About Breaking Bread Breaking Bread is a socially distanced pop up venue for and drinking on The Downs, Bristol. Set up as a response to Covid-19 restrictions that were in place last summer, the space ran for three months and allowed a number of Bristol’s independent and bars to operate when they would otherwise have had to remain closed.

After a successful run in 2020, we are scheduled to return to The Downs this summer.

With a core team who are passionate about and inspired by bringing people together to enjoy it. We have a strong focus on sustainability, supporting other local food businesses and community organisations, creating training opportunities for young people and generating positive social impact.

About the The restaurant is a brand new joint venture between The Pony & Trap, Pasta Loco and Pasta Ripiena, able to seat up to 120 covers housed in 6 adjoining tipis, providing a fun, safe and welcoming environment. We will be open Wednesday – Sunday every week. The menu will be a seasonal collaboration, in cooperation with small, local organic farmers. The restaurants will also have a strong focus on minimal waste, sustainability and health.

Job Purpose The purpose of the role is to make delicious, healthy and nutritious food for our customers. You will be responsible for your own specific section / rotating to other sections as required, as well as assisting the Head Chef and Sous Chef in maintaining the highest of professional standards in preparing, and plating food.

Duties Will Include

● Assist the Head Chef and Sous Chef in plating meals and ensure plating is well presented and prepared to specific portion control.

● Working with the Head Chef and Sous Chef in the preparation of weekly menus and suggest new additions to menus ● Generate new ideas to secure return customers and recommend measures to improve work procedures and customer satisfaction.

● Helping with the set up and close down of the kitchen and restaurant FOH areas and keeping these areas tidy throughout the day.

● Provide training and guidance to other kitchen staff as well as being “hands on” with food production

● Check all deliveries for quality and that the food is safe to serve; storage is to be correct and stock rotation practiced

● Assist the Head Chef and Sous Chef to ensure stock is not lost through wastage and theft; if it is it is recorded and reported to the Head Chef

● Ensure food orders are appropriate to food sales and not over ordered

● Assist the Head Chef and Sous Chef in buying food at the best prices and at top quality

● Assist the Head Chef and Sous Chef in recording stock levels

● Maintain high standards of food hygiene in accordance with catering standards and adhere to the requirements of Level 2 award in Food Safety and Hygiene at all times.

● Ensure good health and safety practice is practiced throughout the kitchen and there is an understanding of the workings of health and safety, and food safety legislation

● Assist the Head Chef and Sous Chef to ensure equipment is maintained and repairs completed in a timely fashion; treat all equipment with due care.

● Assist the Head Chef and Sous Chef in responding and addressing complaints reflecting on changes that need to be made and proactively seek customer feedback

● Liaise and cooperate with front of house waiting staff and convey any kitchen problems timely and accurately to the Head Chef or Sous Chef

● Assist in preparing food for both The Canteen and Community Ready Meals

● Assist in preparing and serving crew food

● Assist with Guest Supper Clubs

● Assisting in the other bars and restaurants onsite

● Inspire others with a positive attitude to teamwork and customer satisfaction

● Ensure you know the Restaurant fire evacuation plan and act as Fire Warden

● Support and help the training and induction of new staff

● Undertake training and development to ensure you keep apprised of development in your field of expertise ● Undertake other duties, which may arise or as may be delegated from time to time, commensurate with the skills required for this post.

Person Specification

● Experience necessary

● Good interpersonal skills with both kitchen and front of house staff

● Ability to cope under pressure, in a calm and efficient manner to set time constraints

● A flair and enthusiasm for cooking with fresh quality ingredients

Other Information

● We will provide a meal whilst on shift

● Core hours will include evenings and weekends

● We will provide an apron

● You will need to wear chef whites and appropriate footwear for a kitchen environment - closed toes and backs.

● All clothing should be clean and professional looking

● Long hair should be tied back and fingernails should be kept clean and neat.

● Staff are permitted to wear discreet earrings, finger rings and other jewellery but facial studs, nose rings and hanging body jewellery or dangling jewellery are not permitted as these can come into contact with food.

● Please be aware that this role is physically demanding at times. This role may require you to take deliveries, including lifting of supplies and boxes onto work surfaces and storage racks which means bending, stretching, carrying, pushing and pulling in the course of your work as well as being on your feet for the majority of your shift.
