Que Syrah Sirah...Shiraz!? Que Syrah Sirah...Shiraz!? History: DNA research shows that it is an offspring of Dureza (native to the Ardèche) and Mondeuse Blanche (native to the Savoie) in Southwest France. Grape was growing in Rhone before Romans arrived in 1AD We know that it comes from France near the Rhone Region, probably from the nearby forests But we don’t know how long ago. Evidence says 77AD, with writings from Pliny the Elder, but not 100% it was Syrah he wrote about. Petit Sirah is not Syrah, but Durif a cross between Syrah with Peloursin The Name: It is known as Syrah in Europe, US & South America It is known as Shiraz in Australia, New Zealand & South Africa Different Myths of its origins based on the city Shiraz that produced a white wine Shirazi. 1) It was brought by the Phocaeans to Marsielles in 600 bc from Shiraz Persia and later to The Rhone. Marsielles doesn’t have trace of Syrah, how did it get North? 2) Brought by crusader Gaspard de Stérimberg, to Rhone from the city Shiraz in Persia. Settled as a hermit a top a Mountain and brought Syrah to Hermitage. Shirazi was a white wine; No ampelographic Investigation on grapes from Shiraz 3) Brought from Syracuse, Sicily by the Emporer Probus Lacks documented evidence and ampelographic findings Others believe that the French name was once Scyras, and the English name is Shiraz, since there is British mention of Shiraz. What is it like? Thick Skinned Grape Does well in hot Climate Easy to grow The color is super dark, Purple color Tannins are high and allow wine to age very well Syrah usually is full bodied Serving Temperature 65° Aromas: Violet, blue fruits & black pepper. -

Many of you know the story of a bottle of Condrieu that my dear friend Dan Stromberg brought to our mutual birthday celebration while we were both attending viticulture/enology school. At wine school, that sort of thing counts as studying, and we were both very diligent students. Beyond the name on the bottle, I knew nothing about Condrieu- never heard even of it. A year later I was living in that tiny village- the homestead of Viognier, helping with harvest. While it all happened pretty fast, it wasn’t as easy as it sounds. As the recipient of a French wine studies scholarship, I had the opportunity to go just about anywhere I wished- so long as I worked for free, and didn’t complain (perfect criteria for anyone wishing to start their own winery). Everything was going great until I asked for a ‘post’ in Condrieu. Nobody in Condrieu ‘wanted’ me. Not even for free! The short version is that the region had been in decline for decades and was just beginning to get back on its feet. -

RECAP NOTES ROUSSANNE SYMPOSIUM At Tablas Creek Vineyard Tuesday-Thursday, July 22nd-24th, 2008 I. Presentation on history of Roussanne in America (Patrick Comiskey) a) Roussanne is known by as many as 20 surnames b) The first mention of Roussanne in American history is through Thomas Jefferson, who named Hermitage white wines as some of the greatest in the world and imported them into the United States c) The first pre-Phylloxera plantings of Roussanne were in the 19th Century and it was used as a blending grape for Petite Sirah d) Roussanne was planted in the 1870s in Sonoma, Napa and Santa Clara Counties, most notably in Natoma Company's 330-acre plot near Folsom e) However, the dual blows of Phylloxera and Prohibition dramatically decreased plantings in California, and in 1927 the last Roussanne vines were pulled from the Natoma property. f) In 1939, U.C. Davis professors brought back hundreds of varietals from Europe, but did not include Roussanne. g) In modern times, the modest revival of Roussanne can be traced to the enthusiasm of many producers for the Roussanne Vieilles Vignes of Château de Beaucastel. First, Randall Grahm brought in what he believed were Roussanne cuttings from Châteauneuf du Pape (later found to be Viognier) and used them in his Le Sophiste blend with Marsanne. John Alban sourced other Roussanne clones from the Rhone and produced his first varietal wines in 1991. Tablas Creek brought in Roussanne from Beaucastel in 1989, but didn't plant any in the vineyard until 1994. Nearly all Roussanne cuttings in California, Washington and Oregon are descendents of those brought in by Alban or Tablas Creek. -

Many of the selections come from small, family-owned wineries driven to produce outstanding wines that are never subjected to undue manipulation while the remainder come from importers that we consider dear friends and that have shaped the landscape of American wine culture. Other selections include classic cocktails as well as delicious and creative signature drinks that draw inspiration from the classics with consideration to wellness and curative ingredients. In staying true to our love of locality and sustainability, the beer selections come from the Blackberry Farm Brewery. A collection of spirits is also built-in that highlights hard to find and pedigree distillers. As you peruse the selections, we invite you to reference the index of producer and winery anecdotes found in the back of the menu. Cavallo Point sits at the gateway to California’s venerable North Coast, home to some of the world’s most renowned wine-growing regions. Our list celebrates the history of wine in California, and presents a vision of where it is going. From the state’s legendary wineries that laid the foundation, and the cult wines driving the mystique, to the small production, artisanal producers who are pushing the envelope of quality, we strive to tell the true story of wine in California. While we are passionate about the wines made here by our friends and neighbors, we would be remiss to ignore the incredible wines produced around the globe. The centuries old wine-making traditions brought here from the old-world have been built upon to become the California wine culture that we enjoy today. We pay homage to those traditions through our extensive collection of the finest wines produced throughout the world. The Cavallo Point wine list is comprised of over 2,200 selections from 25 countries, with vintages dating back to 1922. Our Sommeliers are always happy to offer their guidance and recommendations. If you have a special bottle from your cellar you would like to enjoy while dining with us, our corkage fee is $30.00 per 750ml, and we will gladly waive one corkage fee for each equivalent bottle purchased from our list. WINE SELECTIONS We strive to present a thoughtful and comprehensive list of wines from around the world that best suit my preferences and those of our guests. Small boutique wineries and world renowned labels find a place here, with a focus on the wines of Los Carneros, Napa Valley, and Sonoma County. We want to share not only an array of styles, but the history and traditions of these regions, as well. Many of the wines featured herein, whether local or from afar, are made from grapes grown by farmers who practice sustainable, organic, or biodynamic farming methods. Should your occasion bring you to our restaurant prepared with wine of your own, we allow our guests to bring up to two bottles of wine, with a $35 corkage fee per 750ml. However, we gladly waive one corkage fee for each 750ml bottle which you purchase from our list. HARRIS’ W INE LIST Wine has been produced for millennia. The earliest evidence of a fermented drink based on grapes goes back about 8,000 years. Here in the United States, we’ve only been making wine for about 300 years. So it’s safe to say that we’re still playing catch up. Having said that, we’ve made some amazing progress in that relatively short period of time. Wines made in the U.S. are recognized as being among the finest in the world. Given Harris’ proximity to Napa and Sonoma Counties, it’s no surprise that you’ll find an abundance of wines from those regions represented on our list. But as the history of wine spans thousands of years, we pay homage to our roots and offer a solid cross section of Old World wines as well. The world of wine is massive. Creating a truly comprehensive list is not possible, but we do try. As we are a Steakhouse, you may notice that we represent fuller bodied red wines more than lighter whites.
