  • Mamweb: Regional Styles of Thai Cuisine
Regional Styles of Thai Cuisine: Thailand is comprised of four main culinary regions, each with their own specialties, and each having slight deviations in flavor profile from that of the Central region, which is considered by most to be the ‘classic’ Thai culinary style. The variations are caused by differences in ethnicity, cultural background, geography, climate, and to some extent, politics. Each ethnographic group can lay claim to dishes which are known nationwide, whether they originated with the Chinese immigrants from Hainan, Fujian, Guangzhou, or Yunnan, the Sunni Muslim Malays or animist Moken sea gypsies in the South, the Mon of the west-Central, the Burmese Shan in the North, the Khmer in the East, or the Lao in the Northeast. Geography and climate determine what can be grown and harvested, and whether the aquatic species consumed in the region are derived from the sea or freshwater. The cuisine of Northeastern Thailand: Aahaan Issan: Issan (also written as Isaan, Isarn, Esarn, Isan) is Thailand’s poorest region, both economically and agriculturally. It is plagued by thin soils, with an underlying layer of mineral salts (mineral salt is harvested and exported country wide). The weather is a limiting factor in agricultural production: it is hotter and dryer during the dry season, and rains can easily become floods, since it is basically a large flat plateau (the Khorat Plateau), hemmed-in by mountain ranges to the west and the south. Watersheds are limited and flow into the Mekong, which serves as a transportation link for trade. Marshes and temporary lakes appear during the rainy season.

Spring 2013 Our Hometown Spring 2013 Our hometown: 115th on the Mercer Quality of Living Survey 1st and Hall of Famer on Travel & Leisure’s World’s Best Cities The city with the most Facebook users in the world Home to the top two most uploaded places on Instagram A pretty unique list if you will. It really makes you wonder, are the 20+ million visitors we got last year here to observe our quality of life or to figure out what T&L readers are talking about? To watch people FB-ing like mad or to join the crowds at Siam Paragon and at the airport uploading pictures to Instagram? For people who know Bangkok, it is perfectly characteristic of this city. It is an acquired taste that once bitten into you will find surprising at first but then difficult to put down. It is a place that grows on you and for me it continues to do so every day. If I had only one word to describe it, I would have to say it would have to be ‘charm’. Not in a cute, quaint kind of way but a disheveled, spontaneous, and from the heart way. It is the people, their smiles and their hearts, the simplicity of certain things like the fold of a banana leaf around an afternoon treat, to the complexity of flavors that unfold in our foods. We are kind of all over the place, not really great planners, do a bit of walking without sidewalks or patient drivers but are certainly creative, entrepreneurial and may I say, COMFORT OF VISUAL COURTESY PHOTO daring.

  • Thai Cuisine Regional Cuisines and Historical Influences
Thai Cuisine Thai cooking places emphasis on lightly prepared dishes with strong aromatic components and a spicy edge. Thai chef McDang characterises Thai food as demonstrating “intricacy; attention to detail; texture; colour; taste; and the use of ingredients with medicinal benefits, as well as good flavour”, as well as care being given to the food’s appearance, smell and context. Australian chef David Thompson, an expert on Thai food, observes that unlike many other cuisines, Thai cooking rejects simplicity and is about “the juggling of disparate elements to create a harmonious finish”. Traditional Thai cuisine loosely falls into four categories: tom (boiled dishes), yam (spicy salads), tam (pounded foods), and gaeng (curries). Deep-fries, stir-fries, and steamed dishes derive from Chinese cooking. In 2017, seven Thai dishes appeared on a list of the “World’s 50 Best Foods” – an online poll of 35,000 people worldwide by CNN Travel. Thailand had more dishes on the list than any other country. They were tom yam goong (4th), pad Thai (5th), som tam (6th), massaman curry (10th), green curry (19th), Thai fried rice (24th) and mu nam tok (36th). Regional cuisines and historical influences Thai cuisine is more accurately described as five regional cuisines, corresponding to the five main regions of Thailand. Bangkok: cuisine of the Bangkok metropolitan area, with Teochew and Portuguese influences. In addition, as a capital city, Bangkok cuisine is sometimes influenced by more dedicated royal cuisine. Tastes and looks of food in Bangkok have changed somewhat over time as they have been influenced by other cuisines such as Asian, European or Western countries.
