Ingredients for mandarin pancakes (great if attendees can make the dough ahead of time before demo):

About 2 cups (300g all purpose flour) 1 cup boiling water 2 teaspoon salt a little sesame oil (like a 1/4 teaspoon) NOTE: forgot to list sesame oil as an ingredient in initial list. If they do not have, they may use olive oil instead.

Put the flour in a small bowl with salt Boil water and using chopsticks or wooden spoon, stir dough until it comes together. Once the dough is cool, mix with hands. Dump the dough onto a clean surface. Knead the dough until nice and smooth (have more flour available in case you need it). Once dough is completely smooth and no longer hot, put it into plastic wrap and set it aside or into the refrigerator for thirty minutes. ***Steph will demo pancakes beginning at this step***

Ingredients for the vegetarian version: 1 pack mixed mushrooms (oyster, mistake, , or just cremini) 1 T threads 1 T thin sliced Half bunch scallions, bottoms cut in half. tops for garnish. 1 small red bell pepper, julienne 1/2 red , julienne 1 Japanese eggplant, sliced thin Salt White sugar Cooking oil NOTE: carrots were in original shopping list from Stephanie, but this is plenty of vegetables. Can leave carrots out***

If you want to make moo shu pork, get one pound no-bone pork loin chops, sliced thin. A little additional flour A little canola oil for frying

Equipment Needs:

FOR PANCAKES non-stick pan or pancake griddle a small rolling pin a two and a half inch round cutter (or you can get creative and use a drinking glass with a small knife) some plastic wrap handy to wrap in a pan when finished

FOR VEGETABLES a wok or large saute pan

FOR FRYING IF DOING PORK medium sauce-pot for frying slotted spoon for frying tray to put the pork on when it comes out of pot little mixing bowl to mix the flour and pork
