Briess Malt and Malt Extract Briess’ roots are in Moravia, the famous barley region of central Europe and the source of our Czech malt. Adolphus Briess first malted barley in Brno, Moravia in 1876 and continued until 1940. His son opened the U.S. maltings in 1901 which today is run by great-grandson Roger. Briess is the only North American maltings producing roasted malts which require additional expertise and equipment. Briess maintains a laboratory and licensed pilot to regularly evaluate malt and malt extract. The extract is essentially made as ordered and, as a result, is fresher than imported. Homebrewer’s growing awareness of this long existing problem, i.e., old out-of-date imported extracts, recently resulted in distributors discontinuing some imported extracts. Imported extracts are cheaper than Briess but we believe the consistent quality and freshness of Briess is worth the extra cost.

The recent attention given Maris Otter is largely a case of marketing hype over substance. Maris Otter is a winter barley. Spring barleys are preferred over winter barleys worldwide for brewing. Winter barleys are generally for feed. However, Maris Otter is one of the few examples of winter barleys suitable for brewing. brewing ales with pilsner malt All pilsner malts available in America including Czech, German, Belgium and French are suited to single temperature infusion mash schedules, historically associated with ales. Decoction and step mashes can used as well (see p 13). All of these malts are ‘modern’ well modified malts (see discussion page 13). I’m a little biased, but some of the finest Texas commercial ales as well as lagers are brewed with Czech pilsner malt. That said, pale ale malt is made a little differently than pilsner malt which results in a slightly different flavor.

Why Partial Mash? Quick-and-Dirty Partial Mashing What rewards are there in making beer from grain rather than extract? The reason I give most often is simply that there are some flavors due to particular grains or adjuncts that simply are not available in any extract. For example, if you want to make an oatmeal stout, you must mash the flaked oats. The same can be said of rye. If you want to mimic the creaminess of Guinness Stout you need to mash flaked barley. I used to mention munich malt but Marie’s munich extract addresses that. Mashing is also interesting and fun; it’s an extension of the hobby.

You need a little more equipment, namely a lauter-tun and large pot. The most important thing is not to worry and just have at it. Mashing Procedure These simplified and brief instructions presume you have made beer from extract and are comfortable with such terms as pH, lauter-tun, etc. You should have a book such as The New Complete Joy of Homebrewing as well. There are many different types of mashing equipment (Phil's lauter-tun, 3-level systems, picnic coolers, pots, etc.), so be flexible in adjusting your procedure to fit your equipment. The notes below on strike water, pH, and flow rate are applicable to all systems however. 1. Bring strike water to ~170°F and add grist (crushed grain) slowly while breaking up dough balls. Adjust mash temperature to ~154°F using either cold or hot water or heat. You may check pH at this point although it is rarely necessary to adjust pH. 2. Cover mash and let stand for ~45 minutes. Conversion will be complete within this period and likely sooner which you can confirm with the iodine-starch test. Details are given in most homebrewing texts. (Iodophor works just as well as tincture of iodine by the way.) 3. During the mash bring your sparge water to ~175°F. Sparge at a reasonable rate which you can determine for your particular system from information below. Catch the first ~1/2 gallon and return to mash because it will have a fair amount of husk material. 4. Sparge until you have about ~6 gallons (the boil will evaporate ~1 gallon) or until the pH rises above ~5.8, whichever comes sooner. You will likely find that pH is rarely a problem here as well, particularly if you add a few drops of acid to your sparge water. 5. Honest Original Gravities Many shops overstate OG’s of extract kits by 10-20%. Part of the problem is that homebrewing references neglect the trub at the bottom of your fermenter. St. Pat’s gravities are based on 5 gallons of beer, not 5 gallons of beer and trub. Briess syrup and dry extract yield 35 and 44 points/lb-gallon respectively, but we use the more realistic 32 and 41 in calculating gravities. Moreover, these are practical values in that we know some beer is lost in racking. Multiply our gravities by ~1.15 to compare with others or simply compare ingredients. Storage & Packaging of Hops Hop stability depends on oxygen exclusion (most important) and tem- perature. I keep hop pellets refrigerated in air-tight , not plastic bags. ‘Oxygen-barrier’ bags are better than bags but still inferior to vials. It costs a little more to package hops in vials rather than plastic bags. Each clear vial has graduated markings, so it’s easy to eyeball 1/2 ounce portions of hops. Hop pellets are more resistant to oxidation than whole hops. This is why pellets are usually fresher than whole hops. Under commercial storage conditions, whole loose hops lose 16-52% of the bitterness, flavor and aroma in a year while pellets remain unchanged. (The exception to this is the hop plugs.) Also, pellets are more economical because AA utilization is ~15% greater. Wort clarification is often improved with pellets as well. On the other hand, whole hops are more aesthetically pleasing.

Lager yeasts are commonly called bottom- or cold-fermenting. They make clean, malt-accentuating beer at cold temperatures. Clean simply means the beer tastes like the products from which it was made, viz barley malt and hops. Ales are not clean in this sense because they have fruity flavors. A long-standing homebrewing myth is that you cannot make good beer with lager yeasts at ale (warm) tempera- tures. Most lager yeasts do in fact make very good beer when used at ale temperatures. It may be argued, however, that such beers have more ‘ale’ character in that they will have fruitier tones than a traditional cold-fermented lager.

Lagering Lagers are traditionally fermented at ~50-55°F during the primary fermentation. This is often, although not always, followed by a diacetyl rest at ~60°F for one day. The temperature is then dropped to ~40°F for ‘lagering’. Both refrigerators and freezers are too cold for primary fermentation so you need a Refrigerator Temperature Controller. The Controller allows you to easily attain any of these temperatures. After pitching Wyeast, don’t drop the temperature into the 50’s immediately. Wait ~6 hours for an XL pack and ~12 hours for an Original. If you step up the Wyeast pack in another starter, then your wait will be less if at all depend- ing on the size of the starter. The important point is to have the fermentation at a low temperature but not to delay the onset of fermentation by cooling too quickly.

Diacetyl Rest Diacetyl is a chemical byproduct of fermentation which enhances the smoothness of beer and whose flavor is similar to butterscotch, , or vanilla. These are desirable flavors in some beers but not in most lagers. The diacetyl level can be easily reduced by a ‘diacetyl rest’, the process of warming the lager to 60°F for 1 day immediately after primary fermenta- tion. Turn off heat, cover pot as well as possible w/ lid, and run cold water thru chiller to drop hot wort below 90°F SINGLE STAGE PLASTIC 7P. PITCH YEAST After cooling, pour wort into fermenter. Sanitize yeast pack then cut open and add to wort. Shake or stir vigorously to aerate the wort. Repeat aeration an hour later. Attach lid. Fill airlock half full with water and insert airlock and stopper in lid. 8P. FERMENTATION a. Keep fermenter at 65°-75°F. Fermentation will begin in ~24 hours and be vigorous for ~1-2 days. b. Fermentation will slow down and be complete in ~1 week. During fermentation there will be white foam on top of beer and bubbles coming from airlock. You know it is done when no bubbles are coming from airlock and surface of beer is foam free, like flat beer. 9P. BOTTLING a. Sanitize 2 cases of bottles by soaking in bleach solution (1 tablespoon bleach/gallon of cool water) for ~30 minutes. b. Drain and rinse bottles until bleach odor is not present. c. Boil priming sugar in 1 cup of water for 2 minutes. Stir gently into beer. It's OK to add this small amount hot. You want priming sugar to be evenly dispersed in the beer without overly disturbing trub (sediment) on bottom. d. Sanitize bottle filler and vinyl tubing for ~5 minutes. e. Attach vinyl tubing and bottle filler to spigot. f. Fill bottles by pushing filler against bottom of bottle. Cap. 10P. CONDITIONING Store in dark at 65°-75°F for 1-2 weeks. Congratulations! Boil priming sugar in 1 cup of water for 2 minutes. Stir gently into beer. It's OK to add this small amount while hot. You want priming sugar to be evenly dispersed in the beer without overly disturbing trub (sediment) on bottom. d. Sanitize bottling and racking kit (carboy cap, vinyl tubing, racking , bottle filler) by soaking in sanitizing solution for ~5 minutes. Rinse away bleach odor. e. Attach bottling and racking kit to carboy. Start siphon by blowing into open port of carboy cap while depressing bottle filler in beer bottle. f.
