The exploration includes agro-food chain stakeholders’ views, and consumers’ habits, perception, knowledge of yerba mate in relation to other market positioning caffeine-containing products. Data collection includes qualitative method, such as interviews with agro-food chain stakeholders, that is producers, processors, consumers, and quantitative consumer survey. Data collection was carried out in Argentina and in Italy. Results show that in Argentina yerba mate consumption is driven by habit and tradition, and in Italy yerba mate is mostly unknown. Te Paraguayan Mestizo people have the longest tradition of using the yerba mate beverage, apart from the indigenous Guarani people. Tis study analyses the role of yerba mate and medicinal plants in the treatment of illnesses within Paraguayan folk medicine. Te research was conducted among 100 Paraguayan migrants living in Misiones, Argentina, in 2014 and 2015. Yerbamate is not considered to be a medicinal plant by its own virtues but is culturally a very important type of medicinal plant intake. Ninety-seven species are employed in hot and cold versions of the yerba mate beverage. Te most important species are as follows: Allophylus edulis (highest number of citations), Aristolochia triangularis (highest relative importance value), and Achyrocline faccida and Achyrocline tomentosa (highest score by Index of Agreement on Species).

During the period 2012 – 2018, as much as an 8-fold increase has been observed in the import of this raw material to our country. Objective. The aim of the study is analysis of the present state of knowledge concerning the health effects of Yerba Mate, based on selected scientific literature. Dicussion. The consumption of yerba mate may exert a beneficial effect on human health and its consumption is recommended in the treatment of obesity and while practicing sports. Nevertheless, it should be remembered that a very high consumption of the tea, especially when very hot, may increase the risk of occurrence of cancer, which has not been unequivocally confirmed by scientific studies to-date.

But a mere clinical description would detract from MATE’s cultural significance, that usually includes sharing the mate, sipping from the same “bombilla” and cup between a group of people enjoying the ritual. By Maria Uspenski Did you know that you can sip fresh tea all day long without ever using a ke�le? As the name suggests, “cold brew tea” uses cold, rather than hot, water for infusing tea. Cold brewing tea is easy-peasy, and for many teas, yields an amazing brew. Any type of tea can be used with the cold brew method, including oolong, green and white teas, as well as herbal and fruit infusions. Cold brew tea is not to be confused with chilled, iced or “on the rocks” tea that has been brewed using hot water and then chilled before serving. Because cold brew tea uses cold water, the tea infuses more slowly over a longer �me. This slower, longer process extracts more flavor and an�oxidants from the tea, and produces a milder, richer, smoother taste, which is also o�en sweeter, with no hint of the bi�erness asso- ciated with over-brewed hot infusions. When you bring your dried tea leaves in contact with hot or boiling water, they’re extracted much faster, but this process also transforms some of the ac�ve ingredients as it extracts them - think of it like cooking.
