Descriptive Beer Styles descriptive beer styles Ales are brewed using top fermenting yeast that performs at warmer temperatures. This gives most ales ALE a sweet, full bodied and fruity taste. They are brewed in a variety of styles including Blonde, Red, Amber, Brown and Black. Bock beers are a bottom fermenting lager that usually takes months of cold storage to make them smooth. BOCK Bock beers are usually stronger than a typical lager. They usually range in color from dark amber to nearly black with robust malt character. Ciders are made from fermented apple juice and range from being dry and fruity to sweeter with a more CIDER complex style and high effervescence. These are ales that are usually maltier, have higher alcohol content and are brewed with more hops than IPA regular ales. Lagers are brewed using bottom fermenting yeast and aged at colder temperatures. The cold temperatures LAGER help create a crisper tasting beer. OKTOBERFEST Oktoberfest is a full bodied, rich, toasty lager with a mild hop taste. Typically these beers range in color from amber to dark copper in color, and have a medium to high alcohol content. Pilsners are a light straw to golden color and clear. They are brewed using bottom fermenting yeast which PILSNER produces a smooth and crisp taste with a clean malty palate. Porters are generally a dark brown beer but will occasionally lean more toward a black color. They have a bold PORTER roasted to burnt malty taste and high levels of hop bitterness that comes from the use of roasted, un-malted barley. Pale ale is an ale made with predominantly pale malt. Pale ales are known to be hop-forward with a malty PALE ALE flavor and a golden to amber color. The highest proportion of pale malts results in a lighter color. Sours are tart-tasting and made with bacteria and yeasts. Sours come in a wide range of styles and can run SOUR the gamut from mouth-puckeringly sour to barnyard funky to fruity and light. Stouts are a fuller bodied and richer version of a porter and are usually brewed to have a lower carbonation STOUT level. They are very dark in color and often have a toast, chocolate or coffee like taste. Wheat beers are usually top fermented and are generally unfiltered with a hazy appearance due to the type WHEAT of yeast used. A lot of wheat beers have a low hop bitterness and high carbonation, giving these beers a very crisp and refreshing profile. draft beer NAME ORIGIN (OZ) ABV GLASS PRICE HALF WALL BEERS Half Wall Blue Trailer Blonde Ale® FLORIDA 16 4.5 6.50 Half Wall Jefficus Bourbon Coffee Vanilla Oatmeal Stout® FLORIDA 16 7.3 7.25 Half Wall Stugel Flugel IPA® FLORIDA 16 5.9 6.50 Half Wall Double Flugel DIPA® FLORIDA 16 7.7 7.25 Half Wall Emylee’s Irish Red Ale® FLORIDA 16 4.7 6.50 ® Half Wall Rotating Selections FLORIDA Ask Server IPAS Lagunitas CALIFORNIA 16 6.2 6.00 Dogfish Head 90 Minute DELAWARE 16 9.0 8.00 Half Wall Stugel Flugel FLORIDA 16 5.5 6.50 Half Wall Double Flugel FLORIDA 16 7.7 7.25 Cigar City Jai Alai FLORIDA 16 7.5 6.50 Coppertail Free Dive FLORIDA 16 5.8 6.50 Crooked Can McStagger Imperial FLORIDA 16 9.0 7.25 Green Bench Brewing Co. Prepare your Bottles and Caps: TRUE BREWTM INGREDIENT KIT Clean and sanitize the bottles by either soaking the bottles in a chemical sanitizing solution or running the bottles through a dishwasher cycle without any detergent or rinsing agent. This will only work with a dishwasher that has a heat/dry cycle. Sanitize the caps by soaking them in a sanitizing solution. PALE ALE This is a true pub-style beer. This Pale Ale is malty with a medium body and a smooth Prepare your Equipment: mouthfeel, perfected by a touch of hop flavor and American hop aroma. You will need a bottling bucket with the spigot, a hose, bottle capper and a bottle filler to conduct your bottle filling. Make sure to clean and sanitize all equipment before it comes in contact with the beer! Priming Solution: Add the priming sugar to 1 pint of boiling water and stir until dissolved, now “the priming solution”. Allow the priming solution to cool to roughly 75°F. Pour the mixture into the bottling bucket. Using racking tubes or an auto-siphon, transfer the beer from the fermenter O.G: 1.043-1.045 READY: 2-4 Weeks F.G: into the sanitized bottling bucket. Be very careful not to aerate the beer at this point – too much exposure to oxygen can cause off flavors. Mix the priming solution into the beer by SCHEDULE/NOTES: gently stirring with the sanitized racking cane or auto siphon. Bottling Filling: Attach a sanitized hose to the spigot on the bottling bucket and the bottle filler. Turn on the spigot and allow beer to flow through the spigot and hose into bottle filler.
