Before modern science rendered this ancient technology obsolete, when you were sick or feeling “off” you were generally given a potion from your local apothecary. These handcrafted potions by your highly knowledgeable and well-stocked apothecary (the original pharmacist…today’s bartender) made the world a better place. If you’re wondering why we chose only 7 cures for what ailes…John chose the #7 too.

We live in the “Napa Valley of Beer” and are proud of it. Denver is home to the “Great American Beer Festival” put on by the Brewer’s Association (BA), and there are at present 19 breweries within five square miles of The Ritz-Carlton, Denver. Beers that have won either a gold, silver, or bronze medal in the past five years have been notated. We are privileged to be in “Malted Mecca”.

We have additionally rounded up the usual suspects in our domestics and imports for you too.

Our Brews have been organized for you from light to full body; and where available the international bitterness units (IBU) and alcohol by volume (ABV) are included. Our great city has been the home since its inception in 1982 of the Great American Beer Festival. To paraphrase the modern philosopher Kyle Broflowski, “Go Denver. Go Broncos”. Yeah. Go Broncos.

Beer is the oldest alcoholic beverage. Scholars agree it dates back to at least the fifth millennium BCE; as it was recorded in the history of Egypt and much of Mesopotamia. Chemical tests of ancient pottery jars reveal beer was produced in 7,000 BCE in what is today modern Iran (see irony, situational). This discovery is the earliest known fermentation and is the earliest evidence of brewing beer. In Mesopotamia, the oldest evidence is a 6,000-year-old Sumerian tablet depicting people drinking through reed straws from a communal bowl. The invention of bread and beer compellingly many agree is responsible for our cognitive ability, developed technologies, and indeed, civilization. Thanks ancestors; did I mentioned animal protein yet and the formation of our neo-cortex?

Colorado has certainly changed in the past twenty years. Every day we become a more cosmopolitan city, our dining scene continues to grow and thrive. In a counter-culture effort, we decided to dedicate this page to return us to a more traditional recreational drug and kick it old school…circa Mesopotamia.

These wines below are on the list for no other reason than they are outstanding. It’s not always something esoteric like Dornfelder or Refosco; nor will it be the latest and greatest cult wine. Guests often ask, “What are you drinking and liking right now?” Well friends, this is it. So pick it, sip it, fire it up come along and enjoy these hits from the Somm.

In no particular order whatsoever

1605 Scholium Project “Naucratis” 2015 Verdelho California AVA 65 Abe Schoener taught philosophy at St. Johns for nearly a decade before a sabbatical changed his life. Inspired by John Kongsgaard what began as a curiousity blossomed into a new path in life. The “Naucratis” is a zesty and powerful alternative for those who enjoy sauvignon blanc or the complexity of old-world whites; pairing masterfully with seafoods or a refreshing all by itself. 413 Black Arts Cellars “Le Toille” – vinified locally in Ken Caryl 2014 Syrah American AVA 75 On my weekly pilgrimage to the local Sonic (#3 add onion, fries, iced tea) I happened to notice a winery sign in the window of a small strip mall on Shafer Place. There I met John Cowperthwaite and tasted his wines. He loves the Rhône, and pays more attention to detail and process than most think necessary. I am honored and proud to be the first restaurant to carry his wine, and there is no better rich and earthy red under $100 on my list. My first sips were reminiscient of Villa Creek with a touch of Saint Joseph. Taste it yourself, & delight in building a dream into a full-time reality. 905L Sloan 2012 Blend California, North Coast, Napa County, Napa Valley AVA 750 Yes I did use the unicorn emoji. Love can make you do silly things & I really love wine. On five lists I have read over the years of Napa wines to drink before you die Sloan makes it every time. In 2002 & 2007 Michel Rolland’s Sloan received perfect scores from every critic. For those who enjoy and appreciate modern Napa reds this blend is VERY rare & mostly mailing list only. Parker said 2012 is the closest to 2002; I can’t wait to share it with someone soon & find out. 817 Joseph Phelps “Insignia” 2013 California, North Coast, Napa County, Napa Valley AVA 325 “The story of Insignia is a reflection of my grandfather’s character. He was a pioneer and an original who didn’t want to do what had already been done. He saw an opportunity to create something very special. With Insignia, he created California’s first proprietary red Bordeaux-style blend.” – Elizabeth Neuman, Joe’s Granddaughter Robert Parker’s favorite wine. Big and bold is an understatement. Enjoyable now we who love rich, tannic reds; but I cannot wait to see it in ten years. If in stock expect $550 around Denver. 915 Matthiasson 2013 Cabernet California, North Coast, Napa County, Napa Valley AVA 140 “Winemaking for us is a natural extension of farming, and most of our come from the seven vineyards that we farm in Napa and Sonoma. Our wines are refreshing, complement food, and are moderate in alcohol.” – Steve Matthiasson & Jill Klein Matthiasson. One of my favorite wines of the “earthquake vintage”, this is what is tastes like when a somm cries. Only 374 cases were made of this “goldilocks” cabernet (due to broken barrels lost in ageing process): vibrant blue fruits, perfect acidity, elegant tannins, and a full mid-palate that doesn’t lose intensity in its very long finish. I will never forget this one. I bought it for the label

And it is an object of culture. But it is also food. It is also food. It is an element and it is important to take it that way too.”

Let’s Get Vertical, Vertical

Elway’s Downtown 1881 Curtis Street Denver, CO 80202 Page 10

8 0 2 0 2 I want to get vertical. Let me hear your bottle talk. All of these wines have a story. Wine is just like us. We have all heard that wine gets better with age; and for some that is true. Most wines we see today are best to be enjoyed now. Yet these wines, just like you and I, are a product of the upbringing and of genes. Some have grown and blossomed from their youth. Some were told they would never amount to anything. All of them offer the opportunity to make this evening unforgettable.

Araujo Estate, 38 acre Eisele Vineyard Located in Calistoga, the northernmost AVA in Napa, Eisele vineyard is steeped in history. While first planted with zinfandel and riesling in the 1880’s, the modern story begins with Milton and Barbara Eisele in 1969. Over 20 years Ridge, Conn Creek, and Joseph Phelps showcased the power, intensity, minerality and longevity of the replanted cabernet. In 1991 Daphne and Bob Araujo purchased the vineyard from the retiring founders, and in replanting introduced biodynamic farming. Beginning in 2013, the Pinault family (Ch. Latour) carries the baton in expressing the power and elegance of arguably Napa’s greatest vineyard. Altagracia is a unique expression to enjoy.

1004R 2009 1600 cs – fine-grained firm tannins, lush dark fruits, earthy long finish. Ribeye’s best friend. 650 1005R 2011 1600 cs – tough years make great wine. Bordeaux-like structure & iconic fruits. Filet friendly. 625 1006R 2012 1200 cs – Araujo harvest, Pinault finish. Exceptional vintage. Modern masterpiece in a glass. 700

Bond Estates, 9 acre Quella Rising up into the foothills below Pritchard Hill, this steep southwest-facing vineyard grows on an ancient riverbed covered with volcanic ash. Quella is a german for “pristine source” and lives up to its namesake. The winemaking team from Harlan Estates create five cabernets, highlighting the unique of Napa. Often one of the bolder Grand Crus, the hallmarks of Quella are blue fruits, med-plus tannins, graphite, and a layered finish.

1102L 2010 ? cs – Parker Perfection. Weighty and earthy. Higher tannins balance abundanance of fruit. 575 1103L 2011 ? cs – Bolder, earthier. Plums, iron, smoke & spice showcase. It will calm, if you need it to. 540 1104L 2012 ? cs – Bigger, richer. 2010 “turned up to 11”. Given the press we got lucky get any bottles. 570

Chateau Musar, 445 acre Estate Parallel to the Mediterranean coast nestled between two mountain ranges at 3,000 ft is the Bekka valley, and the home of Chateau Musar. Founded by Gaston Hochar in 1930 at 20 it was inspired by 6,000 years of tradition and travels to Bordeaux. Ties grew stronger with the life-long friendship of Major Ronald Barton (of Langua-Barton). Musar is an icon and muse of “natural wine”; hand harvested by Bedouins, fermented by natural yeasts which create the “bretty” aromas. Blended from cabernet, cinsault, & of low yield (2 t/a), it is a wine built for the ages. Aged 7 years before release (4 in bottle), it displays enticing aromatics, and persistent dark fruits. So cool.

3056 2001 ? cs – Difficult year paid off. Cigar box, leather, baked fruits, & dark chocolate persist. 160 3057 2002 ? cs – Perfect vintage. Red, black fruits. Smells of Christmas. If your jam, It’s jammin’ now. 150 3054 2003 ? cs – Fullest body. Classic fruits, gamey, and earthy. Perfect expression of bolder Musars. 130

Dalla Valle, 5 acre Maya Vineyard On a 400 ft plateau in the hillsides of Oakville lies Maya vineyard, named for daughter of Naoko and Gustav Dalla Valle. The dream began in 1982, 1st vintage 1988, 1990’s Heidi Barrett release & by 1992 it became the hottest wine in the valley. Mia Klein then followed, & the wines continued to shine. Andy Erickson makes “Maya” today; an acolyte of Barrett who has built a reputation & fanclub all his own. Dark, brooding and quite rare (less than 500 cases), Maya is one of the longest lived Napa wines. Call ahead…it is worth the planning. A true “cult” classic.

1004L 2010 450 cs – Full body, dark color & fruit. Dark chocolate, roasted coffee. Ready but will improve. 415 1005L 2011 470 cs – Literally above the fray. More red fruit, but still Maya. Black tea & spices persistent. 415 1006L 2012 600 cs – Brighter fruits, great year. Longer maceration took hold; a critc favorite. Now or later. 560

Let’s Get Vertical, Vertical

Gaja, 5 acre Darmagi Vineyard “What a shame” or “pity!” are all rough translations of the Italian vineyard’s name. These words of Giovanni Gaja are now our sarcastic delight; the world is far better for the cabernet planted by Angelo then the “basic” nebbiolo. The Langhe, encompassing Barbaresco & Barolo, can produce incredible cabernet too. Grown in Barbaresco expect dried fruit, cigar, mocha, & acidity to balance the weight; structured & austere. Don’t miss out; or Darmagi!

3021 2011 1300 cs – A true stunner. Layered; sage & rosemary are alive. Black cherry, chocolate finish. 300 3022 2012 1300 cs – Riper vintage; approachable in youth. Still Italian at heart; earthy and mineral as ever. 275

Joseph Phelps “Insignia”, Estates An icon from an icon. Short of Robert Mondavi, few can claim historical significance like Joseph Phelps. In 1974, the first “proprietary blend” in Napa was born. Since 2004, Insignia is all estate grown, blending lots from vineyards in St. Helena, Rutherford, Oakville, Stags Leap District, Oak Knoll District, & South Napa. Made solely to achieve excellence, Insignia is Phelp’s legacy in liquid form. It’s the “Now That’s What I Call Napa” of every vintage.

1001L 2006 ? cs – Age benefitted complexity now. Darker fruits, nuanced earth and minerals are alive. 500 1002L 2007 ? cs – Hate quoting Parker; but in sum: “I should just go ahead & give [it] three-digit score.” 600 1003L 2008 ? cs – Hard to follow ’07; yet very close. Another Parker gem. His favorite wine wins again. 525 817 2013 ? cs – Critically revered classic. Ashley Hepworth’s best. Thought I’d offer a steal in youth. 325

Plumpjack “Reserve”, 42 acre Estate, 8 acre “I blocks” Sir John “Plumpjack” Falstaff embodies Gavin Newsome & Gordon Getty’s approach: classic, irrevant & unpretentious. “If sack and sugar be a fault,” says PlumpJack, “God help the wicked.” Grown in the heart of Oakville in the rocky, oldest vines of their I–block, Aaron Miller’s reserve cabernet is an established yet inviting offering. Plumpjack purposely mixes screw caps and corks…a quality assault on pretension. Imbibe; its awesome.

1115L 2012 7,500 cs – Black cherry, raspberry, iron, granite, vanilla, & mocha. Classic vintage; powerful. 475 1116L 2013 ? cs – Yeah it got better. Kudos and perfect scores abound. The surprise? LONG finish. 525

Spottswoode, 46 acre Estate George Schonewald in 1882 laid the foundation for one of Napa’s most famous vineyards he named “Esmeralda”. For 26 years he developed the fertile alluvial clay loam nestled against the Mayacamas, cooled by the maritime breezes of Spring Mountain in St. Helena. The estate changed hands 3 more times; since the Novak family took stewardship they began organic farming in 1985 & now regarded as one of the best cabernets Napa can produce. Aron Weinkauf joined in 2011 as winemaker & vineyard manager continuing the tradition forged by Tony Soter & Mia Klein, Pam Starr, Rosemary Cakebread, & Jennifer Williams…& he is literally crushing it. His wines are much better than my jokes; though both will echo in eternity. Common thread to the tasting notes: drink now – 50+ years.

1001R 2011 3,300 cs – Blue to black fruits. Exceptional texture from careful selection; proves value of ‘11’s. 350 1002R 2012 3,977 cs – Collector wine like ’02, ’08; rich & bold in youth with infinite layers. Best in show. 375 1003R 2013 4,000 cs – Near perfect wine by review; best quote: “seriously proper wine” – Jancis Robinson. 400

Vineyard 29, 3 acre Estate Planted with clones from neighbor Grace family & tended to by David Abreu, Vineyard 29 is more than a clever name. Teresa Norton & Tom Paine bought the land on which to retire. Heading advice from Grace family, they went to work. At 2929 on Highway 29, Gary Galleron, Heidi Barrett, & for over a decade Phillipe Melka bring to life perhaps the best wine in St. Helena. Chuck & Anne McGinn picked up the torch as Teresa & Tom retired. Like the Staglins, the McGinns are philanthropists: elderly healthcare & educational access funding for Napa.

1116R 2011 688 cs – Low yields; dominant structure. Firmer tannins, savory. Black fruit, violets, graphite. 275 1117R 2012 800 cs – Banner year. Fuller body, lively aromas. Cassis, blackberry, crushed stone. A delight. 325

My family and friends, and many guests over my career have asked me why I am willing to spend so much money on a bottle of wine. This quote above is my only reply. It’s an adrenaline rush and it lasts longer than falling at terminal velocity from an airplane. I will always remember my 1994 Château Petrus. The color, the aromas, the flavors, and most importantly, the experienced shared is something I will remember for the rest of my life. If you understand my sentiment this collection is for you; feel free to daydream or make this dining experience the next great story you will tell.

“Life moves pretty fast. If you don’t stop and look around once and a while; you could miss it.” – Ferris Bueller (1986)

I wrote this menu to ignite passion & let the sense of adventure run wild. Here compiled are the spoils gifted to us who enjoy wine not as a product but as experiences to be shared & enjoyed in a life well-lived.

These wines will not be enjoyed by everyone; there are no objectively great wines. I make no guarantee that any of them will fit into a box for those who color inside the lines we draw around wine. The free market created by variety, choice, and influence of the invisible hand still hidden by Prohibition 80 years later brought us here. Me: a passionate cork dork opening wine forged by the hearts & souls of some amazing people from around the world for way less than their “fair market value”. You: an adventurous soul eager to delight in discovery & share the experience with your nearest & dearest tonight. Fortune & flavor favors the bold.

8 0 2 0 2 Better know a Region

Today’s wine industry offers us more diversity and more wine to choose from than ever before. We can now buy wines designed to be a consistent product to enjoy, regardless of the vintage. We can enjoy wine brands year after year that we know and love. Wines that depict…a sense of taste.

Here gathered are wines showcasing something else. Wines evoking a sense of place – “”.

Terroir (pronounced Tehr-Wah) in the world of wine most agree for a particular wine includes the climate, soil, elevation, topography and geological history of the region. Others, like myself, believe there is most certainly a human element involved. Winemakers, technology, economics, politics and values all play a role in how a wine will taste at the table.

Region (2 of 5,280 series): l’Hermitage AOP

Date recognized in wine law: 1937 Varietal(s) allowed by AOP: Syrah (allowed up to 15% whites added), , Roussane Vineyards (climats) of note: West – Les Bessards, la varogne, le gros des vignes Hermitage Hill Peak – l’Hermite, la Chapelle; East – le Méal, les Gréffieux, Beaume, Maison Blanche, Rocoule, Péléat, les Murets, les Diognières, l’homme, la Croix, Torras et les Garennes, Les Signeaux Wineries: 15 (55,000 cases annually; 2.3 tons/acre – Syrah; 2.5 tons/acre – whites) Size: 336 acres (116 hectares); Elevation: 430 feet – 1,150 feet Aspect: Steep south-facing hillside leading into Tain l’Hermitage, east bank of the Rhône Soil(s): West (sandy gravel – les Bessards); Hermitage Hill Peak (clay – l’Hermite, sand & fine loess – la Chapelle) East (limestone – le Méal , clay – les Gréffieux, les Diognières) Granite subsoil (all) Catchphrase: “Powerfully rich, elegantly bold” Challenge(s): Soil erosion, terrace maintenance, finicky horse labor

Most great epochs in European history begin with the Ancient Greeks, and l’Hermitage is no exception. Ancient Greek vineyards were planted in 600 CE, and as usual, the Romans later took credit for it. It was known as Tegna until Henri Gaspard de Sterimberg, wounded vetran knight of France, was honored for his service in the Albigensian Crusade and given the hill by the Queen in 1224. He rarely descended down from the hill again, and lived out his days cultivating the vines. Upon his death locals renamed it l’Hermitage after their “l’hermit”. Over centuries since the wines have been in high demand; from King Louis XIII, Thomas Jefferson, the Romanovs, and myself using every resource available to acquire them. What we now know as Syrah began in l’Hermitage with the Chave family and others; the Chave’s can be thanked for their wines since 1481. I fell in love with wine thanks to Ch. Ausone. But perhaps there is no wine I desire, dream, think of, or want to share more than Chave. Bottles 5757 and 5758 from 2012 were life-altering experiences.

8 0 2 0 2 Better know a winemaker

I often tell my friends and family that wine is much like music; those of us who pull corks and share stories are the music critics to the winemaker’s rock star. Wine Spectator is our Rolling Stone.

The wine industry, like music, is a complex and difficult industry to categorize and generalize. Terroir and other descriptors continue to evolve as a terms in current and anything but common usage. In every case there is a constant element: the winemaker.

You will find reverence paid to both the “overproduced” and “mainstream” to the “small terroir-driven” and “minimalist”. Here, both the “top 40” and the “bootleg B-sides” will receive equal play. It takes immense talent to turn a bottle of wine into either a teenage dream or to follow someone into the dark.

Winemaker: Phillipe Melka

“Every time I approach a new project, I set out to tell the truth of the vintage, of the vineyard, and of the moment. The truth is going to be different for every project. But the truth always will be the truth.”

I don’t know how to put this…but Phillipe Melka is kind of a big deal; as anyone who has been dubbed “the soil whisperer” certainly must be. As a child born in the famous region of Bordeaux his curiousity was first for the land & soil. It took one wine-making class to ignite his passion; graduating with master’s degrees in eneology & agronomy. Château Haut-Brion was not a bad place to start a career, nor leaving it to work with Christian Moueix at Dominus Estate in 1991 as an intern studying soil. Now he is a master.

Much like musicians, winemakers are artists who blend influences into something all their own. It would be difficult to formulate a better blend: Jean Delmas & Jean Philippe Masclef (Ch. Haut-Brion), Christian Moueix & Jean Claude Berrouet (Petrus), (Ridge), Daniel Baron (Silver Oak), & the “flying winemaker” Michel Rolland. His French roots blossomed in Napa’s fertile soils, now one of the most in-demand consultant winemakers over the past 20 years. You may not now the name, but you probably have had the wine.

Phillipe & his wife Cherie own four labels: Metisse (Napa), Mekerra (Sonoma Valley), Majestique (global sites), & CJ (Napa). These are only the tip of the iceberg. Their consultant firm Atelier Melka’s projects include (present): Alejandro Bulgheroni, Brand, Andis, Cabaud, Corliss, Dana, Davis Phase V, Entre Nous, Fairchild Napa, Gandona, Lail, Moone-Tsai, Parallel, Perfect Season, Raymond, Roy Estate, Seavey, Skipstone, Tusk, Vice Versa, Vineyard 29; (past): Bryant Family, Caldwell, Constant, Cliff Lede, Dalla Valle, Flanagan Family, Gemstone, Hundred Acre, & Quintessa.

Bubbles

Benjamin Kane: Oh, actually all champagne is French; it's named after the region. Otherwise it's sparkling white wine. Americans of course don't recognize the convention, so it becomes that thing of calling all of their sparkling white "champagne", even though by definition they're not.

Wayne Campbell: Ah yes, it's a lot like "Star Trek: The Next Generation". In many ways it's superior but will never be as recognized as the original. - Wayne’s World (1992)

The effervescence. The complexity and richness. No other style of wine can awaken the palate nor steal your heart like a great bottle of bubbles. It’s not just for celebration either. Pair with fruits, cheeses, or a personal favorite: fried chicken.

8 0 2 0 2 Pinot Gris, Albariño and the Softer Side

Wine much like clothes goes in and out of fashion. Pinot Gris (or Pinot Grigio in Italy), perhaps more than any other white, has seen its share of cycles. Historically a noble varietal in the region of Alsace, much of what has been popular over the past 20 years has been thin and without much to say about it. The rest of the page includes fantastic international varietals that are light to medium bodied for those of us who enjoy the style. Albariño and Verdejo are iconic crisp whites for Spain. Albariño is tropical and fruit forward, while Verdejo in age can be almost nutty and both are wonderful with food.

Finally, the Marchese exhibits lemon and clementine flavors and earns its complexity from blending Grechetto, Sémillon and Chardonnay with a touch of oak aging. We collected a diversity of style and have arranged them light to full for you.

8 0 2 0 2 Riesling and Grüner Veltliner

A truly noble varietal Riesling is more than just a sweet wine. It’s floral almost like perfume; tastes of apple and other tree fruits, and due to its rich acidity cries out for food. This rich and esteemed white wine is no longer just for the connoisseur or discerning palate. Over recent years haute diners have made it a trend. If you prefer less sweet, stick with Alsace where there they tend to be drier; we prefer sweet with spice. But what, pray tell is Grüner Veltliner? The prize of Austria this lime and lemon, nectarine- flavored wine is the Swiss army knife of food pairings. Be it artichoke or kale, game of fish, it is more difficult to miss a pairing than to find one. With a quality wine like Riesling or Grüner, both wines improve greatly with age from top producers.

8 0 2 0 2 Sauvignon Blanc

One of the parents (along with Cabernet Franc) of Cabernet Sauvignon, this noble varietal of Bordeaux has many different styles across the world. In California, where for a time it was called Fumé Blanc, it has a more rounded style with hints of melon. In New Zealand it is more brazen, with intense acidity, grapefruit, in its most gravitas wines. Classically in France it has been used in Bordeaux as a blending wine and produces some of the most food friendly, simply beautiful wines in the Loire Valley.

While Sauvignon Blanc and Chardonnay get all the press there are many more outstanding full-bodied whites that deserve all of our attention. Just like the trend in red wines, blends have become increasing more popular as wine lovers return to the wines of the Rhône and seek out new fun wines from the world’s top wine producers. This page on most lists called “Interesting Whites” or some other boring and meaningless title is our collection of white and rosé wines that carry with them weight. We cannot force you into these wines; but we will certainly attempt to convince you.

8 0 2 0 2 Chardonnay

Chardonnay is certainly the most famous and recognizable white varietal. Yet as recognizable as it is no other can bend and take the shape of a winemaker’s style, or evoke the terroir of its home so eloquently. Our collection of Chardonnay reflects this diversity…from the elegance of and minerality of France to the rich, buttery and oaky style that has become all the rage in California.

8 0 2 0 2 Bold Wines for Your Sense of Adventure

Off the beaten path. Interesting Wines. This section of the wine list contains all of the varietals and blends that do not warrant their own section. To be honest, these wines are here for no other reason than they are delicious. They are for those who truly love wine and are willing to take a chance, for us cork dorks and our friends we con into the bottle. Don’t feel like you need to fit in any of those categories.

Be a beautiful and unique snowflake and drink one too.

Maya: Why are you so in to Pinot? I mean, it's like a thing with you.

Miles Raymond: Uh, I don't know, I don't know. Um, it's a hard grape to grow, as you know. Right? It's uh, it's thin-skinned, temperamental, ripens early. It's, you know, it's not a survivor like Cabernet, which can just grow anywhere and uh, thrive even when it's neglected. No, Pinot needs constant care and attention. You know? And in fact it can only grow in these really specific, little, tucked away corners of the world. And, and only the most patient and nurturing of growers can do it, really. Only somebody who really takes the time to understand Pinot's potential can then coax it into its fullest expression. Then, I mean, oh its flavors, they're just the most haunting and brilliant and thrilling and subtle and…ancient on the planet. – Sideways (2004)

8 0 2 0 2 Grenache and Syrah

“The line I have used a thousand times, somewhat sarcastically of course is, ‘Grenache delivers what Pinot Noir promises’. To me, a great Grenache, maybe particularly so from California, has these gorgeous, fruit forward, perfume(y) aromatics – somewhat reminiscent of a great Pinot Noir. It has a feminine, silky texture – also somewhat akin to a top flight Pinot. But unlike many Pinot Noirs, Grenache also has this full, mouth-coating, all enveloping and long palate presence. In other words the nose and the palate are in synch delivering a cascade of pleasure. That is, or perhaps should be, the character of California Grenache. It doesn’t just wink at you, but then no dice. It delivers the goods.” – Manfred Krankl, Winemaker Sine Qua Non

Often overlooked at steakhouses where Cabernet, Malbec and more full-bodied varietals dominate lists, the “Rhône Reds” can be an excellent match for our hand-cut steaks. They can range from racy and ripe in the New World to bone dry, earthy and rich in the Old World.

8 0 2 0 2 Nebbiolo

Nebbiolo belongs in a steakhouse. Traditionally the wines of Piemonte were aged in large Slavonian oak (botti) resulting in a dry, tannic wine atypical of the international style. Upon maturation, such wines became the “wine of kings & the king of wines”. Over the past 60 years significant changes in that style occurred; much of which began with a disagreement between father & son settled by chainsaw. Yeah…wine really is that cool.

In hard times Elio Altare ventured with friends to Burgundy in search of the answer for international success for his family & the wines of Barolo. Inspired with their new found knowledge, Elio returned home only to find his father less than receptive to replacing their winemaking traditions with French barriques. In the dead of night, he took a chainsaw & turned generations-old barrels into firewood. Elio and others like him forever changed the wines of Piemonte; today many utilize both the old botti & the new barrique to create these amazing wines.

8 0 2 0 2 Malbec & Zinfandel

Malbec and Zinfandel are the posh divas of the red wine world. They are the hot (both popular and generally high octane) wines of today. If you enjoy red wines with body, intense colors, ripe fruit and a long and lingering dry finish…look no further. Malbec historically is known as a blending varietal in Bordeaux and classically found in the Cahors. Yet it seems now most at home in Argentina.

Years of cultivation have transformed the original Crljenak Kastelanski (ancient Croatian varietal) into something truly unique and American, but Zinfandel is not indigenous to California. This grape loves the sun and can produce wines that border on the fortified side of alcohol.

8 0 2 0 2 Merlot & Cabernet Franc

Jack: If they want to drink Merlot, we're drinking Merlot. Miles: No, if anyone orders Merlot, I'm leaving. I am NOT drinking any (expletive deleted) Merlot!

- Sideways (2004)

These words dropped Merlot sales by 25% in less than a year. And while I generally agree with Miles in his explanation that few people ever remember, it took years for consumers to return to this noble varietal. Done well its wines are velvet in a glass and as cool as the other side of the pillow. Cabernet Franc (one parent to Cabernet Sauvignon) joins seamlessly with Merlot in the right bank of Bordeaux. Earthy with rich dried fruits on its own in the Loire, it has recently found its place with winemakers in the cooler regions of California and Washington.

Some people jump out of airplanes. I drink wine.

80202 Brews

As much as we would like to enjoy a bottle of wine at every meal, it can be impractical or near impossible if you enjoyed one at lunch. But good news! Colorado does allow you to cork the bottle and take it with you to your room or back home. Wines are from light to full body & we encourage you to ask to taste in search of your favorite.

80202 Large Format

Whoever had the foresight and genius to create large format bottles has given humanity the greatest gift of all. Whether you have found this page by chance, are in celebration with friends, or just feeling like a good old fashion glutton, there is something uniquely memorable about big bottles.

In sum, if you plan on more than one bottle of wine, it is highly recommended you look here first. Do it for value, for the memory, and most of all do it because it is wonderful.

80202 Hits from the Somm

915 Matthiasson 2013 Cabernet California, North Coast, Napa County, Napa Valley AVA 140 “Winemaking for us is a natural extension of farming, and most of our grapes come from the seven vineyards that we farm in Napa and Sonoma.

“You know what…I think what many people don’t understand? Wine is made to drink, and if you are thirsty to quench your thirst. Many people think of wine as only an object of culture. And it is an object of culture. But it is also food. It is also food. It is an element and it is important to take it that way too.”

Aubert de Villaine, Owner, Co-director of Domaine de la Romanee-Conti; Judge at 1976 “The Judgment of Paris”

Any reason to open a bottle of wine is an excellent reason; never let anyone tell you otherwise.

80202 Let’s Get Vertical, Vertical

I want to get vertical.

The winemaking team from Harlan Estates create five cabernets, highlighting the unique terroirs of Napa.

Blended from cabernet, cinsault, & carignan of low yield (2 t/a), it is a wine built for the ages.

80202 Better know a Region

Today’s wine industry offers us more diversity and more wine to choose from than ever before. We can now buy wines designed to be a consistent product to enjoy, regardless of the vintage. We can enjoy wine brands year after year that we know and love. Wines that depict…a sense of taste.

Here gathered are wines showcasing something else. Wines evoking a sense of place – “terroir”.

Date recognized in wine law: 1937 Varietal(s) allowed by AOP: Syrah (allowed up to 15% whites added), Marsanne, Roussane Vineyards (climats) of note: West – Les Bessards, la varogne, le gros des vignes Hermitage Hill Peak – l’Hermite, la Chapelle; East – le Méal, les Gréffieux, Beaume, Maison Blanche, Rocoule, Péléat, les Murets, les Diognières, l’homme, la Croix, Torras et les Garennes, Les Signeaux Wineries: 15 (55,000 cases annually; 2.3 tons/acre – Syrah; 2.5 tons/acre – whites) Size: 336 acres (116 hectares); Elevation: 430 feet – 1,150 feet Aspect: Steep south-facing hillside leading into Tain l’Hermitage, east bank of the Rhône Soil(s): West (sandy gravel – les Bessards); Hermitage Hill Peak (clay – l’Hermite, sand & fine loess – la Chapelle) East (limestone – le Méal , clay – les Gréffieux, les Diognières) Granite subsoil (all) Catchphrase: “Powerfully rich, elegantly bold” Challenge(s): Soil erosion, terrace maintenance, finicky horse labor

80202 Better know a winemaker

Haut-Brion), Christian Moueix & Jean Claude Berrouet (Petrus), Paul Draper (Ridge), Daniel Baron (Silver Oak), & the “flying winemaker” Michel Rolland.

80202 Pinot Gris, Albariño and the Softer Side

80202 Riesling and Grüner Veltliner

80202 Sauvignon Blanc

One of the parents (along with Cabernet Franc) of Cabernet Sauvignon, this noble varietal of Bordeaux has many different styles across the world. In California, where for a time it was called Fumé Blanc, it has a more rounded style with hints of melon. In New Zealand it is more brazen, with intense acidity, grapefruit, in its most gravitas wines. Classically in France it has been used in Bordeaux as a blending wine and produces some of the most food friendly, simply beautiful wines in the Loire Valley.

80202 Chenin Blanc, Viognier and Wines with Weight

While Sauvignon Blanc and Chardonnay get all the press there are many more outstanding full-bodied whites that deserve all of our attention. Just like the trend in red wines, blends have become increasing more popular as wine lovers return to the wines of the Rhône and seek out new fun wines from the world’s top wine producers. This page on most lists called “Interesting Whites” or some other boring and meaningless title is our collection of white and rosé wines that carry with them weight. We cannot force you into these wines; but we will certainly attempt to convince you.

80202 Chardonnay

Chardonnay is certainly the most famous and recognizable white varietal. Yet as recognizable as it is no other grape can bend and take the shape of a winemaker’s style, or evoke the terroir of its home so eloquently. Our collection of Chardonnay reflects this diversity…from the elegance of and minerality of France to the rich, buttery and oaky style that has become all the rage in California.

80202 Bold Wines for Your Sense of Adventure

Off the beaten path. Interesting Wines. This section of the wine list contains all of the varietals and blends that do not warrant their own section. To be honest, these wines are here for no other reason than they are delicious. They are for those who truly love wine and are willing to take a chance, for us cork dorks and our friends we con into the bottle. Don’t feel like you need to fit in any of those categories.

Be a beautiful and unique snowflake and drink one too.

80202 Pinot Noir

80202 Grenache and Syrah

80202 Nebbiolo

80202 Malbec & Zinfandel

80202 Merlot & Cabernet Franc
