Instead of building a classic bitter, we took inspiration from the soda jerks of the ‘50s and came up with something new: a cream citrate. Five different types of orange, vanilla and citric acid combine to create a bright, fresh and tart alternative to your everyday orange bitters. Orchard Street Celery Shrub 44% ABV Our "rst memories of the Lower East Side are those of the delis - getting a pastrami sandwich, a side of pickles and a celery soda. Paying homage to the immigrant experience and the tenement museum on Orchard Street, we’ve created a celery shrub - celery infused into an apple cider vinegar brine. It’s a natural complement to aquavit and blanco tequila and does wonders in a Martini or . Hell!re Habanero Shrub 44% ABV The way that most hot sauces are made is by blending peppers with vinegar, salt and other spices. Vinegar, eh? That sure sounds like a shrub to us. Instead of making a berry shrub or an orange shrub, why not make a hot pepper shrub? Our Hell"re is a blend of peppers, spices and red wine vinegar… designed for cocktails, though we have been known to dash some on eggs or oysters!

Amère Nouvelle Alsatian-style Bitter Orange Liqueur 30% ABV 375 ml Whenever we are in Strasbourg, we always drink the Amer Biere - a combination of a local bitter orange and gentian liqueur known as an Amer Fleur de Biere and pale lager. This type of Amer is also used to make classic cocktails such as the Brooklyn and Liberal. The Amère Nouvelle is an interpretation of this classic Alsatian Amer, designed to work in a wider range of cocktails as we have removed the heavy burnt caramel !avor and toned down the sweetness. Amère Sauvage Alpine Gentian Liqueur 23% ABV 375 ml A strong, earthy bitter, gentian liqueurs are enjoyed all throughout the Alpine region. Ours takes inspiration from styles found all across the Alps: French/Swiss Gentiane, Italian Genziana and German Enzian liqueurs. Use it in a White Negroni or drink it long with club soda for a late night pick-me-up. A little goes a long way with this formulation. Citron Sauvage Bitter Grapefruit Liqueur 16% ABV 375 ml Citron Sauvage is a grapefruit liqueur which we "nd eminently useful with a capital “U”. Substitute it for Triple Sec in a Margarita or add a dash to a Hemingway to accentuate the bitter grapefruit !avors. Just add a splash of soda for a refreshing spritz or use it to create new variations on a Negroni. We think it’s a little taste of summer in a glass. The Citron Sauvage is naturally cloudy and may separate during storage, so don’t be afraid to give the bottle a little shake before using! Commonwealth Tonic Cordial 21% ABV 375 ml We love a great tonic water, but even the new garde of tonic syrups just aren’t tonic-y enough for us. We "gure that it’s because there is only so much bitterness that you can extract from cinchona bark without using a bit of alcohol. Sure, if you’re making a soft drink, having alcohol in your tonic is a no-no... but we think that tonic water is at its "nest when combined with some gin and a couple of cubes of ice. Hiver Amer Limited Edition Cinnamon Liqueur 30% ABV 375 ml Cinnamon and bitter orange come together in this winter seasonal liqueur. Give a little extra “oomph” to egg nog, toddies or buttered rum, or give your glühwein a bit of an extra kick!

1 ½ oz London Dry Gin 1 ½ oz Gin ¾ oz Commonwealth Tonic Cordial ½ oz Citron Sauvage 5 drops Bittermens Hopped ¼ oz Simple Syrup Grapefruit Bitters Soda Water 4 oz Club Soda Build in a glass - It’s OK to Build in a highball glass with lots of add more simple syrup to taste ice. Serve with a grapefruit twist.
