Interactive Virtual Cooking Experiences INTERACTIVE VIRTUAL COOKING EXPERIENCES CORPORATE EVENTS Dish offers innovative VIRTUAL cooking events for corporate team building, entertaining clients, or for special occasions. Virtually, join us in the dish kitchen for interactive cooking classes and entertaining experiences, a seamless option when you want to celebrate with and entertain a group remotely. HOW IT WORKS Dish is offering live, virtual classes where you and your staff or clients can cook together in the safety of your own homes. The classes will run for approximately 1-1.5 hour, where the Dish chef will demonstrate techniques and cook with your group, offering suggestions for substitutions, quick fixes in case something goes wrong, and fun anecdotes along the way. The Dish moderator will ensure everything runs smoothly and field all guest questions. Our Virtual menus feature readily available ingredients that can successfully be completed in the 1-1.5 hour time frame. Dish will send out before the class the recipes, grocery list and suggested tools for the class. We thank community members for their generosity. • ICBC recommends catering food from licensed restaurants (if you are planning to bring home cooked food, please make sure to cook on the same day) • Food should be bought to ICBC no earlier than 2 hours prior to Iftar. • Food should be catered for ~400 people. • If sponsors decide to pack the food, ICBC recommends “to-go” boxes made of aluminum foil. As a family, we have decided to move away from the traditional model of the mother spending most of the day in the kitchen preparing the iftar and losing precious time which can be spent on beneficial acts during Ramadan. A few notes: • Recipes are credited where possible • I have not included basic curry/bhaji recipes – use your usual ones or many available online (or substitute with your basic home cooked meals) • I have not included any food which requires deep frying as we prefer not to do this. However, you can of course adapt the menu as you wish • The 'iftar basics' are a mix and match selection of foods we normally eat and can be varied (or use your own favourites) • It is best to plan ahead and create a shopping list of foods you will need during Ramadan and buy them now (especially non-perishable foods such as oil and tinned items) and then do a weekly shop of fresh food • As we are focussing on eating well rather than feasting, the recipes are repeated during Ramadan, and we will often make enough to last the next day to avoid cooking every day.

    TECHNIQUE OF THE QUARTER: EXAMINING SAUCES Sauces are often considered one of the greatest tests of a chef’s skill. The successful pairing of a sauce with a food demonstrates technical expertise, an understanding of the food, and the ability to judge and evaluate a dish’s flavors, textures, and colors. THE PURPOSE OF SAUCES Most sauces have more than one function in a dish. A sauce that adds a counterpoint flavor, for example, may also introduce textural and visual appeal. Sauces generally serve one or more of the following purposes. Introduce Complementary or Contrasting Flavors Sauces add flavor to a dish. That flavor can be similar to the flavor of the food you are serving it with. For instance, you might choose a velouté made with chicken stock to serve with a chicken breast dish and one made with shellfish stock to serve with a shrimp dish. Choosing a sauce with a similar base flavor tends to complement and intensify the flavor of the main item. On the other hand, you can choose a sauce that adds a contrasting flavor. A good example would be a red wine sauce that introduces some bright and acidic flavors to a dish that features beef. The contrast between rich, savory beef flavors and the sharp taste of the wine makes the beef stand out. Add Moisture A sauce can add moisture to naturally lean foods such as poultry, fish. A sauce can also compensate for the drying effect of certain cooking techniques, especially broiling, grilling, sautéing, and roasting.
