Member Highlight Dolores Lurie has lived at Broken Sound for over two and a half years. She had never exercised prior to moving into Broken Sound. On behalf of our membership, we thank Caryle for her outstanding years of service and dedication to the Hadassah organization and look forward to her continuing commitment as Broken Sound Hadassah Fund-Raising Co-Chair. We know that with her ongoing involvement and the support of our members, Broken Sound Hadassah will be successful in advancing Hadassah’s mission of being involved with the Jewish community in the U.S. and in Israel. Baked Alaska Pastry Class with Kate Austin We would love for you to be part of our mission. Our executive committee has prepared a roster of exciting, fun filled, interactive and informative activities for the 2008-09 Season. Susette Rabinowitz—Rose Smith Co-Presidents Part 1 - Angel Food Yield: ½ sheet tray 360g. Egg Whites ¾ tsp. Cream of Tarter ¾ c. Sugar 5 oz. Cake Flour 1 ½ tsp. Vanilla ¾ c. Sugar ¼ tsp. Salt 1) In a mixing bowl on speed 3 whisk together egg whites, sugar, vanilla, and cream of tarter until soft peaks are formed. 2) Meanwhile sift the flour, salt, and remaining sugar and set aside. 3) Preheat oven to 375, grease and line Iris Malen and Daniel Margolis Janice Florin and Don Barker sheet tray with parchment paper. 4) Once whites are ready fold the dry ingredients into the egg whites. Spread the mix evenly on the sheet tray and bake in preheated oven for about 10 min. Part 2 - Sorbet Mango (makes 2 cups) Strawberry (can be made by sub. Mango) 1 ripe mango ¼ cup plus 2 tbsp. sugar 2/3 cup water 4 tsp. lemon juice

1) In a food processor, puree mango. 2) In a mixing bowl transfer 1 cup of the puree, and stir in sugar, water, and lemon juice until sugar is dissolved. Mr and Mrs Mandel Mr and Mrs Battista 3) Chill in freezer before turning.

Meringue 1 ½ cup of fresh egg whites 3 cups of sugar ½ cup. Water 2 tbsp. corn syrup

1) In a sauce pan boil sugar, water, and syrup to soft ball stage 260 2) Whisk whites until soft peaks. While the mixer is on high speed slowly pour sugar. Once all in, keep on high speed until thick.

Part 3 - Assembly Mr and Mrs Kellner Mr and Mrs Corwin Step one - Cut Angel food with desired cutter. Place on sheet tray and put in freezer.

Step two - Using hot water and an ice-cream scoop swirl pre-made sorbet. Place on top of chilled angel food. (Keep in freezer as much as possible) Step three - Using a piping bag and star tip, cover sorbet with desired pattern.
