    Interconnected practices and household improvisation: a multi-sited ethnography of meat consumption routines in urban Australia and Indonesia Kipley Laura Nink MAAPD, BA/BAsian Studies (Hons) A thesis submitted for the degree of Doctor of Philosophy at The University of Queensland in 2020 School of Social Science Abstract This ethnographic study of meat as part of humble daily practices contributes new insights to the existing anthropology of meat eating and its implications. Drawing on the emerging field of design anthropology, the thesis is inspired by Marcus’s exhortation to ‘follow the thing’ (meat) in household shopping, food handling, preparation and consumption practices across national borders. The thesis addresses the following research questions: What are the interconnected rituals and routines in everyday household meat consumption practices in middle-income households in Australia and Indonesia? How do these practices relate to, and negotiate, local histories and regional–global networks? What can design anthropology methods offer in understanding everyday foodways? What insights can a comparison of these practices provide in relation to the circulation of meat? I focus on 18 households in urban Australia and Indonesia because, while culturally distinct, they are connected through a transnational and global meat trade. Drawing on the concepts of improvisation, habitus, intersecting technologies and friction, I find everyday household foodway practices to be shaped by individual habitus as well as knowledge of frictions in the ways that meat is produced and circulated. I consider Indonesian meat purchasing and handling practices to argue that it is for structural, not cultural, reasons that Indonesia is a ‘wet’ (fresh) meat market.

    Flap Steak / Bavette Das Flap Steak oder Flap Meat wird aus dem hinteren Lappenstück der Flanke, dem sog. „Top Butt“, geschnitten. Es handelt sich dabei um ein aches und sa iges Stück, das – wie die meisten Cuts aus dem Bauchlappen – sehr ge- schmacksintensiv ist. Im Vergleich zum Flank Steak besitzt es eine gröbere Fleischfaser, ist etwas größer und gleichzeitig umso marmorierter. Dadurch ist der Beefgeschmack noch präsenter als bei seinem kleinen Bruder – allerdings fehlt es ihm hierzulande noch an Popularität. In Frankreich ist das „Bavette d‘aloyau“ in nahezu jedem Supermarkt zu nden. Als „Top Butt Flap Steak“ oder „Sirloin Tip“ hat es zudem längst die amerikanische Küche erobert. Auch namentlich unterschei- den Connaisseurs zwischen „Großes Bavette“ (Flap Steak) und „Kleines Bavette“ . Auch hier gilt: Scharf anbraten, am besten medium oder medium rare grillen und gegen die Fasern aufge- schnitten servieren. Salz, Pfe er – fertig. Flat Iron Steak Der ache Muskel wird aus der Rinderschulter geschnitten, ist sehr kurzfaserig und wunderbar marmoriert. Konkret aus dem Schaufelbraten. Erst Anfang 2000 „entdeckte“ man diesen relativ modernen Zuschnitt, der sich perfekt zum Kurzbraten und Grillen eignet. Der Name „Flat Iron“ stammt von der Optik des Cuts: Entfernt man die mittige Sehne aus dem Schaufelbraten, so erinnert die Form des Zuschnittes an ein altertümliches Bügeleisen (engl. Flat Iron). Der Cut liegt in den USA bereits im Trend, wartet in Deutschland aber noch auf seinen großen Durchbruch. Das Steak lässt sich wunderbar im ganzen Stück grillen. Anschließend ruhen lassen und zum Servieren quer zur Faser in dünne Scheiben schneiden. Skirt Steak Das Skirt Steak, auch Saum eisch oder Kron eisch genannt, ist das Zwerchfell des Rindes.
