Understanding Amarone
UNDERSTANDING AMARONE At 3000 years old, the ancient appassimento winemaking method is the epitome of tried and true. This technique of drying fully ripe grapes on mats or slated crates, for a considerable period of time before fermentation, reaches its apotheosis in the great Italian wines, Amarone and Ripasso. This method helps accentuate the sugars, energize the acids and integrate the tannins resulting in deeper coloured and fuller-flavoured wines. It’s fairly simple. Each producer determines the drying time of their grapes. Ideally, the grapes should raisinate in a temperature and humidity controlled environment to prevent rot. The dehydrated grapes are pressed and fermented dry. Since over 50% of each grape’s liquid (mostly water) is lost to the dehydration process, the flavours of the final wine are intensely concentrated and the alcohol level is anywhere from 2-5% higher than a typical table wine. The secret of this wine’s resurgence is directly related to the popularity of intense, fruit-forward New World wines. Amarones share some of the flavour profile of California Zinfandel or Australian Shiraz, but with a more refined balance between the complex aromas and flavours Amarone is produced in the region of Veneto by estates that make Valpolicella, one of the most popular wines of this area in Northeastern Italy. Amarone della Valpolicella, usually known as Amarone, is a typically rich Italian dry red wine made from the partially dried grapes of the Corvina (40.0% – 70.0%), Rondinella (20.0% – 40.0%) and Molinara (5.0% – 25.0%) varieties. The wine was awarded Denominazione di Origine Controllata (DOC) status in December 1990. -

Virginia has a rich history of grape growing and winemaking, and we’ve selected the best grapes we can get our hands on for our Mermaid Wines. We primarily work with fruit from our Charlottesville vineyard, with occasional sourcing from other locations if we see the opportunity to make something special. We’ve put together some really enjoyable wines for you to try – some classic, some fun, all delicious. Secondly, you’ll see wines from all around the world. Some you’ll recognize, others you might not. These selections lend to our wine bar-style atmosphere and really enrich the experience by offering a wide range of wines to be tried. They’re all available by the bottle, and most by the glass and flight as well, right alongside our Mermaid Wines. The staff can tell you all about any of them, so rest assured that you’ll never be drinking blind. These wines also rotate with the season, and there’s always something new to try. We have a full kitchen too, with a diverse menu that can carry you through lunch, brunch and dinner from the lightest snack to a full-on meal. With dishes that can be easily paired with a variety of our wines, make sure you try anything that catches your eye. -

BERTANI BERTAROSE ROSÉ 2018 BACKGROUND Bertani’s impact on Veneto wine making, particularly in Amarone production, is so considerable that ‘Bertani’ and ‘Amarone’ are nearly synonymous. Their 150+ year history is dotted with groundbreaking initiatives and royal accreditation. While respectful of their past, Bertani strives towards innovation, using progressive techniques and equipment allied with extensive experience and a deeply felt respect for tradition to provide wines of uncompromising quality. Bertarose is a historic Bertani wine produced since the 1930s; today it has been given a modern makeover in order to bring out the fresh and pleasant features much sought after in a rosé. The excellent microclimate in the inland hills of Lake Garda, combined with an expert use of the variety and rigorous care in the vineyard, enables us to produces this fresh and well-balanced rosé. APPELLATION Chiaretto Veneto, Italy VARIETAL COMPOSITION 150 YEARS OF 75% Molinara, 25% Merlot UNCOMPROMISING TERROIR & VINTAGE NOTES QUALITY The grapes are grown in hillside vineyards above Lake Garda, on calcareous-clay soils. The Molinara grapes are vertical-trellised and Guyot-pruned, with a planting density of 2024 vines per acre. The Merlot is trained using the spurred cordon system, with 2024 vines per acre. Harvest is done at the end of September. WINEMAKING WINEMAKER The two varieties are vinified separately, using an innovative on-the-skins Andrea Lonardi fermentation for the Molinara and off-the-skins fermentation for the Merlot. AGEING Once fermentation is finished, the two wines are blended and then aged in stainless steel tanks for about three months on the lees at the end of fermentation. -
