HERDERICH2 1 The Australian Wine Research Institute,Victorian Node, Mooroolbark, Vic. 3138, Australia; 2 The Australian Wine Research Institute, Urrbrae, SA 5064, Australia Corresponding author: Dr Mark Krstic, email [email protected] Abstract In recent years, the exposure of vineyards and grapes to smoke from bushfires and controlled burn events has in some instances resulted in wines described as smoke tainted. Such wines are characterised by undesirable sensory characters described as smoky, burnt, ash, smoky bacon, medicinal and ashtray. This review summarises the knowledge about the composition of smoke from forest and grass fires, describes relationships between smoke exposure of vineyards and smoke taint in wine, and outlines strategies for managing and reducing the risk to producing smoke-affected wines. The sensitivity of grapes and vines at different phenological stages to the uptake of contaminants from smoke, especially smoke-derived volatile phenols, is outlined, and the pathways for entry and metabolic transformation of volatile phenols are discussed. The potential for translocation of phenolic contaminants within the grapevine and the differences in uptake of smoke contaminants of different grape cultivars are also discussed, along with preliminary work on dose/response relationships regarding concentration and duration of exposure and subsequent expression of smoke taint in wine. The chemical basis of smoke taint in wine is described, and the relationship between volatile phenols from combustion of wood/lignin and their glycosides, and sensory panel ratings of smoke attributes in affected wines is discussed.

    Getting to Know and Love Verdejo Spanish wine lovers need to know Verdejo (“vurr-day-ho”). This somewhat rare, indigenous white grape offers a wonderful and unique alternative to refreshing white wines like Chardonnay, Pinot Gris and Sauvignon Blanc. While the wine is well known and well quaffed in Spain, it is not widely known in the US-yet. But we are letting you in on the biggest secret of the summer wine season-one of the most versatility and organic white wines – Verdejo. Flavor-Rich Verdejo Verdejo, such as our Granza Organic Verdejo from Bodegas Familiares Matarromera, has a unique aroma, with tropical, citrus, floral and herbaceous notes and a hint of scrub herbs. The palate shows delicate citrus and tropical flavors with an excellent level of acidity and a long finish. Its characteristic slightly bitter touch, gleaned from the mineral-rich soils, leaves a glint of originality in the mouth, accompanied by the rich expression of fruit.     ANTONIO SANZ VERDEJO 2013 ANTONIO SANZ || A pioneer and Rueda’s foremost innovator, Antonio Sanz is responsible for many of the ‘firsts’ of the region. He founded his winery in 1976, seven years before the Rueda DO was even established. Antonio is a man of tremendous foresight and his innovations have, and will continue to have, a dramatic impact on the entire DO. Widely used vineyard and winemaking practices, such as night harvesting, the introduction of Sauvignon Blanc, the vinification of young wines in stainless steel (vs. oxidative, sherry style that is traditional) and even sparkling wine from Rueda are among the ‘firsts’ of Antonio’s career. RUEDA || Rueda is a flat, but high altitude, meseta with wide horizons and gently rolling hills. Rueda’s climate is continental and windswept. Temperatures drop well below freezing in winter and there can be heavy frosts, fogs, wind and hail. In the summer there are long, hot days of unbroken sunshine. Despite being landlocked, this region produces some of the country’s most compelling white wines.
