For your convienience it is alphabetised regardless of style, country or region. Take note of the flavour camps on the left to give you a snapshot of what the whisky tastes like, these are explained overleaf. Slainte Mhath! The FlAvour CAmps To aid your decision making we have grouped whiskies into categories that encompass the main favour profles whiskies can exhibit. Gone are the days where the region a whisky came from truly determined its favour and style. Te rise of technology and communication has broken down the geographical barriers and allowed a new world style of experimental distilling to take place. FRUIT NINJAS Tropical fruits, pineapple, bannana, mango. Berries, citrus, cherries. Tese moreish, quafable drams are great paired with food and owe their profle to longer fermentation periods yielding more complex fruity characteristics. Maturation is ex Bourbon Casks is heavily prevalent here as the vannilins bring out the best in these drams, adding favours of coconut, lemon custard and general sweetness. Typically highland malts from Scotland showcase these characteristics but Japanese and eastern whiskies quickly adopting this delicious, juicy style. FRESH AS A DAISY Floral, herbaceous, light and elegant. Tese drams showcase delicate qualities. Subtle and refned nuances come and go, a thinking person’s whisky. Tese drams make excellent aperitifs, stimulating the palate for an evening of libation and dinner. Floral qualities are developed through many channels - ofen these whiskies are triple distilled (a typically Lowland regional style), or are produced in stills with tall necks and multiple refux points. Expect grassy fresh favours, nuttiness, dried fowers and cereal grains. Barley sugar and shortbread biscuits. THE CONFECTIONERS ART Dessert whiskies reign supreme in this category. Caramel, butterscotch, vanilla. Golden syrup, dark treacle, pecan pie. Tese tempting drams get their favours primarily through our friend Quercus Alba or American Oak. Te sweet nuances that bourbon imparts into these charred casks beautifully compliments the creamy favours of the barely. Pure decadence. Tese bad boys pair wonderfully with heavy chocolatey stouts to bring a little balance SPICE TRADERS Sherry Bombs, Xmas puddings, gingernuts. Tese deliciously complex drams owe their favour to European Oak. Te sherrybutts from Jerez, the port pipes from Porto, and the limousin casks from Cognac all impart their previous resident’s profle into a whisky along with the tannic rich, spice laden profle of the oak itslef. Traditionally scotch was more ofen aged in European Oak due to the lef over barrels in UK docks but since 1920s Bourbon barrels became the cheaper option as sherry fell out of favour. Typical favours include sherry, dried fruits - sultanas, raisins, candied peel, spices - cinnamon, nutmeg, wood, caramel, orange, Christmas cake. SALTY SEA DOGS Sea dogs, mariners, costal drams, there’s a whole world out there by the ocean. Tese whiskys dominate with salty, mineral rich favours. Seaspray, umami seaweed & beachside bonfres are some favours that will appear here. Most likely developing from their terroir or situ on costal regions, our Sea Dogs have been battered by coastal winds and ofen lef to age in open windowed warehouses. Medicinal peat dug up from areas previously underwater and comprised of marine plant matter is ofen used to dry the grains in this category bringing with it subtle smoke. Tis is a favour camp that challenges the preconceptions of cask vs distillery infuence. BIG BELTERS Cask strength, peat monsters, phenolic fends. Tese whiskies are huge and punchy in favour and showcase earthy ofen medicinal favours ingrained in the grain during the drying period afer germination. Smoke from burning peat fres permeate the husk of the barley and impart favour from the outset, only to be sofen with time and maturation. Peat is a material consisting of partly decomposed vegetable matter forming a deposit on acidic, boggy, ground, which is dried for use as fuel. Peatiness is measured in PPM - Phenols Parts per Million with 55PPM considered as heavily peated. Tese bad boys have an aquired taste and a cult following. BREAFAST OF CHAMPIONS Now we’re not telling you to drink whisky for breakfast but... this goes pretty great over your cornfakes. Cereal grains and fresh favours dominate this category. Hay and toasted oats, porridge with swirled honey and a pot of flter cofee on the go. Teir delicate favours lend wonderfully to drinking straight up unadulterated served with a delicious triple cream cheese. MA’S FRUIT LOAF Baked fruit bread fresh out of the oven. Tese whiskies showcase favours of baking spices - cinnamon, cloves, nutmeg and cocoa along with stewed fruits, bramley apples, raisins and sticky tofee pudding. Rich and homely, we recommend these with a nutty Gouda or served stirred down with a touch of italian vermouth and bitters in a sweet Manhatten. PANCAKE PARLOUR Sweet and yummy delights, pancakes can be enjoyed with so many toppings! Tese whiskeys show favours of maple, honey, banana, butterscotch, tofee and caramel. Tey’re rich and viscous and make a banging Old Fashioned. Match these suckers with a trufed pork salami or hot chorizo. Delicious! SPICE UP YOUR LIFE Peppery, herbaceous and homely, this category is dominated with classic style Rye whiskeys. Expect to note favours of menthol, ginger, allspice and nutmeg along with toasted nuts and poached fruits. Stir this down into the New Orleans classic the Vieux Carre and pair with some smoked almonds. Te sale of barrels gave rise to the grocers that turned into the great blending houses that we see today such as Johnnie Walker & Sons and the Chivas Brothers. As well as blending whisky, some of these grocers kept the whisky to be bottled as single malt, the main one being Gordon & MacPhail, opening in 1895. Gordon & MacPhail where realesing single malt whisky when the distilleries themselves where still selling their stock for blending. Tese days there are many buisnesses, societies and clubs that buy barrels from distilleries and mature them independently, allowing us to exprerience charicteristics in whisky that the distillery may not release. The landscape is internationally renowned, so its importance extends far beyond the Park boundaries. The North Loch Lomond area is characterised by a vast and open sense of place and long dramatic vistas. The loch narrows north of Inveruglas and has a highland glen character with narrow and uneven sides and huge craggy slopes. The forests and woodlands along the loch shores contrast with surrounding uplands to create a landscape of high scenic value. The Loch Lomond Islands are unique landscape features with a secluded character, they tend to be densely wooded and knolly and hummocky in form. The upland hills, which include Ben Lomond and Ben Vorlich, surrounding Loch Lomond provide a dramatic backdrop to the loch. The upland hills are largely undeveloped and have an open and wild sense of place. However, there are exceptions, with evidence of pylons and masts on some hills and recreational pressures causing the erosion of footpaths on some of the more popular peaks.

A wooded peninsula guarded on three sides by the bonny banks of Loch Lomond, so celebrated in the famous Harry Lauder song set to the ancient tune of 'Binorie, 0 Binorie', Rossdhu looks out across the enchanted, treacherous waters of the loch, studded with apparently peaceful islands like gems. In the Middle Ages on one of these islands, Inchmurrin, the then chief, John Colquhoun 10th of Luss, was savagely murdered by a band of Hebridean marauders led by the Maclean chief with whom he was attempting to negotiate peace. And in these fair-faced but swift-changing waters centuries later, during the reign of Queen Victoria, Sir James Colquhoun 28th of Luss, with four of his gillies, drowned within earshot of Rossdhu while sailing homewards from stalking red deer on the Island of Inchlonaig: their desperate cries for help may have been heard ashore but mistaken for cheerful shouts.

    Clachaig Whisky and Scottish Spirits Menu Whisky Regions of Scotland Highlands Whisky Region The Highlands is by far the largest of all the whisky producing regions and offers you the greatest variations of style. You will find some of the best known distilleries in this region. On the mainland in the Western Highlands there are only a few distilleries. The malts from these West Highland distilleries are much less peaty than the malts which are found in the Islay region, although you can detect a slight whiff of smokiness. If there was a common character shared by West Highland whiskies it is they tend to have a sweet start and dryish finish. The character of the far North Highland malts are greatly influenced by the local soil and the coastal location of the distilleries. They tend to be light bodied whiskies with a spicy character and a dryish finish, sometimes with a trace of saltiness. Malt whiskies from the Central, Southern and Eastern Highlands are quite a mixed bunch. They are generally fruity and sweet but not as sweet as the malts found in Speyside. They are lighter bodied and sweet and just like other Highland malts they tend to have a dry finish. Speyside Whisky Region Speyside is not officially a whisky region but it is generally accepted as a subdivision of the Highlands Region. Over half of all Scotland's distilleries are located in Speyside. Speyside malts are typically the sweetest of all Scotch Whisky Malts and many of the most popular single malts are produced in Speyside.
