1 Activity Happenings ...

Fall arrived and found us full of joy and unforgettable moments here, in Greek American. Summer was full of happy moments for us and for the residents. One reason was the wonderful weather that gave us the opportunity to have many wonderful times outdoors.

Our monthly barbecue was once again at the top of our list of favorite events. We welcomed Autumn with hotdogs and hamburgers, coleslaw, macaroni and potato salads, fresh fruits and soft drinks. Residents and staff enjoyed the delicious meal prepared by the Dietary Department and the warmth of a beautiful sunny day.

In a number of countries around the world, as the days grow shorter and the nights get colder, people continue to usher in the winter season with gatherings, costumes and sweet treats.

PUMPKIN PIE Hellenic Foundation and the Hellenic Bar Association have joined forces to offer assistance to low-income Greek Americans in the Chicago area with various legal questions, concerns and issues. These services are available GREEK YOGURT PARFAITS by appointment every 2nd Saturday of the month at the office of the Hellenic Foundation. The October date is Saturday, October 14. Please see the INGREDIENTS: below flyer for further information.  1 can (14 oz) pumpkin puree  2 eggs  1 tablespoon lemon juice  ¼ cup (I used unsweetened almond milk)  ¼ cup pure maple syrup  1 ½ tablespoons pumpkin pie spice  ½ teaspoon salt  2 cups vanilla yogurt (I used Fage brand Greek yogurt)

Optional Toppings:

 Pumpkin Spice Granola

 Maple syrup  Extra nuts

PREPARATION:

1. Preheat the oven to 350 degrees. 2. In a large bowl, combine the pumpkin puree, eggs, lemon juice, milk, maple syrup, pumpkin pie spice, and salt. Stir until thoroughly combined. Pour the mixture into a baking dish. Bake for 30 minutes. When baking is complete, let the mixture cool for at least 10 minutes. 3. To assemble the parfaits, layer ¼ cup of the pumpkin mixture into the bottom of a small glass or jar. Then, layer ¼ cup of the yogurt over the pumpkin mixture. Repeat with another layer each of pumpkin mixture and yogurt. 4. Top each parfait with pumpkin spice granola, a drizzle of maple syrup, and extra nuts if desired
