Go to Dissertation Series. Studies on the Social and Political Constitution of the Economy Abstract Based on a complementary mixed-methods design, the dissertation sheds light on the relationship between meat consumption practices and consumers’ socioeconomic po- sition. In a first step, two large-scale data sets, the German Einkommens- und Ver- brauchsstichprobe (EVS) 2013 and the Socioeconomic Panel (GSOEP) 2016, are used to establish empirical relationships between meat consumption practices and consumers’ socioeconomic position. Education and income do not show the same effects across social groups. Income most strongly affects the meat consumption patterns of low-in- come consumers, and income effects diminish as income increases. Furthermore, in- come does not make much of a difference for consumers with low levels of education. Meat-reduced and meat-free diets are also more common among students and among self-employed persons, even after controlling for income and education. Income does not necessarily influence the amount of meat that is consumed but the type and price of the meat purchased.

The art of cooking should be taught in every public school. Every boy and girl should not only know how to cook, but should be able to quickly detect and understand the causes of bad cooking. Though there may come a day when foods can be tastily and wholesomely prepared without cooking, such a vast change is unques- tionably far removed from the present age. Therefore, knowledge of cooking is of almost as much importance as that of reading or writ- ing. Thousands become regular patrons of the doctors simply because of inferior cooking. The best food in the world can be made indi- gestible and almost devoid of nourishment from the same cause. The contents of this book will plainly set 4 PREFACE. forth the best methods of preparing all the foods now used on the table of the average English-speaking family. Too often cooking is looked upon merely as the art of preparing food to tickle the palate of gourmands whose sense of taste is so dead- ened that no food, not highly seasoned, can be enjoyed.

Either white, brown, rye, or entire wheat bread may be used, but it should be of close, even texture and at least one day old. Cream the butter with a wooden spoon and spread smoothly on the bread before it is cut; after cutting remove the crust and avoid spreading the butter or fill- ing over the edge. When ready to serve, cut the sand- wiches either square, triangular, long, narrow, round, or crescent shaped. In making rolled bread sandwiches, cut off the crust of a loaf of fresh bread and spread a thin layer of butter on one end of the loaf; cut off this buttered end in as thin a slice as possible and spread with the sandwich filling ; roll up this slice and lay on a napkin draw the napkin firmly around the rolled bread and pin it.
