Quick Fix 14 Tofu and Broccoli Stir Fry with Pineapple
Quick Fix Tofu or Tempeh, Vegetable Mix for Stir Frying, Pineapple, Soy Sauce and Cornstarch … for a sweet and sour tofu and veggie stir fry with pineapple Possible extra ingredients: Lemon, sambal oelek (or sriracha sauce) and agave syrup (if making the special quick sauce) Sesame seeds for garnish (just omit them from the steps if only using the main ingredients) Quick and Easy Directions: 1. Cut your tofu into cubes. 2. Whisk together the soy sauce and cornstarch and add the rest of the sauce ingredients if using (a splash of lemon juice, some sambal or sriracha and the agave). 3. Heat a wok at very high heat and add some high heat oil (canola, safflower, sunflower, etc). You can also use a pan if you don’t have a wok, but a carbon steel wok is inexpensive and the greatest tool to have in your kitchen! 4. Stir fry the tofu cubes tossing as they brown. Remove them from the wok and set aside. 5. Add a little more oil to the wok and start adding the vegetables starting with those that take the longest to cook. With the vegetables seen in the video I added them as follows: broccoli, then mushrooms and onions, then carrots and peppers. 6. Once all your vegetables are tender and golden, add your pineapple cubes. Toss. 7. Add your tofu back into the pan and toss again. 8. Add your sauce around the edges of the wok so as not to lower the temperature of the wok too much. 9. Toss again and let everything get coated in the sauce and allow the sauce to thicken slightly. -

Low Fructose Diet
Low Fructose Diet What is Fructose? Fructose is a natural sugar found in fruit, fruit juices, honey, and agave syrup. It is also found in some vegetables and wheat products in another form called fructans (fructose sugars in a long chain). High fructose corn syrup (HFCS) is another form of fructose commonly used in processed foods. What is Fructose Intolerance? Fructose intolerance, also called dietary fructose intolerance or fructose malabsorption, happens when a person cannot properly absorb normal amounts of fructose (>25 grams per meal). What are common symptoms? Unabsorbed fructose that reaches the large intestine can be fermented (converted into gas) by bacteria causing symptoms like abdominal pain, gas, belching, and bloating. Unabsorbed fructose can also pull water back into the colon, increasing gut motility and causing diarrhea. Less common symptoms of fructose intolerance can include reflux, depression, fatigue, brain fog, headache, weight loss, and sugar cravings. How is Fructose Intolerance diagnosed? Anyone can develop fructose intolerance, but it is more common among individuals with irritable bowel syndrome (IBS) or other gastrointestinal disorders. A Hydrogen Breath Test is used to diagnosis fructose intolerance. An abnormal (positive) test indicates the need for a low fructose diet. What is a Low Fructose Diet? A low fructose diet reduces the amount of fructose consumed by limiting or avoiding foods with excess fructose (foods that contain more than half of their natural sugar as fructose), foods with high fructose (more than 3 grams), and foods that are a significant source of fructans (chains of fructose). How long does this diet need to be followed? A low fructose diet should be followed until symptoms improve, typically 2-6 weeks. -
Oxtail Soup,Coconut Macaroons,Ham Frittata,Brussels Sprouts With
Oxtail Soup This oxtail soup is very simple to make, it is very hearty and comforting, especially in this cold weather. You find a complete meal in a bowl of this soup. I call it soup, but somewhat comes in between soup and stew due to its thickness. Because oxtail has high fat and high gelatin content, I usually like to cook this soup only during cold weather months. To speed up the cooking time I used the pressure cooker because oxtail is very muscular. I like to cook this soup in two steps because oxtail needs a longer time to cook and I like to visualize the pieces of potatoes, carrots and celery in my soup and not have them “pulverized”. Ingredients: 1 ½ -2 lbs oxtail 1 medium onion cut 3-4 garlic cloves 1 can stew tomatoes ½ tablespoon olive oil 1 tablespoon cooking wine Salt and pepper to taste 4 medium potatoes cut in pieces 3 medium carrots cut in pieces 4 stalks of celery Method: In the pressure cooker, sauté the onion and garlic with the olive oil until slightly brown, add the oxtail and braise. Add the can of stewed tomatoes, the cooking wine and cover the oxtail with water. Close the lid of the pressure cooker and cook in high heat until the pressure has been built up. Once the pressure is on, turn the heat to low and let it cook for approximately 40 minutes or until the oxtail are tender. Add the potato, carrot and celery to the soup and let it cook until the potato and carrot are soft, add salt and pepper to taste. -
