Food Truck Vendor Packet Tacoma Musical Playhouse 2015 Food Truck Festival FOOD TRUCK VENDOR PACKET Saturday, August 1, 2015 TACOMA11:00 MUSICAL AM – 8:00 PLAYHOUSE PM ‘WEST SIDE STORY’ 1ST EVER FOOD TRUCK FESTIVAL Tacoma Musical Playhouse 2015 Food Truck Festival Saturday, August 1, 2015 11:00 AM – 8:00 PM ABOUT THE EVENT: This will be Tacoma Musical Playhouse’s (TMP) first food truck event and it’s scheduled during our last production of the 2014 – 2015 season West Side Story on Saturday, August 1, 11:00 AM – 8:00 PM. We plan on having a wide variety of trucks from the Puget Sound region. CONTACT INFORMATION: Tacoma Musical Playhouse 7116 Sixth Avenue Tacoma, WA 98406 253-565-6867 | [email protected] Attention: Sue Snyder LOCATION: TMP’s Food Truck Festival will take place in the back parking lot of the Tacoma Musical Playhouse at 7116 Sixth Avenue, Tacoma, WA. TMP’s food truck vendors must stay on the outside perimeter of our parking lot. All vendors must be self-sufficient. TMP is not able to provide access to utilities. SECURE YOUR SPOT: Submittal of application and fee does not guarantee participation. Acceptance into this event is based on the date and time of application submission, diversity of mix of approved vendors, and payment. All applicants will receive a confirmation e-mail indicating whether they have been approved to participate in the TMP Food Truck Festival. Food Truck Deposit (No Refunds) $200, or 10% of Sales - whichever is higher. FULLY Refundable Deposit $200 (Pending Any Damages) TOTAL PRE-EVENT $400 PAYMENT & FEES: Two separate vendor payments of $200 must be received with the application. All checks are to be made payable to Tacoma Musical Playhouse. Payment and application should be mailed to contact listed above. There is a 10% sales fee on top of your deposit if you earn $2,000 or more at the event. If earnings are less than $2000, no additional fee will be required. [(Gross Sales x .10) – Deposit = Additional cost if positive number.] ALL FOOD VENDORS MUST OBTAIN THE REQUIRED PERMITS HEALTH DEPARTMENT PERMITS REQUIRED: By filling out this application, you are agreeing to have the appropriate Tacoma-Pierce County Health Department Permits. All food vendors must obtain the required permits from the Tacoma-Pierce County Health Department (http://www.tpchd.org/food/temporary-food-establishments/). It will be the vendor’s responsibility to acquire all needed City, County and State permits. You are to make sure that all Health Department applications and payments are submitted to the Tacoma-Pierce Health Department and must be received 14 days before the event to avoid any late fees. Any vendor whose is found out of compliance with these permits/regulations on the day of the event will not be allowed to participate in our food truck festival and will forfeit all fees paid to the Tacoma Musical Playhouse. A copy of the temporary food permit will be required prior to your on-site arrival. CITY OF TACOMA FIRE DEPARTMENT: Tacoma Musical Playhouse has been in contact with the City of Tacoma Fire Department. TMP will apply for a special event permit through the counties fire Prevention Bureau. The Fire Prevention Bureau requires the following: All food trucks using propane must have a fire extinguisher with a minimum UL classification of 2A4 0BC. Trucks that require deep frying food preparation must also have an additional fire extinguisher that has a minimum UL classification of 2A “K”. The inspection tags for each food truck’s hood suppression system needs to be current. Generators and fuels are not allowed off the trucks. Any generators/fuels/appliances that are used need to be a part of the normal set up ON the food truck. TMP is a smoke free zone. Please refrain from smoking on the property of TMP. TMP’s local fire department is: Tacoma Fire Department Station #16, 7217 6th Avenue, Tacoma. INSURANCE: All vendors’ must provide TMP with a Certificate of Insurance naming Tacoma Musical Playhouse as additionally insured. The insurance certificate must be in the amount of $1,000,000 and should have the following address listed on it: Tacoma Musical Playhouse | 7116 Sixth Avenue | Tacoma, WA 98406 MARKETING: If you have photos of your food truck, menu items or business logo that you would like used for marketing purposes, please e-mail them to [email protected] by July 17 to allow time to properly promote you and your menu options. MENU’S: It is highly recommended that each vendor provide a “taste” sampler that is no more than $5.00 per serving. This allows the public the opportunity to try more foods which in turn gives each and every one of you more business. LOAD IN | LOAD OUT: Event load in for the food truck festival will depend upon the size, location and specific needs of each vendor. Tacoma Musical Playhouse will be on site starting at 7:00 AM to start parking food trucks. Vendors must be set-up and ready to serve food by 11:00 AM – NO EXCEPTIONS. In order to ensure a safe exit of participants and food trucks, vendors will not be allowed to pack up and leave prior to 8:00PM. Mobile Food vendors must wait until the public has cleared from the event area before leaving the event area. All equipment, trucks, etc. must be removed this evening, no exceptions. POWER NEEDS: All vendors must be self-sufficient. Tacoma Musical Playhouse is not able to provide access to utilities. SPACE ASSIGNMENTS: Considerations will be based on competing food categories and time of submissions of application. GROUND SURFACE & WEATHER: The Tacoma Musical Playhouse Food Truck Festival is an outdoor event that utilizes a paved parking lot for setup. There may be some areas in the parking lot that are not level so please bring truck levels just in case. Weight all tents, no staking allowed. If you plan on putting a tent up please make sure that all tents have a 25lb. weight on each leg for safety in case of windy weather. Tents used for any sort of cooking purpose must be fire retardant with the inspection sticker. The TMP Food Truck Festival will take place rain or shine so please be prepared for any kind of weather. TRASH/GARBAGE: It is each vendors responsibility to remove all event related to trash from their area. This includes items inside your truck. TMP will be responsible for providing garbage and recycling receptacles around the “specified” eating areas. A few notes: • Recipes are credited where possible • I have not included basic curry/bhaji recipes – use your usual ones or many available online (or substitute with your basic home cooked meals) • I have not included any food which requires deep frying as we prefer not to do this. However, you can of course adapt the menu as you wish • The 'iftar basics' are a mix and match selection of foods we normally eat and can be varied (or use your own favourites) • It is best to plan ahead and create a shopping list of foods you will need during Ramadan and buy them now (especially non-perishable foods such as oil and tinned items) and then do a weekly shop of fresh food • As we are focussing on eating well rather than feasting, the recipes are repeated during Ramadan, and we will often make enough to last the next day to avoid cooking every day.

Virtually, join us in the dish kitchen for interactive cooking classes and entertaining experiences, a seamless option when you want to celebrate with and entertain a group remotely. HOW IT WORKS Dish is offering live, virtual classes where you and your staff or clients can cook together in the safety of your own homes. The classes will run for approximately 1-1.5 hour, where the Dish chef will demonstrate techniques and cook with your group, offering suggestions for substitutions, quick fixes in case something goes wrong, and fun anecdotes along the way. The Dish moderator will ensure everything runs smoothly and field all guest questions. Our Virtual menus feature readily available ingredients that can successfully be completed in the 1-1.5 hour time frame. Dish will send out before the class the recipes, grocery list and suggested tools for the class. Options for obtaining ingredients: • Guests can purchase their own ingredients with an ingredient list emailed ahead of class • Dish will assemble an ingredient kit for curbside pickup OR delivery to the GTA • Add on tools + products are available for gifting in our retail shop VIRTUAL CORPORATE MENUS: Custom Class: • We will work with you + your team to create a class with specific recipes or theme • Let us know what your ideas are + we can design the experience from there.
