One of the key successes of the competition has been the systematic growth and development of a wonderful, diverse pool of professional and influential Asian wine-and-spirits judges. From fewer than 20 judges in the first year, to a grand total (and competition record) of 49 judges from 11 Asian countries and 13 Asian cities, the diversity of voices and complex cultural melting pot of opinions involved in the judging process has never been richer, deeper or more expansive. We were thrilled to count five of the eight Asian Masters of Wine in our judging team, including the newly announced recipient, Hong Kong’s Sarah Heller MW. First-timers Sonal Holland MW (India) and Ying Tan Hsing MW (Singapore), join returning Japanese Master of Wine Kenichi Ohashi, and me (Hong Kong), along with Sarah Heller MW from Hong Kong. We truly had the pan-Asian experts among our record- breaking judging panel. Guest international VIP spirits judge, Desmond Payne, the master distiller from Beefeater, offered a vast amount of experience, wisdom and wonderful stories from his 50 years in the industry. Our VIP international wine judge, Johann Fourie, is one of South Africa’s dynamic winemakers. He was at the helm of the country’s largest producer before moving to Benguela Cove Wine Estate, and he shared plenty of insights into winemaking in South Africa and the UK.     ESTD1988 ◄ GRAPPE ► The origins of Grappa are humble; it was created primarily to avoid wasting the Pomace - the skins, pips, stems and pulp left over from the wine-making process. The root of the word probably comes from words for pomace in the vulgar Latin of Northern Italy such as raspon, grapo, rappe, and graspa, the latter still used by many producers today. ESTD1988 The refinement of grappa from the 1970’s on has developed hand in hand with the evolution of an elegant Italian cuisine and interest in boutique boubons and single-malt whiskies. Today almost every wine produc- er distills his own grappa (or has it distilled for him) often using precisely the same pomace used to make his most notable wine. (See Tignanello, Serpico, Ruggeri Prosecco and Sassicaia on our list). The number of grappas produced today is in the thousands. At Pappardelle we have sourced some of the most distintive grappas encountered over many years of tasting. Building upon the modest collection of wines started by my grandfather, the Parkview Family Cellar found a permanent home in 1989 with the opening of the Parkview Group’s flagship property, Hong Kong Parkview. Initially consisting of a small collection of 50 bottles of right bank Bordeaux wines, the collection grew steadily under the stewardship of my uncle, George Wong, and his son Alex. By 2000, the collection was at 3,000 bottles and has now expanded beyond the right bank to other regions in France and the rest of the world. Currently, the collection stands at 50,000 bottles of fine wine and over 10,000 bottles of whiskey acquired through reputable merchants, auctions, and numerous trips to the wineries and distilleries where suppliers have now become close friends, ensuring that the family always has access to the finest and rarest bottles.
