Aubergine.Pdf The Aubergine Experience is designed to ensure that you enjoy the best of South Africa’s cuisine with the best of its wines. Consequently our wine list is structured to complement the uniqueness of Harald Bresselschmidt’s culinary creations. Not only does this mean that all of South Africa’s wine growing regions and grape varieties are represented but the hallmark of our cellar is that a wine only earns inclusion if it reflects genuine authenticity, a distinctive personality and a true sense of place or ‘terroir’. In our listings, we have refrained from accompanying each entry with a detailed description because we firmly believe each wine to be a living subject whose character changes both with time and with the food with which it is paired. We will gladly make suggestions as to which wines might best suit the dishes you select and your personal preferences. In our wine selection we aim to showcase South Africa’s emerging icons as well as reveal some of her best kept vinicultural secrets. If our cellar has a distinctive character, it is that it is more Old World than New; more classic than contemporary. That said, modern-day pioneers determined to reinvent the glories of the past most definitely have a place in our collection. We also serve a number of wines by the glass. In addition to featuring many of the mainstays of our collection, we also champion the latest offerings from South Africa’s newest generation of winemakers. Look out for our very own Aubergine range of wines, each finely crafted especially for us by top South African winemakers. Our cellar is both broad in variety and deep in vintage. Wines are stored in a temperature-controlled cellar to ensure optimal maturation. The cellar is housed in our specialised wine and food pairing venue, Auslese.     VarietiesPORTUGUESE GRAPE VARIETIES For the most part Portuguese grape growers have wisely resisted the impulse to plant “foreign” grape varieties and instead have gone forward with making wines that are uniquely regional. So at a time when critics complain that wines from throughout the world are beginning to taste similar, Portugal’s commitment to native varieties means that it continues to make indigenous styles of wine. This means that although winemakers may be fermenting and aging wines in the same manner that their colleagues elsewhere have been doing for some time. Unique conditions and historic grape varieties insure that Portuguese wines will remain distinctively different. The future is very bright, but even today, after only a brief time of orientation to the world market, Portugal is producing some of the world’s most exciting wines, especially when the concept of “value” factors into the equation, as it always must do in assessing any commercial product. Throughout the country better varietals are being planted in more suitable soils and growing conditions. There is a new generation of winemaker eager to discover the quality potential of their properties. The awareness has dawned that the best wine originates in the vineyard. Along with this spirit, a trend has developed to produce varietal wines from native grapes that constitutes one of the most interesting aspects of the current Portuguese wine scene. Quantities are miniscule but the wines have developed a devoted following on the domestic market. We’ve gone all in on natural wine because we believe in celebrating farmers and other stewards of the land who work tirelessly to create biodiverse landscapes. Think of wine as a transmitter of a certain place and time in history: if made with nothing but grapes, a bottle has the ability to tell us what the soil in the vineyard is composed of, what the weather was like in a given vintage, and what the surrounding flora and fauna are doing. Cover it up with any number of 60-plus legal chemical additives, and what are you left with? Something engineered that no longer transmits its story. There is no official definition of what natural wine is. But we have our definition, and here’s our promise: every wine on this list is grown organically or biodynamically, free of any chemicals in the vineyard. Every wine on this list is made without any additives except sulfur, which is naturally occurring in grapes. Every wine on this list is fermented with its own living, wild yeast.
