menu has been prepared in accordance with ORDER 6 of 10.08.2011 for the healthy nutrition of children from 3 to 7 years old in kindergartens and children's kitchens. Note: All products on the menu are in accordance with the regulations on specific food safety and quality requirements offered in kindergartens. Namely: bread, pasta and potatoes products are low in fat, salt and sugar. Fruits and vegetables are fresh, preferably frozen and dried, instead of sterilized / they should be low in salt, sugar, fat, synthetic colors, preservatives, etc. / Fruit juices are 100% . Jams and marmalades are over 60% fruit content and less than 50% sugar content. Twice a week we offer milk and yoghurt with a fat content of 2%, the rest days they are with fat content of 3-3,6%. Buttermilk is salt free. Meat and meat product are free of tendons, fat and bones. Minced meat is veal or a mixture of veal 60% and pork 40 %. No skin on chicken meat. Fish is preferable fresh, boneless, low salt eggs. Eggs are fresh, stored under refrigerated conditions. Children are offered Dobrudza wheat bread. All products used for children's nutrition are consistent with The Bulgarian Institute for Standardization. Our menu is prepared by food technologist and coordinated with nurse Ertane Numan and Viola Shopova List of potential food allergens: 1.     Kebapche Minced meat grilled sausage Ingredients 2 lbs minced meat (60% pork, 40% beef) 1 tablespoon salt 1 tablespoon ground black pepper 1/2 teaspoon cumin 1 glove garlic, minced (we prefer it with garlic but it's not necessary) Preparation Mix all ingredients together, mix well. Leave in the fridge for at least 30 minutes. Take out and roll in sausage like pieces. Makes about 30 pieces. Kyufte Minced meat meatball Ingredient 2 lbs minced meat (60% pork, 40% beef) 1 onion, chopped 1 tablespoon salt 1 tablespoon ground black pepper 1 teaspoon cumin 1 glove garlic, minced (we prefer it with garlic but it's not necessary) Preparation Mix all ingredients together, mix well. Leave in the fridge for at least 30 minutes. Take out and shape in balls then flatten in patty-like pieces. Makes about 20 pieces. If you think this recipe is exactly like the one for kebapche, look again - this one has onion in it and it makes all the difference Shopska Salad Traditional Bulgarian salad Ingredients 4 ripe tomatoes 2 long cucumbers 1 onion 1 red or green pepper 1/3 bunch of parsley 2 tablespoons (olive) oil 3 tablespoons of red wine vinegar 1 cup (1/2 lb) Bulgarian cheese (or feta cheese) Preparation Chop all tomatoes (we recommend leaving the pieces bigger), cucumbers and the pepper and put in a bowl. Add the finely chopped onions and parsley. Sprinkle with the oil and vinegar and mix it all together. Grate the feta on top. Previous research has shown that post-socialist transitions are unique, complex, and spatially uneven processes, with multiple outcomes. Much, however, remains poorly understood regarding these processes. The dominant macro-level focus of neo-liberal and evolutionary theories on transition has not been particularly helpful in understanding experiences of post-socialist rural women. It is therefore critical to complement this work with a focus on the micro- scale. Literature on transition ethnography, women and economic restructuring, and feminist political ecology has shown how insights at the micro-scale can begin to predict and explain the changes in rural women’s livelihoods. Overall, it is clear that incorporation in the global economy and the economic restructuring associated with transition has profound and differential impacts on women’s livelihoods and everyday lives. This literature does not make clear, however, whether rural women in particular are ultimately better or worse off, how transition experiences vary among rural women, and to what degree these are influenced by local uneven development.

    Traditional Bulgarian recipes Recipe 1: Sunday banitsa Products: 800 grams white flour 2 eggs 2 spoonfuls of vinegar 500 ml. Cool water 1 spoonful salt for the stuffing 400 grams cow cheese 4 eggs oil 70 grams butter for covering the banitsa Recipe for banitsa • Beat the eggs, water, salt and vinegar • Sieve the flour and make a well in the middle, add small portions of the mixture and knead until the dough is soft. Split the dough into 6 balls and knead each of dough ball separately. Cover them well with oil and leave them at rest for 30 minutes on a floured table. • Take one ball and spread it well with the aid of a rolling pin, then place the spread dough on a cloth and keep spreading it further until you get a very thin almost transparent crust. Cut the edges, sprinkle with oil and stuffing (the eggs and cheese). With the help of the cloth underneath you have to roll the crust and the stuffing and place the roll in an oiled pan. You do this with all dough balls. • The ready banitsa should be sprinkled on top with the melted butter and baked at 200 degrees until ready. • When you take the banitsa out, if you think it is too oily for you, you can simply spill out the excess oil, sprinkle with water and cover the pan with a dry cloth.
