ESTD1988 ◄ GRAPPE ► The origins of Grappa are humble; it was created primarily to avoid wasting the Pomace - the skins, pips, stems and pulp left over from the wine-making process. The root of the word probably comes from words for pomace in the vulgar Latin of Northern Italy such as raspon, grapo, rappe, and graspa, the latter still used by many producers today. ESTD1988 The refinement of grappa from the 1970’s on has developed hand in hand with the evolution of an elegant Italian cuisine and interest in boutique boubons and single-malt whiskies. Today almost every wine produc- er distills his own grappa (or has it distilled for him) often using precisely the same pomace used to make his most notable wine. (See Tignanello, Serpico, Ruggeri Prosecco and Sassicaia on our list). The number of grappas produced today is in the thousands. At Pappardelle we have sourced some of the most distintive grappas encountered over many years of tasting. Ridgeline Vineyards
Ridgeline Vineyard In 2012, after several years of working with its coveted grapes, Decoy acquired the renowned Ridgeline Vineyard property, fulfilling a long-held dream of establishing an Estate program in the Alexander Valley and Sonoma County. The lush, structured Bordeaux-varietal fruit from this storied vineyard has become a central element in our Decoy Cabernet Sauvignon, Merlot and flagship Decoy Red, further enhancing the quality of our wines, and underscoring our belief in the importance of Estate vineyards. Located approximately 90 miles north of San Francisco, Ridgeline Vineyard is situated on Oak Mountain in the Alexander Valley AVA—Sonoma County’s finest appellation for growing Bordeaux grapes. The property consists of 44 unique hillside vineyard blocks, with different soils and elevations (up to nearly 2,000 feet). Though this spectacular mountain vineyard spans more than 400 acres, only 89 acres are under vine. The rest is preserved in its natural state, providing a stunning backdrop to the vine rows. Looming high above Alexander Valley at the north end of the Mayacamas mountain range, Ridgeline primarily consists of Cabernet Sauvignon and the other Bordeaux red grapes. Originally planted in 1999, the site benefits from an east-west exposure for maximum sunlight, and a north-south vertical axis for ideal drainage. Steep slopes further contribute to drainage, resulting in lower yields and concentrated flavors. These factors, and the site’s primarily Boomer and Sobrante loam soils, threaded with interlacing natural mineral springs, provide remarkable conditions for cultivating red grapes with phenomenal color, flavor and structure. Additionally, while summer daytime temperatures are hot enough to suit heat-loving red grapes, the rapid cooling effect of evening fog from the nearby Pacific Ocean preserves the fresh, enlivening acidity of the fruit as it ripens. -

Panel tasting New Zealand Pinot Noir This challenging grape variety produces myriad styles across this small country, says Bob Campbell MW. The one constant is that quality is continually improving SAUVIGNON BLANC MIGHT pay the bills, but New Zealand’s rising reputation as a fine wine producer is largely due to Pinot Noir. In just a few decades it has gone from experimental to exciting as Kiwi winemakers get the measure of this challenging grape variety. The real miracle is not just how far Pinot Noir quality has grown, but that it continues to grow strongly every year. Pinot Noir vines were first planted in the 19th century but fell victim to phylloxera. The variety returned to Kiwi soil in the 1970s and was put on the map when St Helena’s 1982 Pinot Noir from Canterbury scored a gold medal at a local wine show. A few years earlier, a scientific report noted that Martinborough had a climate that was similar to Burgundy. A few hopefuls including Ata Rangi, Martinborough Vineyards and Dry River bought land and planted Pinot in the alluvial gravel terraces of Martinborough. Other regions soon followed, although high-quality Pinot Noir production is restricted to the southern part of the country from central Hawke’s Bay down to Central Otago. It should be noted that the majority of the Pinot Noir grown in Hawke’s Bay and Gisborne is used in sparkling wine production. Every region from Hawke’s Bay south can make top Pinot. Regional differences are sometimes obvious but can be blurred by vineyard aspect (hillside versus plains), sub-regional variation (cooler Gibbston sites vs Nelson Maggie Map: hotter Bendigo conditions in Central Otago) and, of course, viticultural and winemaking methods. -

Alexander Valley 2013 CABERNET SAUVIGNON SONOMA COUNTY Jackson Estate wines showcase our cherished vineyard estate properties located on rare, coastal California terroir of mountain tops, ridges, hillsides and raised benchland soils. This limited release allows our winemakers to emphasize the extraordinary terroir of our unique properties and craft very small lots for rened palates. Alexander Valley AVA Estsablished in 1984, the Alexander Valley AVA is a long, slim winegrowing region dened by the Russian River winding up its mid line and the Mayacamas Mountains lining its eastern borders. The AVA, comprised mainly of mountains, ridges, hillsides and benchlands, is lled with a diverse array of soils rich in iron based volcanic rock, gravel, sand and clay. Winemaker Notes This Cabernet shows mountain intensity in its rich blackberry, black currant and cassis avors. It’s bone dry, with thick but rened long tannins, and brightened by a ne burst of fruit and acidity. Blended with a little Merlot, Malbec, Cabernet Franc and Petit Verdot for complexity, it drinks beautifully now, and will age for a decade or longer. alexander valley MERLOT 2016 APPELLATION Grapes for the Folie à Deux 2016 Merlot are hand-picked from a selection of prime vineyards in the cooler parts of Alexander Valley. Nestled in northern Sonoma County, Alexander Valley AVA stretches 22 miles from Healdsburg to Cloverdale, following the meandering course of the Russian River. Along its heavily graveled bench lands and foothills lie some of California’s supreme Merlot and Cabernet Sauvignon vineyards, which benefit from the region’s warm daytime temperatures, marine-cooled evenings and well-drained, volcanic hillside soils. GROWING SEASON 2016 was a phenomenal vintage for Sonoma County. Harvest began slightly earlier after more welcomed winter rain than previous years. The pace quickly sped up towards the end of August and throughout September as many varieties ripened at the same time. Fruit quality was exceptional, achieving ample ripeness on every metric. composition: 99% Merlot, 1% Syrah appellation: 100% Alexander Valley WINEMAKING harvest date: September 2016 Following a 10-14 day maceration period, the lots are aged for 18 months in release date: May 2018 a combination of French and American oak barrels. This wine is bright and alcohol: 13.9% varietally expressive. ph: 3.73 ta: 0.56 g/100ml TASTING NOTES The Folie à Deux 2016 Alexander Valley Merlot has bright, enticing dark berry, cases produced: 7,000 blueberry and plum notes with dried tea characteristics and hints of graphite srp: $20 on the nose. A lavish layer of velvety tannins and firm, persistent acidity coats the mouth. The cherry, black raspberry and vanilla oak flavors are concentrated and focused boasting a firm, yet plush, mocha finish. -

Clau de Nell, Grolleau IGP du Val de Loire 2016 Anjou-Saumur, Loire, France PRODUCER The vineyards at Clau de Nell have been cultivated biodynamically since 2000. A period of financial difficulty led the previous proprietors to seek help from the late Anne-Claude Leflaive and her husband, Christian Jacques. In 2008, the Leflaive- Jacques family purchased Clau de Nell, which at the time had not produced any wine for three years. Since then, Clau de Nell has enjoyed a successful revival with ex-sommelier Sylvain Potin making the wine and Christian running the domaine. VINEYARDS The domaine is situated in Anjou and is comprised of 8.5 hectares of red varieties planted on a south-facing knoll at 90 metres above sea level. The vines range in age from 30 to 90 years old and are low yielding (on average 25 hl/ha). There are five hectares of Cabernet Franc, two hectares of the native Grolleau and one hectare of Cabernet Sauvignon. They planted 1.5 hectares of Chenin Blanc in 2012. VINTAGE Growers had to contend with a complex array of weather patterns throughout the spring, but warm weather over summer and good conditions towards the end of the ripening season provided a positive end to a difficult vintage. The resulting wines are flavoursome and fruit driven, with excellent balance. VINIFICATION All the grapes were hand harvested and 100% destemmed. Fermentation was carried out using indigenous yeasts in oak barrels with gentle punch downs. The wines were then aged for 18 months in old barrels purchased from Domaine Leflaive.
