Welcome to the 115th annual conference and expo of the International Association of Opera- tive Millers, and to beautiful downtown San Antonio. For those of you new to Texas, welcome to the great Lone Star State!

The 2011 conference offers IAOM’s traditional general sessions, product showcase, and technical presentations on facilities and employee man- agement, product protection and technical operations. The Program Com- mittee has done a tremendous job this year putting together the lineup of speakers. Even though the presentations are conducted simultaneously, you’ll be able to access the presentations online following the conference. Details about how to access the information will be sent by email to all IAOM members. While in San Antonio, we offer you the opportunity to network through shared meals, educational expeditions, informal meet- ings, receptions, and Expo.

Conference highlights include: • Keynote Address on the Future of Flour Milling by ConAgra Mills’ Bill Stoufer • Speaker’s Corner presentation on Generation to Generation: Creating Connections for a Productive Workplace • Industry innovations in the Product Showcase session • IMEF Silent and Live Auctions - Not only will you have the opportunity to purchase great items, you will also be contributing to future generations of milling professionals by bidding in the auctions • Expo hall full of the industry’s leading services and equipment suppliers

As you take part in the conference, you will see many people with leader- ship positions indicated on the ribbons affixed to their name tags. These are IAOM members with various responsibilities who can provide informa- tion about IAOM and their roles, answer your questions and direct you to other resources. IAOM has a tradition of collegiality and inclusivity and we want you to feel that you are part of the association. We’re glad you’re here and we’re ready to help. The conference was developed and is sustained through the work of hundreds of volunteers from the IAOM membership. Thank you so much for all that you do!

Enjoy the Conference and Expo, and your time here on the Riverwalk!

2:00 p.m. | BoMill Henrik Andrén, Unity Scientific | Booth 328 The ProStar 1800 is a top-end, diode array system for measuring flour and grains. Very tight predictions for Moisture, Protein and Ash have been achieved with this high quality, wide range array. TrendStar Software aids the miller in maintaining tight control of the flour making process.

Features include: quad-core pro- cessing, onboard data logging, graphical representation of rejects, tests and faults (ideal for QM reports), and the intelligently adaptable menu provides quick access to all functionality via easily recognizable icons. Multi-Level password protection (MLP) allows for customized acces- sibility; and tests can be scheduled based on procedures (for example per production shift).

2:30 p.m. | Robotic Full Bag Transfer “ANDY” Greg van der Vorste, Premier Tech Chronos | Booth 353 Our new Robotic Full Bag Transfer “ANDY”, provides an affordable solution for Bag Packaging Automation. It works with all types of open mouth bags; paper and woven poly, gussets or no gussets, and all types of Closing Sys- tems, at speeds up to 20 bags per minute.

2:40 p.m. | Inovair’s Complete Blower System Nate Neufeld, Inovair | Booth 253 Inovair has developed a centrifugal blower for pneumatic conveying targeted to operate in ranges from 300 to 2200 cfm with pressures up to 22 psi. With a typical system operating from 7-12 psi, Inovair’s Complete Blower Sys- tem generates energy savings in the range of 15-35 per- cent comparative to a PD blower. This higher efficiency also delivers outlet temperature reductions from 20 to 50 degrees. In addition to energy savings, decibel levels are approximately 85 dBA.

2:50 p.m. | MTVA Grain Cleaner Tim McDougall, Buhler Inc. | Booth 259 In times of increasing demand of grain, it’s possible that low-grade batches with a high percentage of impurities can be delivered to elevators or mills. Grain cleaners need to be more flexible in regards to the varying amount and variety of impurities. Adjustments sometimes need to be done on the run and quickly by the operator himself. Cleaning of cereals with Buhler’s high efficiency grain cleaner increases the lifetime of the machines from intake all the way through the cleaning house and ensures enhanced sanitation from the very beginning of the milling process.

3:00 p.m. | doughLAB Wes Shadow, Perten Instruments | Booth 432 Established Flour/Dough Rheological Testing to New Uses - Overview of three year doughLAB participation in AACCI and BIPEA Farinograph Check Sample Services (provides lower cost alternative) - Using doughLAB to mimic commercial high energy dough development and predict flour blend performance(reduce customer complaints by test- ing as used) - One minute finished dough analysis - New nine minute AACCI proposed Method (reduced expenses in labor, faster results for process, increased analysis throughput)

TO - Ozone Status Report in Grain Storage, Handling and Processing Food safety is a key concern to the grain-based food and feed industry. Ozonation is one grain treatment technology that can be used to reduce microbial load on grain and grain products, to control insects and to remove off-odors. Ozone is a powerful Dr. Dirk Maier Kansas State University oxidant that will react readily with contaminants found on the surfaces of grain kernels and particles. Ozone reduces a wide range of pathogenic foodborne microbes by oxidizing their cell membranes. Further, studies have shown that ozonation treatment has significantly decreased the biological toxicity of certain mycotoxins in contaminated feeds and food grains en- suring safety throughout the food supply chain. FDA considers ozone as Generally Recognized as Safe (GRAS) for sanita- tion and sterilization purposes, and EPA considers ozone as a non-chemical and environmentally friendly alternative in the food processing industry. Ozone can be generated on-site, and 22 educational programs

after application, unlike other disinfectants leaves no residue due to its short half-life. Ozonation treatment can be incor- porated into grain storage, handling and processing systems as well as used to treat grain products including flour. Research has shown that ozone treatment can be effective without re- ducing end use quality. Recent advances in ozone generation and application technologies have made ozonation treatment more effective and reliable. This presentation is an overview of the current status of knowledge on the application of ozone to grain and grain-based products. Dr. Dirk E.
