Since 1986, the estate has been based in the beautiful old cellars of Villa Dolfin Boldù in The Deer Hunter Rosa', near Bassano del Grappa, close to Vicenza. by Chris Edwards and Dave Tregenza The Shrub and Shutter Cocktail Bar Owner Vittorio Capovilla has chosen to distil his Grappa using small stills that he has especially built for Brixton, London him by a German artisan. He has also chosen to use an artisanal distillation method for his products, via the very high quality bain-marie method, which employs a discontinuous distilling cycle. This means that 50ml Tincup Bourbon at the end of every boiling cycle of the marc or pomace, the cycle must be interrupted and the pot 10ml Grappa Tabacco Amarone emptied and refilled with other new marc or pomace. The discontinuous cycle still can be of three types Capovilla (direct fire, bain marie and flowing steam) depending on the manner by which the pomace or marc is 10ml Birch Sap Syrup 5 drops Salts of the Earth warmed up, and the bain marie method, though slow and labour-intensive, is particulary famous for Smoking Pipe Bitters extracting aromas and flavours that are highly refined and intense. 3 drops Orange and Angostura Bitters Capovilla is also well known for his use of very low levels of sulphur dioxide, and of only very ripe fruit Orange Oil grown in high hillside vineyards.

Pro- dotto tipicamente italiano (tuttavia si produce anche nella Svizzera italiana ed a San Marino), vengono utilizzati numerosi vitigni e raggiunge una gradazione alcolica mi- nima di 37,5 gradi (massimo 60 °C). Un po’ di storia La leggenda vuole che un ignoto legionario romano del I sec. a.C., reduce dall’Egit- to, dove aveva trafugato un impianto di distillazione, avesse appreso le tecniche per ottenere un distillato dalle vinacce provenienti dal vigneto di cui era assegnatario in Friuli. Lo storico Luigi Papo fa risalire la prima produzione in Friuli nel 511 d.C. ad opera dei Burgundi che dalla vicina Austria fecero una fugace apparizione a Cividale, applicando le loro tecniche della distillazione delle mele, per la prima volta con le vinacce producendo quindi la Grappa. Nel 1451, abbiamo un primo riferimento alla distillazione della Grappa quando fu inventariato tra i beni lasciati dal notaio di Ci- vidale Ser Everardo da Cividale, “unum ferrum ad faciendam acquavitem”. Le prime testimonianze dello studio sulla distillazione delle vinacce risalgono però al 1600 e sono dovute ai Gesuiti, tra i quali va ricordato il bresciano Francesco Terzi Lana. Fino agli inizi del XIX secolo non vi è però una distinzione tecnologica netta tra i distillati alcolici, poi l’Italia della Grappa scelse una propria strada che portò alla creazione di una bevanda con caratteristiche uniche e irripetibili La nascita della Grappa è legata al mondo contadino.
