Christmas & New Year 2020 Christmas & New Year 2020 SEASONS GREETINGS AND A BIG THANK YOU! It goes without saying that 2020 has proven to be an unprecedented year. We have all faced more challenges, changes and emotions than ever before but at all times we have tried to ensure you our valued customers have been at the forefront of our mind. We would like to take this opportunity to thank each and every one of you for your support and patience throughout this year. We are nothing without you. The whole team is determined to make this an extra special Christmas for everyone! SOME HOUSEKEEPING CHANGES THIS YEAR! As you will all know COVID rules and regulations are so fluid. As I write this the northeast is under local restrictions but we hope these will be removed by Christmas. We are bringing you our 2020 Christmas and New Year brochure but would like to notify you of the following: l Sadly our Christmas Fair will not take place this year. The experience we could provide for everyone would be much reduced to normal. We still plan to have some of our delicious Seasonal offers supported by our lovely suppliers, so watch this space. l Collection time slots will now be offered at 30 MINUTE SLOTS rather than our usual 1 hour time slots. This is so we can spread customer collections evenly across the day and to help keep everyone safe. PLEASE CAN WE ASK YOU, FOR THE SYSTEM TO WORK, KEEP TO YOUR AGREED TIME SLOT. l Due to staff social distancing and different team structures we are having to streamline a lot of the order sizes and quantities. Much of the poultry, meat, chipolatas, stuffing will be sold in set sized packs. This is to assist with collating customer orders. We have chosen the most popular sizes to help you select each product. We hope you will find this easier to have set prices per product when choosing and budgeting your order. It will also help us to prepare the orders under working restrictions. l We will be closing the order book on Saturday 12th December to allow the team time to process the orders under socially distanced working. Early ordering advised! PLACING YOUR ORDER Our turkeys and other seasonal food is always popular so we recommend you place your order in good time. This is even more important this year with the changes in customer shopping habits. You can order between now and 12th December. Here’s how… 1. Sit back and relax - choose your seasonal food. 2. Choose the weight and type of turkey you require. Please note: All our poultry is free range so we cannot guarantee the exact size but we will try our best to meet your request – just ask our staff for help. 3. Fill in the order form indicating the products you require along with your personal details 4. Place your order with our staff in our dedicated ordering system through one of the following methods*: In Store Visit the Blagdon Farm Shop friendly till staff – a member of our team will be happy to help you choose your turkey and other festive meats and goodies. By Telephone Call 01670 789924 from Tuesday to Saturday between 9.00am and 5.00pm or Sunday between 11am and 4pm. By Email Email [email protected] 5. Choose a date and time of collection (30 MINUTE SLOT) convenient to you, then we will give you your order number. 6. We will request a small deposit to secure your order. Orders can only be guaranteed with an order confirmation from ourselves (in person or by email or post) detailing collection time and date, order number and deposit paid or full payment. 7. IF YOU DO NOT HAVE AN ORDER NUMBER YOUR ORDER HAS NOT BEEN PLACED. 8. We will double check your order at time of placing but ask that you check your order at time of collection. They are free to forage and roam but also have the option to come indoors of an evening should the weather become inclement or if Mr Fox takes too much of an interest in them. All our birds are raised slowly and to full maturity using traditional and sensitive farming methods. This slower growth and dry aging produces a delicious dense meat and good fat cover making them moist and tender with great flavour. A much moister meat which can’t be beaten! All our poultry is prepared for you by hand on the estate & comes oven-ready with giblets and a sprig of herbs. The centrepiece of the most important meal of the year! Our two breeds of turkeys are naturally reared outside in a grass paddock here at Blagdon where they are free to roam. Our turkeys take up to 24 weeks to mature, rearing them slowly produces a delicious dense meat and good fat cover making them moist and tender with great flavour.   • Hot Water Crust Pastry
    Hot Water Crust Pastry Hot water crust pastry is the most forgiving type of pastry. It doesn’t judge you by your experience and even when you fail, it allows you to start again and make it better – that is, if you keep it warm. When it cools, it doesn’t stretch and it will break, and become more demanding. Hot water crust is sturdier and therefore may be a little less elegant than shortcrust or puff pastry, but as a result it can also handle wetter and heavier fillings without fear of sinking, leakage or dreaded soggy bottoms. The pastry holds up and sculpts very well and is therefore ideal for hand-raising pies, moulding the pastry around a pie dolly or pie block, and for free-standing pies, where the pie mould or tin is lined with pastry and then removed before the last stretch of baking. It should certainly not be kneaded too much – just enough to make sure that everything is blended well. Overworked hot water crust pastry turns into a tougher, chewier crust, but this doesn’t mean the result will be inedible, just that it could be better. Because the fat for the hot water crust is melted, it is much better distributed throughout the dough, which creates a consistent pastry that will colour much more evenly while it bakes. Other pastry methods require you to rub the fat into the flour with your fingers, which can lead to inconsistencies in the colour of the baked result. Except for pork pies and Scotch pies, the dough should not be rested before use as it tends to toughen up, dry out and crumble when cooled.

    Waddesdon Manor Pork Pie Ingredients Hot Water Pastry 200ml water 75g butter 75g lard 450g plain flour, sifted 1 pinch salt 1 egg, beaten 1 teaspoon vegetable oil (or rapeseed oil) Pork Filling ½ kg pork mince 1 large clove of garlic, crushed Pinch mixed herbs Pinch black pepper Pinch salt 1 small white onion, finely diced 100g bacon, chopped Jelly 3 gelatine leaves 250ml chicken stock Salt and pepper to taste Method For the filling Mix all the pork filling in a bowl and season. Use a frying pan to cook off a small amount and taste. Add more of any ingredients to season to your taste. Cook the rest. Put into the fridge. For the pastry Put the water, butter, and lard into a saucepan and gently heat to melt both the butter and the lard. Then bring to a gentle boil. Put the flour into a large heatproof bowl and add the salt and the egg. Mix together with a knife. Add the hot fat and water mixture and combine thoroughly. Tip the dough onto a lightly floured work surface and knead for 10 mins or until it becomes smooth and silky. Take a small jam jar and cover the outside with a light layer of oil. Cut 1/3 of the pastry off and wrap and put to the side. Roll the remaining 2/3 to ¼ inch thick. Cut a 6-inch circle and lay over the jam jar bottom and gently ease up the side of the jar. Be careful not to stretch the pastry too thin.
