Discrimination and Bias in the Vegan Ideal Discrimination and Bias in the Vegan Ideal KATHRYN PAXTON GEORGE Department of Philosophy University of Idaho, Moscow, ID 83843, USA Abstract The vegan ideal is entailed by arguments for ethical veganism based on traditional moral theory (rights and~or utilitarianism) extended to animals. The most ideal lifestyle would abjure the use of animals or their products for food since animals suffer and have rights not to be killed. The ideal is discriminatory because the arguments presuppose a "male physiological norm" that gives a privileged position to adult, middle-class males living in industrialized countries. Women, children, the aged, and others have substantially different nutritional requirements and would bear a greater burden on vegetarian and vegan diets with respect to health and economic risks, than do these males. The poor and many persons in Third World nations live in circumstances that make the obligatory adoption of such diets, where they are not already a matter of sheer necessity, even more risky. Traditional moral theorists (such as Evelyn Pluhar and Gary Varner whose essays appear in this issue) argue that those who are at risk would be excused from a duty to attain the virtue associated with ethical vegan lifestyles. The routine excuse of nearly everyone in the world besides adult, middle-class males in industrialized countries suggests bias in the per- spective from which traditional arguments for animal rights and (utilitarian) animal welfare are formulated. Introduction In his book, Rachel and Her Children, Jonathan Kozol (1988) interviews the poo~ and homeless of New York City. Mr. Alessandro, an Italian man, has lost his wife, his job, his home, and 45 pounds from hunger. He lives with his 73-year-old mother and his three children in a single room in the Martinique Hotel (pp. 54-59). Every day Mr. Alessandro looks for work, and he looks for permanent housing on a wel- fare allowance too small ever to give him hope of leaving the hotel. His food stamp allowance for himself and the three children is $50 per month (p. 60). During the interview Kozol realizes that the children are quite literally starving. Mr. Alessandro brings back "a box of Kellogg's Special K, a gallon of juice, a half gallon of milk, a loaf of bread, a dozen eggs, a package of sausages, a roll of toilet paper" (p. 59). Rachel and her children live in the same hotel in a similar room: When we moved here I was forced to sign a paper. Everybody has to do it. It's a promise that you will not cook inside your room. So we lived on cold bologna (p. 66). Plenty of children livin' here on nothin' but bread and bologna. Peanut butter. Jelly. Drinkin' water. You buy milk. I bought one gallon yesterday. Got this much left. They drink it fast. Orange juice, they drink it fast. End up drinkin' Kool Aid (p. 68). These are America's urban poor, 700,000 of whom are children living in New York City alone (p. 5). Most of them live in households headed by women. They do not have a healthy diet. Their parents cannot cook fresh vegetables for them, even if they could buy them. Although many hotel residents break the rules and use hotplates, Kozol attests to the difficulty of cooking any kind of meal in these conditions. Many hotel residents do not even have refrigerators to keep food from spoiling. Did Mr. Alessandro do something wrong when he brought meat, eggs, and milk home for his children to eat? My colleagues arguing on the basis of traditional moral theory (rights and utilitarianism) would say yes, but these people are excused They cannot help doing these wrongful things (e.g., Regan, 1983; Pluhar, 1992). We aren't supposed to blame them but forgive them. I object to the attitude that all these people are by circumstance and by phys- iology, as I shall later show, morally deficient. The vegan ideal, the idea that people oughtto abstain from eating not only meat but all animal by-products, is the stan- dard against which they are measured an~ fail. In this paper I will show that the ideal itself is discriminatory in that it supposes that a single definable class of persons is better than--more virtuous than--all others. The class of morally superior people is defined by its physiology and by its power. 1 What is "vegan ideal"? As I am referring to it here, it is a vision of oneself to which some persons think we should a//aspire. Those who attain the ideal or attempt to attain it come to possess an admirable character trait or a virtue. Regan (1983) and Singer (1975) argue explicitly for a rule of moral vegetarianism based on the interests of animals in not suffering pain and death. Those who follow the rule are moral, those who do not are doing something immoral. By direct implica- tion, persons who consistently follow such rules are said to be virtuous; those who ignore or fail to obey valid moral rules are said to be vicious. Thus, if Regan and Singer are correct, virtuous persons would be vegetarians at least, and vegans ideally since vegans eat no animal flesh or products. Thus, Regan and Singer endorse the "vegan ideal. ''2 Now, this ideal in their view is mora1Iy required of good persons. It is not simply something a good person would do as a charitable act of kindness. Charity is not required in any strong sense. In their view it is Discrimination and bias in the vegan ideal 21 a matter of justice to pursue the vegan ideal. Following a simple moral rule that forbids the killing of animals who pose no threat to us is required for those who aspire to be truly good persons-persons of integrity, virtue, and high moral character--persons who would be just as well as charitable. The vegan or vegetarian ideal did not arise ex nihilo, but instead has complex historical roots in many different religions, morality, and even in the origins of agriculture itself. For instance, when related to dietary practices, the improvement of the soul and especially the promotion of rationalistic and mystical knowledge has been thought to be served by restrictions on meat consumption. In fact, all major world religions have vegetarian sects within them. The more exquisitely spiritualistic the religious order, the more likely the monastic male is to exist on a limited diet of bread and water--a vegan ideal. In fact, bread and wine (both all- plant foods) are still the celebrated Christian sacred symbols of life and spirit. Like- wise, the idealization of vegan and vegetarian food practice is linked to class dis- tinctions and the hierarchical search for power. It has been used to separate men from men, women from men, the poor from the rich, the "dregs" of society from the "highest and most holy." While these themes could and do take up whole books, my aim here, as in the past (George, 1990, 1992, 1994), is simply to show that the "vegan ideal" is not an ideal for all. It may be adopted as a personal lifestyle choice or a political stratagem, but it cannot be a moralideal applicable to all regardless of age, sex, class, ethnicity, or culture. To argue for such a universal application would be discriminatory and presuppose a bias in favor of adult, middle-class males living in high-tech societies--the group with the most power in our world. The appropriateness of vegan or vegetarian lifestyles is relative to individual and cul- tural circumstance. It is not universal. In arguing for vegetarian or vegan diets on traditional moral grounds, philosophers suppose that all humans have the same bodies and that the burdens are relatively evenly distributed--we are all pretty much the same physiologically and differences among us may safely be ignored as morally irrelevans Both assumptions are false. Women and men are not the same physiologically. Children and adults are not the same. The aged and the young are not the same. Indeed, in at least a few respects relevant to food practice, races and ethnicities are not the same. The empirical evi- dence for this has been a recent topic of debate in this journal (see Pluhar, 1992; George 1990, 1992 in addition to the articles in this issue). What all my opponents center on is r/s/c But risk is not the primary issue. 3 What is at issue is this: From whose perspective shall we assess risk? From the perspective of predominantly white, adult Western males? Or from the perspective of Third World women or their chil- dren? Shall we ask these questions from the perspective of the powerful or the vul- nerable? The answer to such questions depends upon whom you think ethics is meant to serve. If ethics is meant to protect the rich and the powerful, their rights and privileges, then perhaps you will not agree with my arguments in this paper. But I believe that ethics must consider the concerns of the vulnerable and that some attempt must be made to draft an ethics which accounts for and concerns itself with the perspectives of the very differently situated persons and animals with whom we share the earth.

Singer raised the issue that animals can suffer and amount of suffering that they experience is not worth what we gain from these cruel practices. His argumentation was utilitarian, which is one of the approaches of normative ethics. Deontological and utilitarian argumentation in animal ethics Normative ethics aims at providing moral standards that regulate right and wrong conduct. This may involve articulating the good habits that we should acquire, the duties that we should follow, or the consequences of our behavior on others. The most popular approaches to normative theory are: deonotology and conseqentialism. The word deontology derives from the Greek words for duty (deon) and science (or study) of (logos).

In the past two decades ecofeminism has developed so rapidly that the time for a broad review of it has already passed; even recent taxonomies do not adequately describe its internal variations. For these reasons, I have chosen to trace the branch of ecofeminism that has been the subject of most disagreement by feminists, ecofeminists, and environmen- talists and is the least understood. This misunderstanding (and the subsequent misrepresentation) of vegetarian ecofeminism must be addressed, I will argue, because this branch of ecofeminism is the logical outgrowth of both feminism and ecofeminism. For if ecofeminism can be seen as the offspring of feminism, then vegetarian ecofeminism is surely feminism’s third generation. Since its inception ecofeminism has had a contentious relationship with the idea of animal liberation. While some ecofeminists have remained silent on the topic of animals, others have emphasized the oppression of nonhuman ani- mals (speciesism) as implicit within an ecofeminist analysis, arguing that speciesism functions like and is inherently linked to racism, sexism, classism, heterosexism, and naturism.

    D. DEGRAZIA ANIMAL ETHICS AROUND THE TURN OF THE TWENTY-FIRST CENTURY ? A couple of decades after becoming a major area of both public and philosophical concern, animal ethics continues its inroads into main- stream consciousness. Increasingly, philosophers, ethicists, professionals who use animals, and the broader public confront specific ethical issues regarding human use of animals as well as more fundamental questions about animals’ moral status. A parallel, related development is the explo- sion of interest in animals’ mental lives, as seen in exciting new work in cognitive ethology1 and in the plethora of movies, television commercials, and popular books featuring apparently intelligent animals. As we approach the turn of the twenty-first century, philosophical animal ethics is an area of both increasing diversity and unrealized poten- tial – a thesis supported by this essay as a whole. Following up on an earlier philosophical review of animal ethics (but without that review’s focus on animal research),2 the present article provides an updated narrative – one that offers some perspective on where we have been, a more detailed account of where we are, and a projection of where we might go. Each of the three major sections offers material that one is unlikely to find in other reviews of animal ethics: the first by viewing familiar territory in a different light (advancing the thesis that the utility-versus-rights debate in animal ethics is much less important than is generally thought); the second by reviewing major recent works that are not very well-known (at least ? That is because there has never been a collection of academic essays entirely from the Tperspective of Catholic moral theology on this particular topic. And what is this topic? Morality and non-human animals. More specifi- cally, it is about, for example, particular elephants, chimpanzees, dogs, dolphins, hyenas, pigs, cats and hominids, and also all these animals (and others) as members of a particular species not simply as objects for human moral concern, but rather, as moral subjects.2 This collec- tion features essays about these elephants, chimpanzees, dolphins, etc. as God’s creatures worthy of being subjects (not merely objects) of moral concern. And it also features essays about higher non-human animals as potentially (or actually) moral agents whose intellectual and/or moral capacities are worthy of significant and sustained reflec- tion and analysis.     Use and Abuse Revisited: Response to Pluhar and Yarner KATHRYN PAXTON GEORGE Department of Philosophy University of Idaho, Moscow, ID 83843, USA Abstract In her recent "Counter-Reply" to my views, Evelyn Pluhar defends her use of literature on nutrition and restates her argument for moral vegetarianism. In his "Vegan Ideal" article, Gary Varner claims that the nutrition literature does not show sufficient differences among women, men, and children to warrant concern about discrimination. In this response I show how Professor Pluhar continues to draw fallacious inferences: she begs the question on equality, avoids the main issue in my ethical arguments, argues from irrelevancies, misquotes her sources, equivocates on context, confuses safety with morality, appeals to fear, confuses correlation with cause, fails to evaluate scientific studies, draws hasty conclusions from insufficient data, ignores a large amount of data which would call her views into question, does not follow good scien- tific or moral argumentation, objectionably exceeds the limits of her exper- tise, and resorts to scapegoating. I also argue that Professor Varner fails to make his case because he offers virtually no evidence from scientific studies on nutrition, relies on outdated and fallacious sources, makes unsupported claims, ignores evidence that would contravene his claims, draws hasty conclusions based on weakly supported hypotheses rather than facts, employs a double standard, appeals to ignorance, does not evaluate arguments from his sources, and makes an ad hominem attack on a respected nutritionist when his focus should be on evaluating the evidence and arguments from the scientific studies themselves. Neither Varner nor Pluhar have responded sufficiently to the real issue in my arguments, that of discrimination and bias in the vegan ideal.

    What Is Speciesism? Oscar Horta ABSTRACT : In spite of the considerable literature nowadays existing on the issue of the moral exclusion of nonhuman animals, there is still work to be done concerning the characterization of the conceptual framework with which this question can be appraised. This paper intends to tackle this task. It starts by defining speciesism as the unjustified disadvantageous consideration or treatment of those who are not classified as belonging to a certain species. It then clarifies some common misunderstandings concerning what this means. Next, it rejects the idea that there are different kinds of speciesism. Such an idea may result from confusion because there are (1) different ways in which speciesism can be defended; and (2) different speciesist positions, that is, different positions that assume speciesism among their premises. Depending on whether or not these views assume other criteria for moral consideration apart from speciesism, they can be combined or simple speciesist positions. But speciesism remains in all cases the same idea. Finally, the paper examines the concept of anthropocentrism, the disadvantageous treatment or consideration of those who are not members of the human species. This notion must be conceptually distinguished from speciesism and from misothery (aversion to nonhuman animals). Anthropocentrism is shown to be refuted because it either commits a petitio principia fallacy or it falls prey to two arguments: the argument from species overlap (widely but misleadingly known as “argument from marginal cases”) and the argument from relevance. This rebuttal identifies anthropocentrism as a speciesist view.     La argumentación de Singer en Liberación animal: concepciones normativas, interés en vivir y agregacionismo OSCAR HORTA Fundación Española para la Ciencia y la Tecnología/ Rutgers University [email protected] Resumen: Este artículo examina los presupuestos metodológicos, axiológicos y normativos en los que descansa la que posiblemente sea la obra más co- nocida de Peter Singer, Liberación animal. Se exploran las tensiones entre la posición normativa, de compromisos mínimos, que se intenta adoptar en esa obra, y las posiciones de Singer acerca del utilitarismo de las preferencias y el argumento de la reemplazabilidad. Se buscará elucidar en particular el modo en el que surgen tales tensiones al abordarse la consideración del agregacio- nismo y el interés en vivir en relación con el uso de animales no humanos. Palabras clave: especismo, principio de no maleficencia, utilitarismo, valor de la vida Abstract: This paper examines the methodological, axiological and normative assumptions on which Animal Liberation —arguably the most poular work by Peter Singer— rests. It explores the tensions between the normative position this book intends to adopt, which tries to compromise as little as possible with any specific normative theory, and Singer’s views on preference utilitarianism and the replaceability argument. In particular, the paper tries to assess the way in which such tensions arise when aggregationism and the question of the interest in living are considered in relation to the use of nonhuman animals.
