Ethica Techsheet Nicolis Amarone della Valpolicella DOCG Classico REGION Veneto VARIETY Corvina 65% – Rondinella 20% – Molinara 5% Croatina 10%. Vineyards located on family property in the hills of the Valpolicella Classica area. Yield per hectare: 24 Hl/Ha Exposure and altitude: Different exposures, between 650-1380 ft ASL (200-480 m ASL). Soil composition: Morainic and calcareous soil, large presence of stones. Cultivation method: Mainly double and single pergola, Guyot. Harvest: Hand-harvest in mid-October. Vinification process: After the grapes are selected and harvested, they are placed in small cases and placed in special dry, well-aired rooms. In this way, the grapes dry naturally and gain an extraordinarily high concentration of sugars,glycerine, and other aromas. After 3 months, the semi-dried grapes are softly pressed. Due to the low temperature, the process of fermentation is long and slow. Maceration too takes over a month. The wine is then aged in medium-sized Slavonian oak casks, where it continues to ferment and where it remains for about 30 months. Bottle aging at least 8 months before release.   • Understanding Amarone
    UNDERSTANDING AMARONE At 3000 years old, the ancient appassimento winemaking method is the epitome of tried and true. This technique of drying fully ripe grapes on mats or slated crates, for a considerable period of time before fermentation, reaches its apotheosis in the great Italian wines, Amarone and Ripasso. This method helps accentuate the sugars, energize the acids and integrate the tannins resulting in deeper coloured and fuller-flavoured wines. It’s fairly simple. Each producer determines the drying time of their grapes. Ideally, the grapes should raisinate in a temperature and humidity controlled environment to prevent rot. The dehydrated grapes are pressed and fermented dry. Since over 50% of each grape’s liquid (mostly water) is lost to the dehydration process, the flavours of the final wine are intensely concentrated and the alcohol level is anywhere from 2-5% higher than a typical table wine. The secret of this wine’s resurgence is directly related to the popularity of intense, fruit-forward New World wines. Amarones share some of the flavour profile of California Zinfandel or Australian Shiraz, but with a more refined balance between the complex aromas and flavours Amarone is produced in the region of Veneto by estates that make Valpolicella, one of the most popular wines of this area in Northeastern Italy. Amarone della Valpolicella, usually known as Amarone, is a typically rich Italian dry red wine made from the partially dried grapes of the Corvina (40.0% – 70.0%), Rondinella (20.0% – 40.0%) and Molinara (5.0% – 25.0%) varieties. The wine was awarded Denominazione di Origine Controllata (DOC) status in December 1990.

    Nicolò Tedeschi founded the company that bears his name in the Valpolicella area in 1824. He was a genuine personality of his time, renowned for his skill and moral stature. Throughout the years, his family has continued the traditional wine-making process, and today, the winery is owned by the fifth generation of Tedeschis: Antonietta, Sabrina and Riccardo. Each has various responsibilities, but it is Riccardo, the oenologist, who deals with production and acts as Tedeschi’s Export Director. La Fabriseria Valpolicella DOC Classico Superiore 2010 35% Corvina - 30% Corvinone - 30% Rondinella - 5% Oseleta The Tedeschi family has endeavored to improve the quality of its wines and to accentuate the relationship between the traditional vines and the region. For this reason, Rosso La Fabriseria, a wine created with an international style has been completely re-conceptualized and today is being introduced to the wine drinking audience as a wine that is coherent with the rest of our production and completely rooted in the Valpolicella region. The grape selection consists of Corvina, Corvinone, Rondinella and a small percentage of Oseleta. The grapes come from vines that are grown exclusively within the Valpolicella Classica Region and are left to over ripen on the vine. The wine yield per hectare is very low and does not exceed that of the Amarone wine. The wine is age exclusively in Slovenian oak barrels. TheValpolicella La Fabriseria is today a great and important Valpolicella wine and represents yet another wine that the Tedeschi family entrusts to tell the world the story of this splendid region. The essays should consist of no less than: a clear introduction followed by the main statements/thesis and a proper conclusion in the 700-900-word range. Compare and contrast Valpolicella DOC and Amarone della Valpolicella DOC. Consider in your response issues of history, location and geography, soil, grape variety, viticulture, vinification, and wine style. Writing the Essay After developing a brief outline, you will conclude that while Valpolicella and Amarone are derived from the same vineyards and therefore share soils, climate, viticultural techniques and grape varieties, they differ in their vinification. A statement regarding this will be your thesis. We provide two essay samples for this question. The first speaks to all of the required elements of the question and would, therefore, receive full marks: ten points out of a possible ten. Essays which receive full marks demonstrate clear comprehension of the issue and display that comprehension in a logical, coherent way. The second is missing several required elements and would receive only six points out of a possible ten.
