cloth or mask around your mouth and nose, or you could be in for a sneezing fit when you whisk the ingredients.

National and local media picked at the story after the Los Angeles County Board of Supervisors passed new regulations, which promised to severely restrict food trucks, referred to as "loncheros"or "taco trucks," in East Los Angeles.2 The authorities and business interests supporting the restrictions argued that the food trucks were a cumbersome and unsightly form of vending. On the opposite side, loncheros, foodies, and those looking for cheap meals viewed the restrictions as a full-frontal attack on local Los Angeles, the food scene, and Mexican food cultures.' Culinary resistance and enforcement of the new restrictions resulted in taco truck litigation.
