The chefs use their talents to tell a story in the same way. And much like our chefs be- hind the cuisines of our menus, no details are overlooked in the creation of our wine list. We aim to source wines that evoke a response, open the mind, and complete the dining experience. For the month of December, the wine team has selected the following standout recom- mendations. They each come from smaller, lesser-known wineries or regions. We hope to elicit a curiosity in you and spark your imagination like they do for us. Cheers! Champagne 0065 Agrapart, “7 Crus” Brut, NV $155 Fourth generation vigneron Pascal Agrapart runs this historic family domaine in the village of Avize. He is humble, soft-spoken, and fiercely dedicated to expressing the terroirs of his beloved village in his Champagnes. “Les 7 Crus” which is a mix of 90% Chardonnay and 10% Pinot Noir from 1er and Grand Cru vineyards (from seven villages surrounding Avize) non-vintage bottling that beautifully synthesizes the pure and opulent fruit of top quality chardonnay vineyards in the Côte de Blancs with a racy, structured minerality that gives the wine superb length and cut. 0063 La Caravelle, Brut Rose, NV $110 André and Rita Jammet carry on a proud family tradition of creating proprietary wines, they honor the spirit of their former La Caravelle New York restaurant, which was founded in 1960. This beautiful salmon pink Champagne uses 40% chardonnay, 30% pinot noir and 30% pinot meunier with the addi- tion of elegant red wines from well-known appellations such as Aÿ and Bouzy. With a floral and red berry bouquet, the rosé evokes hints of cherry almond, pomegranate and fennel. White 2137 Renardiere, Arbois Blanc Pupillin “Les Terrasses”, Jura 2015 $ 90 This is 100% Savagnin from 2 parcels that are located in the best area of the Jura wine region. The wine is full bodied, delicately perfumed, showing golden apples and fresh chamomile upfront with roasted hazel- nuts on the finish. 2050 Domaine de l’Arlot, Nuits-Saint-Georges 1er Cru “Clos de l’Arlot” Blanc 2017 $260 From one of the most prestigious houses in Nuits-Saint-Georges. This wine has a well defined bouquet of orange pith and yellow flowers with touches of wild nettles and patisserie, brisk acidity and race toward the finish. This is a classy offering. 0806 A.D. Beckham “Amphora” Pinot Gris Rose, Willamette Valley, Oregon 2016 $ 95 Established just over a decade ago, this husband and wife team fell into wine making perhaps by chance. In recent years, they have started experimenting with techniques new to them, including this amphora project. Bright and tangy but certainly a more bold example of rose. Red 6038 Giulia Negri Nebbiolo, Langhe “Pian delle Mole” Piedmont, Italy 2017 $ 80 In the heart of the Serradenari cru of La Morra—the highest point in the Barolo zone, Giulia Negri passionately pursues her goal of crafting Barolo with a Burgundian sensibility. The elevation, coupled with a complex mosaic of soils unique to this part of the Langhe, sets the stage for Giulia to create Barolos marrying delicate floral aromas and elegant fruit with a deep mineral foundation. 6016 C. d’Or et de Gueules “Les Cimels”, Grenache/Syrah, Costieres de Nimes, FR 2014 $ 55 A winery off the beaten track, down in the southern reaches of the Rhone Valley. This supple blend has notes of black- berry and plum accented by anise and green herbs. 6008 Olivier Riviere, “El Cadastro” Rioja, Spain, 2015 $105 El Cadastro is sourced from three plots of vines that were planted from 1930’s to the 1950’s and are farmed organic. Balanced and pretty with beautiful aromas of dark berries, citrus and stones, full body, firm tannins and a long, racy finish. • Domaine Regis Bouvier
DOMAINE REGIS BOUVIER Country: France Region: Burgundy Appellation(s): Bourgogne, Marsannay, Fixin, Morey-St-Denis, Gevrey-Chambertin Producer: Régis Bouvier Founded: 1981 Annual Production: 6,000 cases Farming: Lutte Raisonnée (starting with 1998 vintage) Régis Bouvier in Marsannay achieves a rare hat trick in Burgundy, the mastering of all three colors– red, white and rosé, through reasonable yields and high quality terroirs. Bouvier makes the best Burgundian rosé that we have ever tasted, his whites are delicious, with their own particular character completely unlike other Chardonnays from Burgundy, and his reds are his crowning achievement, managing to be wild and exciting while refined and elegant at the same time. Bouvier’s vineyards in Marsannay are premier-cru quality (some may even get classified) and his lieu- dit Bourgogne Rouge En Montre Cul vineyard is of a quality well above most (cultivated on a steep slope, not flatland Bourgogne). And don’t miss his Morey-St-Denis En la Rue de Vergy, a superb vineyard right above the Grand Cru Clos de Tart. This domaine represents terrific value for a number of reasons–a lesser-known appellation combined with quality vineyard holdings and a conscientious and talented wine grower. 1605 San Pablo Avenue, Berkeley, CA 94702 www.kermitlynch.com | [email protected] Berkeley Retail: 510.524.1524 | California Wholesale: 510.903.0440 | National Distribution: 707.963.8293 DOMAINE REGIS BOUVIER (continued) Vine Vineyard Wine Blend Soil Type Age Area* Avg. 35 Bourgogne Rouge Pinot Noir Limestone,

With more than 1,500 years of cultivation, it is hard to argue against the Musique et Vin festival by holding an auction for special bottles donated by winemakers this belief. However, to The Wine Forum, Burgundy is more than just pure, scholarly wine. To us, whom we will be visiting and splitting the proceeds equally between these two worthy causes. Burgundy represents all that we as a group stand for—that is, that fine wine is not a right, but a And what a tour we have lined up! We commence with a Gevrey-Chambertin Grand Cru tasting privilege. Speaking with the region’s very top winemakers, they resolutely believe they are merely the current custodians of cherished plots, and that their role is to make the best wines possible at the Château du Clos de Vougeot on the final night of the 2014 Musique et Vin Festival. This and pass on the vineyard in the best condition possible to the next generation. Working the soil fabled region hosts 9 Grand Cru vineyards, the most of any in Burgundy.

1st October 2017 - 30th September 2018 www.joh.cam.ac.uk ALL PRICES ARE INCLUSIVE OF VAT AT THE PREVAILING RATE Sometimes your choice of wine might not be available. If not, please accept our apologies and we will suggest an alternative. We will also endeavour to supply the vintage indicated, however, if this changes, we will inform you. We will provide the updated vintage on our list. WELCOME Welcome to the new St John’s College Wine List for 2017/18. The wines have been chosen for their individual style and quality. The Catering Team here at St John’s College tasted many of the new wines for the list in March 2017, to make sure they fall within our quality expectations. Some of the wines have been tasted against some of the menu items that feature in the new set of banqueting menus. We also believe that these wines give real value for money. We have also held a few wine tastings with the students of the College, which is always important, as they then know the wines when selecting for their functions. In February 2017 we hosted a wine suppliers’ lunch to discuss new wines, regions, vintages, the wine trade in general and new wines for the list. Many of the suppliers have given us great help and support throughout the year. I visited some vineyards in Portugal, Austria, Sweden, Bordeaux, Rioja and Alsace in the last year. This year we have added a little Bordeaux section to the wine list. Please try some of the more unusual wines, they are good quality and very well made.
