ALTERNATIVE JOUMOU

At the request of the parish, Jeannine (Nielandt) organised a solidarity meal every year in March. She did this voluntarily for the benefit of Broederlijk Delen. This recipe comes from Haiti. It is a meal soup that tastes just that little bit different from our daily soup.

Supplies (6 persons) - 2 single chicken fillets - 2 cloves look (pressed) - 300 gr minced chicken - pepper, , thyme, - 3 spoons breadcrumbs - 3 litres of water + 2 stock cubes - 1/2 egg - 2 spoons of vermicelli - 1/4 kg white cabbage (in strips) - 50 gr - 1/4 kg (in bars) - 50 gr flour - 2 leek stalks (in rounds) - 1 red pepper (in cubes) - 1/2 kg pumpkin (in chunks)

Preparation - cut the chicken fillets into 6 pieces - mix the minced meat with the egg and the breadcrumbs and roll them into balls (a little bigger than regular soup balls) - bring the sliced chicken to the bottom of the soup pan and add water - bring to the boil and add stock cubes and chopped (except pumpkin) - let it boil for half an hour - meanwhile, boil the pumpkin in a separate saucepan, drain and puree cooked pumpkin - add the pumpkin, meatballs and vermicelli to the soup - cook everything for another fifteen minutes - make a roux with the butter and flour and add the liquid (broth) of the soup, then add the bonded broth to the vegetables and meat - mix everything well and if necessary season with salt and pepper and parsley - serve in large soup plates and serve with bread and butter
