DALMATIAN COOKING: CUISINE OF THE SLAVIC MEDITERRANEAN PDF, EPUB, EBOOK John J Goddard | 274 pages | 17 Oct 2012 | Createspace | 9781468166187 | English | United States About Croatia — Fešta - The Croatian Food & Wine Festival Brudet , brodet or brodeto is a fish stew made in Croatian regions of Dalmatia, Kvarner and Istria, as well as along the coast of Montenegro. It consists of several types of fish stewed with spices and red wine, and the most important aspect of brudet is its simplicity of preparation and the fact that it is typically prepared in a single pot. It is usually served with polenta which soaks up the fish broth, while other recipes serve it with potatoes or bread. Brudets can significantly vary in style, composition and flavor, depending upon the types of ingredients and cooking styles used. Kulen is a type of flavoured sausage made of minced pork that is traditionally produced in Croatia Slavonia and Serbia Vojvodina. In parts of Slavonia, kulen is called kulin in Ikavian accent. The meat is low-fat, rather brittle and dense, and the flavour is spicy with the hot red paprika bringing it aroma and colour, and garlic for additional spice. The original kulen recipe does not contain black pepper; its hot flavour comes from the paprika. The traditional time of producing kulen is during the pig slaughter done every autumn by most households. Kulen matures during the winter; it can be eaten at this time, although not fully dried and cured yet, with very hot taste, but it will develop its full taste by the following summer.

The project asks how installation art can be the means for responding in Australia to the feeling encountered in moving between Poland and Australia. Critical inquiries into this question reveal the links between feeling and politics, and show how systems of knowledge shape human and mythical bodies as well as the borders between secular and sacred spaces. More specifically, the research asks how the established institutions of a place claim control over the borders between visible and invisible worlds, involving secular and sacred spheres, as well as between inner and outer territories. The project investigates how traditional Polish folk devotional practices and contemporary art practices, such as those of Ilya Kabakov, Marina Abramović, Louise Bourgeois, and Magdalena Abakanowicz, resist the politics of control over those boundaries.

  • 7 ARTICLES the Structure and Function of Funeral Rituals And
7 ARTICLES The Structure and Function of Funeral Rituals and Customs in Ukraine Natalia Havryl’iuk Institute of Ethnomusicology, Folklore and Ethnography of the Ukrainian Academy of Sciences Traditional funeral rituals and customs in Ukraine reflect a complex system of religious and magic beliefs. Psychological considerations play an important role, as does the desire to behave in a proper and moral fashion. Thus, Ukrainian funerals exhibit a combination of efforts on behalf of the deceased and actions intended to relieve the emotional and psychological tension of the living. Symbolic acts, such as the need to honor a deceased family or community member, are combined with very practical behaviors, those based on considerations of hygiene. In essence, in funerals we see ancient, pre-Christian beliefs in the interrelatedness of the living and the dead, beliefs that the connection between this world and the world beyond the grave is real and permanent, and that ancestors must be honored and remembered into eternity. Folk beliefs of ancient origin have, of course, now been combined with the Christian outlook on life after death and a layer of Orthodox Christianity superimposed on the folk stratum. Ukrainian funerary rituals have a distinct structure composed of the following components: omens foretelling death, the death itself, the funeral, the burial, and the wake. Neither the Ukrainian funeral ritual as a whole nor its various components have been the subject of any significant and sustained research. This fact was noted by several scholars at the beginning of the 20th century [Kuzelia 1912: 136, 165-66]. There were individual studies, notably Kuzelia’s own and the contemporaneous work by Hnat’iuk [1912], but there was little follow-up on the publications of the early twentieth century during the Soviet period.
