With its enormous geographic and cultural diversity across the archipelagos, it is evident that Indonesian cuisine is rich in variety and taste. As such, food can be utilised as a strategic means to boost the tourism industry of the country. In the past 5 years, the Indonesian government has given a great support for the development of culinary tourism as one special interest tourism sector that is promoted extensively to the international market. Promoting Indonesian culinary tourism should not be merely exposing the ample varieties of the traditional food that Indonesia has, but more importantly, telling the market about the socio-cultural values behind the food itself.     1. PENDAHULUAN 1.1. Latar Belakang Di Indonesia yang sebagian besar sagu tumbuh di Maluku, Riau, Sulawesi, Kalimantan, dan sekitar 90% tumbuh di Papua. Total lahan sagu di Indonesia sekitar 1,25 juta ha atau sekitar 50% dari total lahan di dunia, serta 1,2 juta ha terdapat di Papua. Sagu dapat dijadikan salah satu alternatif dalam pemenuhan kebutuhan pangan dan energi menggantikan beras. Sagu mempunyai kandungan karbohidrat tinggi namun belum dimanfaatkan secara intensif. Pada tanaman sagu dapat dihasilkan 250-900 kg pati kering per batangnya. Berdasarkan keunggulan tersebut, seharusnya sagu dapat lebih dimanfaatkan dengan memberi perhatian lebih seperti mengembangkan olahan pangan berbahan dasar sagu (Kanro et al., 2003). Tepung sagu dapat dimanfaatkan sebagai bahan pengikat pada kerupuk dan berpotensi menjadi komoditas unggulan. Selama ini biasanya tepung sagu terutama pada daerah timur seperti Papua, sagu hanya diolah menjadi papeda. Peningkatkan nilai tambah dan pemanfaatan sagu dapat dilakukan dengan pengolahan menjadi bentuk setengah jadi seperti tepung sagu yang selanjutnya dapat dikembangkan lagi menjadi bahan substitusi pada olahan roti, kue, nugget, dan mie. Menurut Pakaya et al., (2014), teknologi pengolahan yang berkembang saat ini sangat memungkinkan adanya diversifikasi produk pangan yang berbasis pada tepung sagu seperti kerupuk. Selain itu, potensi dan kandungan gizi yang terdapat pada sagu dapat dijadikan salah satu alternatif yaitu sebagai bahan pengikat adonan pada kerupuk. Pada umumnya bahan pengikat yang digunakan pada pengolahan kerupuk ikan yaitu tepung tapioka (Laiya et al., 2014). Tepung sagu memiliki kandungan mineral seperti fosfor, kalsium, dan besi yang tidak dimiliki tepung tapioka sehingga hal tersebut menjadi nilai tambah tepung sagu selain karbohidratnya yang tinggi (Haryanto & Pangloli, 1992).
