A mixture of German and Kiwi hops Bulmers Patiently matured in vats close to the orchards of the Tipperary countryside, Bulmers Cider has a crisp, refreshing flavour and a natural authentic character Carlton Black A traditional dark ale, Carlton Black has a fruity flavour that compliments the emphatic price of Ringwood hopping, making for a rich, easy to drink beer. The drum-roasted malt used in Carlton Black is the secret behind the beer’s distinct ruby tint, inviting mocha aroma & full-bodied flavour Canadian Club Draught Canadian Club & Dry Draught is made with a smooth Canadian Club Whisky & crisp dry ginger ale & provides a refreshing alternative to premium draught beer & cider Carlton Draught Brewery Fresh Tank Beer Carlton Draught Brewery Fresh Tank Beer is a traditional, full- strength lager that is crisp on the mid-palate with a good malt character and smooth full-bodied flavour. Clean hop bitterness gives the brew a slightly dry finish. Its taste profile is lively with extra smoothness due to its freshness and the fact that it has been exposed to minimal oxygen and other gases until it hits your glass at the tap Carlton Dry (Low Carb) Carlton Dry’s extended brewing process removes excess sugars creating a smooth, crisp finish with lower carbohydrates than a full strength beer Cascade Premium Light ‘Full-flavoured’ is an adjective that tends to be overused in the lager world, but is appropriate in this case given the balance in this low alcohol beer Fat Yak Fat Yak impresses with its golden colour, distinctive hop driven, fruity & herbaceous aromas, giving characteristic passionfruit & melon notes, followed by a hit of hop flavour at the finish Frothy Proudly brewed with 100% local hops & barley, Frothy is a flavourful, yet surprisingly easy to drink alternative to your favourite lager Goose Island Midway IPA As a session IPA, Midway is an approachable, hoppy ale suitable for a range of palates Great Northern Super Crisp (Midstrength) Great Northern Super Crisp Lager was designed with an easy going lifestyle in mind. With its fruity aroma, subtle bitterness & refreshingly light finish, it’s brewed specifically for the Australian climate Melbourne Bitter Fruity aroma & pleasant body are complimented by the assertive, lingering bitterness of Pride of Ringwood hops One80 Effortlessly drinkable pale lager/ale hybrid, fermented warm to allow our signature yeast to generate a subtle & engaging fruity character. Naturally slightly hazy, the palate is crisp & refined w/ a long smooth bitterness & a hint of complex malt to keep things in balance Victoria Bitter VB is a full flavoured, full strength beer; the gentle fruitiness of the aroma compliments the sweet maltiness in the mouth which in turn balances perfectly with the clean hop bitterness of the finish.

The scientists used a dual-inlet isotope ratio mass spectrometer to measure noble gases trapped in Antarctic ice caps, and showed that mean global ocean temperature increased by 2.57 ± 0.24 degrees Celsius over the last glacial transition (20,000 to 10,000 years ago). DBS Business Review 01| 2017 INTERVIEW | dbsbusinessreview.ie There’s a Wolf in Wicklow – and It’s Leading the Pack! Simon Lynch Co-Founder of the Wicklow Wolf Brewery Bray, Co. Wicklow, Ireland Alan Morgan Editor-in-Chief, DBS Business Review Dublin Business School Dublin, Ireland © Simon Lynch and Alan Morgan. This work is licensed under the Creative Commons Attribution-NonCommercial-ShareAlike 4.0 International License. To view a copy of this license, visit https://creativecommons.org/licenses/by-nc-sa/4.0/ . Introduction As I drove into the quaint seaside town of Bray on a brisk autumnal morning to meet Simon Lynch, co-founder of The Wicklow Wolf Brewery, I was aware that there was something changing in the behaviour of beer drinkers in Ireland. As a consumer behaviour academic, I have always been interested in phenomena that fundamentally change consumption behaviour, for example TV in the 60’s and 70’s, video in the 80’s, the internet and of course German discounters in the 90’s and noughties. But I just wasn’t aware that the consumer behavioural change toward beer in Ireland was coming down the tracks like a freight train in the form of ‘craft beer’, and this was knocking a lot of the bigger mass producers out of the way. According to the 2016 report for the Independent Craft Brewers of Ireland and Bord Bia it is estimated that there are some 90 microbreweries operating in the Republic of Ireland, of which 62 are production microbreweries and at least 28 are contracting companies. There has been a 29% increase in the number of production microbreweries from 48 in 2015 to 62 in 2016.

Craft Beer and Microbreweries in Ireland, 2015 A Report for the Independent Craft Brewers of Ireland Final Report, August 2015 Bernard Feeney, Economic Consultant ([email protected]) Acknowledgements The author would like to thank Seamus O’Hara of the Carlow Brewing Company for his support and guidance. Special thanks are due to the 34 Irish microbreweries that responded to the survey, which formed the basis for much of this Report Table of Contents Executive Summary 1 1. Introduction 3 2. Development of the Microbrewery Sector 5 3. Operational Characteristics 10 4. Economic Impact 14 5. Regulatory Barriers 18 6. Conclusions 22 Executive Summary It is estimated that there are 63 microbreweries operating in Ireland, of which 48 are production microbreweries and 15 are contracting companies. There has been a 50% increase in the number of production microbreweries from 32 in mid-2014 to 48 in mid- 2015. As many as 22 new production microbreweries commenced production in 2014. By end year 2015, the total number of production microbreweries may have risen to approximately 58. The output of craft beer by production microbreweries amounted to some 86,000 hl in 2014. This represents a 71% increase on the 2013 figure of 49,000hl. Between 2011 and 2014, the output of production microbreweries rose by more than threefold. Given the influx of new firms in 2014 and capacity expansion among older firms, output is expected to rise substantially in 2015 to 145,000hl, an increase of over 70%. Microbreweries are forecasting a further 64% increase in output to 241,000hl in 2016.
