And for most Goans these are indeed the three basic necessities of life -- fish, curry and rice. They combine to make a heavenly daily meal for the average Goan. But Goan cuisine, like the land itself, has many flavours and tastes with its vast treasure trove of culinary delicacies. The long period of Portuguese rule, besides that of the Muslim and Hindu kingdoms, has left an indelible influence on the original style of Goan cooking and this has led to an exotic mix of truly tasty and spicy cuisine. Most people who sample Goan cuisine, enjoy this different and unique style of food which has a distinct and unique combination of spicy flavours. A Goan values his food as much as he does his daily siesta (break). And in his daily meal, seafood always has a pride of place is some form or the other. From fried fish to exotic concoctions like ambot-tik, sea food is usually a must on the menu, except for the occasional break for some religious observance. Goans take pleasure not only in what they eat, but also how they cook it. Although modern conveniences have almost completely taken over in urban areas, the traditional way of cooking in clay pots on firewood continues in most rural areas of Goa. This style of cooking adds an additional smoky flavour to the food, highly valued by Goans. Despite the two schools of cuisine traditions influenced by the respective religions of Hinduism and Christianity; there are some meeting points that present an interesting harmony.

His Gastronomic Persona By Lucio Sorré BACKROUND As a wine person, ergo a food person (as wine and food are intimately related) afflicted by Columbus quincentennial fever, inquisitiveness prompted a look at what the Admiral of the Ocean Sea and his crews ate during the four voyages to the New World. The first logical source of information was his diary. It provided the scantiest of information. He wrote that two main meals were served daily, cooked on wood fires set in sand boxes. In addition, at the beginning of his third voyage to the New World, he noted that they stopped in Gomera, Canary Islands where "we stocked up on cheeses of which there is a good deal of good quality." Attention was then turned to the books written by Gianni Granzotto as well as Samuel Eliot Morison, his indefatigable and lucid biographer. Granzotto cast a light on the Admiral's family life and overall behavior while Morison carefully recorded life aboard the caravels, listed the victuals supplied to them, the daily dietary routine (or perhaps we ought to say the gobbling and swilling routine). No recipes, however. A check of food historians' literature only highlights Columbus' and other explorers' agricultural contributions to the larders of the old world with yams, potatoes, pineapple, peppers, cocoa, vanilla, papaya, squash, corn, tomatoes and the turkey, a bird unknown to Europe and Asia. It was not a one-way street, as the Old World rapidly introduced sheep, goats, cattle, pigs, olive and walnut trees, wheat, rice, cinnamon, cloves, peaches, apricots and oranges.

Caldeirada translates from Portugese to "stew" and peixe translates to "fish". This is a relatively easy dish to make and a great one-pot recipe, perfect for a dinner party or gathering. Don't feel limited by the seafood included in this recipe. It's a rustic stew meant to be made from local fish and seafood. Best made with a combination of oily fish, whitefish, and shellfish to create a well- rounded, flavorful broth. • Prep Time: 30-40 minutes (not including soaking clams about 45 minutes hours prior to cooking) • Cook Time: 25-30 minutes • Serves: 10 • Notes: Feel free to use any combination of fish filets, seafood and shellfish. • Special Equipment Needed: A Large Pot with a lid – a heavier pot is better. If you don’t have a lid, use a baking pan and handle with oven mitts to avoid burning yourself. Small scrub brush to clean mussels and clams. Cheese cloth or coffee filter. • This recipe is Pescatarian. It contains fish and shellfish, but no meat. • Make it Gluten-Free: Use gluten-free vegetable stock.
