BOTTLE AND WINE GLASS ON TABLE by Pablo Picasso
In 1912, artist George Braque created the first Cubist Paper Collé by gluing strips of wood- grained wall paper to a drawing. As the way art is, another artist drew inspiration from the idea. Pablo Picasso created ‘Bottle and Wine Glass on Table’ in 1912 using charcoal, ink, graphite and cut newspaper.
Like the art you see in a museum, winemaking is an art that is passed on generation after generation. Some generations stay true year after year honoring the style their family has honed for decades. Some leave the nest and take what they’ve learned to create their own style. Others take tradition and find ways to stay true but also innovate. Either way, it brings me great pleasure to be able to bring their art and lifes work to Maple & Ash.
Curating a wine list is a treasure hunt that never ends. Sometimes I’m able to find 6 bottles of something rare and wonderful. Sometimes I can only find 1. If you’ve stumbled upon a wine that you are excited about and anticipate needing more than 1-2 bottles, please ask for a Wine Captain and we’ll be happy to search the cellar for every last bottle we can find.
I hope your dinner this evening is a perfect pairing. Wine with food and people with conversation.
Cheers! Amy

ROSÉ
HAMPTON WATER ROSÉ 2019 $68 “Legend has it that Hampton Water came about one night when Jesse and his Notre Dame roommate, Ali, were at his house in the Hamptons, drinking what Jesse's dad (Jon Bon Jovi) liked to refer to as "pink juice." (me too, Jon. me too, but only at breakfast). Such a great story and the wine is delicious. Made with grenache, cinsault, mourvèdre and syrah, you have a light, refreshing and aromatic wine.” - Amy

VEUVE CLICQUOT VINTAGE 2012 $265 “In 1805, Madame Clicquot began her audacious transformation of the Champagne industry during which she became one of the first modern businesswomen. In 1810, she created the very first vintage Champagne and today we celebrate Vintage 2012, the 66th vintage of the house. Pinot Noir is the signature grape of Veuve Clicquot and, as always, it dominates the blend, providing power, complexity, and elegance. The uniqueness of the Vintage 2012 lies in the addition of 11% of wines aged in large wooden casks. These wines act as spices to the blend, bringing very light woody, vanilla, and toasted aromas to the fruity notes of figs, candied citrus and roasted pears.”-Rebecca Kelly

GERMANY RIESLING
THE RIESLING VINEYARDS OF MOSEL
“Rieslings are some of the first wines that come to mind when thinking of something sweet, and many great rieslings live up to this expectation. But dry rieslings are some of the most food- friendly wines out there. For this style, check out the wines from Australia and Alsace (like the legendary Clos St. Hune). For a touch of sexy sweetness, perhaps German or Austrian wines may be up your alley. Choosing one that suits your palate is actually really easy once you can decipher the label. For a quick rundown on how and to see why riesling is the somm's dirty little secret, ask a wine captain!”- T.J.

PATRICK PIUZE COTEAU DE FONTENAY CHABLIS 2019 $108 “Patrick Piuze… how do I even begin to describe him? He’s one of those forces of nature that makes you stop and observe what you are witnessing. Bawdy at times, serious the next, you don’t know what’s going to come out of his mouth at any given moment. Patrick worked under Olivier Leflaive for 4 years honing his craft and diving deep into the appellations of Chablis. After a stint with Verget, and 3 years with Brocard, he was ready to start his own winery. Patrick believes that the true personality of Chablis is found in the acidity and minerality. Much like Patrick Piuze himself, there is an honesty to them, that I absolutely love.”- Amy

DOMAINE BENOIT ENTE PULIGNY MONTRACHET 2017 $190 “It was our first appointment of the day and as most Somms will tell you, your palate is at it’s best in the morning; despite the late-night hours we tend to work. As Benoit started pouring our first glass, my Somm brain kicked in and I was ready for the acidity to help waken up my mind and my palate. Such a lovely way to wake up! Always seeking freshness and acidity, Benoit picks early and uses minimal new oak. Little brother to the famed Arnaud Ente, Benoit is steadily charting his own path. I love these wines, they are exquisite. They also remind me of a cool, crisp morning in Burgundy tasting with a Master of a winemaker.” - Amy

LEEUWIN ART SERIES CHARDONNAY MARGARET RIVER 2016 $195 “They fooled me once, and then they fooled me twice and then they fooled me again. I was at a seminar for a few days for Australia Decanted and we were blind tasting chardonnays. I called Meursault, I called Puligny-Montrachet, I called Sonoma Coast. What I didn’t call was what it actually was. Australia. It wasn’t just with chardonnay either. A shiraz tasted like Northern Rhone, I called Bordeaux on a cabernet sauvignon. While it took getting fooled over and over and over again, I learned something. Australia is making incredible wine and they deserve a stage for more than just their shiraz. Don’t believe me? Let me blind you on a few wines, let’s see what you call.”- Amy

BREWER-CLIFTON “GNESA” 2012 $165 “We pretty much all agreed. We could have listened to Greg Brewer talk all day, completely enraptured with how he was talking about terroir and wine. Sta. Rita Hills is his habitat and the grapes are his medium. Crafting world class Pinot Noir and Chardonnay, Greg is a virtuoso. Listening to him though you wouldn’t know that. Down to earth and genuine, he spoke about wine in such a simple and honest way. Making each topic fascinating yet completely relateable. Very much like his wines, I suppose. Complex and elegant but very, very approachable.” - Amy

DOMAINE ARNAUD MORTET “LA PERRIÈRE” 1ER CRU 2017 $405 “Burgundy is frought with tragedy and Domaine Arnaud Mortet hasn’t been exempt. Young Arnaud was asked to step up at the young age of 25 to take over his father’s Domaine, Denis Mortet. Denis Mortet passed tragically and unexpectedly in 2006 leaving behind his family to pick up the reins of the winery. 10 years later with 10 vintages under his belt, Arnaud launched Domaine Arnaud Mortet. While he is still the head winemaker for Domaine Denis Mortet, Arnaud is very much ready to create his own style of wine. Precise and pure, these wines have a crunchy acidity with red fruit that explodes on the palate.”-Amy

While the family can trace it’s roots back to the 1700’s, the domaine wasn’t founded until 1963 when Jean Taupenot married Denise Merme. It’s now run by brother and sister Romaine and Virginie. All organic, with a true dedication to the terroir, these wines are all purity and finesse. “- Amy

DOMAINE PERROT-MINOT CHAMBOLLE-MUSIGNY 2017 $315 “This was a once in a lifetime tasting appointment with Christophe Perrot-Minot. Elegant, warm, funny, and with rough, weathered hands, Christophe started opening bottles and pouring wine for us to taste. As he described each wine and how it was made or rather what it ‘needed’ to be made he repeated the same phrase over and over; “The wine decides”. A father to the vine, Christophe nurtures the grapes into becoming the absolute best they can be and never forces them to be what they can’t. Fanatical about the sorting and cutting process, these wines achieve a purity of fruit that is undeniable.”- Amy

DOMAINE JEAN TARDY “BAS DE COMBE” NSG 2017 $215 “Fermage sounds more eloquent than sharecropping, no? Back in the 1920’s, Victor Tardy probably had no idea that Etienne Camuzet, of the famed Domaine Méo –Camuzet, would reward his 25 years of hardwork and dedication with sharecropping rights. But he did, and here we are, almost 100 years later seeing the results of a hard-working vineyard worker. Domaine Jean Tardy is now at the helm of Victor’s grandson, Guillaume and the wines are absolutely stunning. Partial to sometimes 100% destemmed translates to fresh and elegant style wines. Tannins are completely integrated letting the fruit and earth take the stage.”-Amy

DOMAINE MICHEL GAY VIEILLES VIGNES 2014 $135 “The Gay family has been making wine in Burgundy for more than 100 years. It wasn’t until 1992 when Michel and François divided the larger Domaine Gay Pére et fils in two. After Michel retired, Sébastion (pictured above) took the reigns and set about converting to a more organic approach eliminating all herbicides, in order to convert to a more organic approach. There is a level of passion and intensity in his wines that are a direct reflection of his passion and hardwork in the vineyards. These wines keep getting better and better every year and I’m always excited when a new vintage rolls in!“ - Amy.

DOMAINE A.&P. DE VILLAINE “LA FORTUNE” 2017 $104 “Nothing is more difficult than simplicity” – Aubert De Villaine “If you co-owned a domaine that has some of the world’s most sought after and expensive wines, would you rest on your laurels or would you start a new project? If you’re Aubert de Villaine you start a new project. A co-owner of Domaine de la Romanée-Conti, Aubert is still just a vigneron at heart. Together with his nephew, Pierre de Benoist, Domaine A.&P. de Villaine is producing wines that over deliver. I often get asked for hidden gems on the list, and this is one of them. “- Amy

Jean Foillard, part of the famous “Gang of Four” is producing some of the top Beaujolais in the market. A traditionalist, he focuses on expressing the terroir and creating rustic wines with minerality and spice. Beaujolais might be the perfect pairing for all of your Autumn feasts, but this is a year-round wine that will only get better with age.” -Michelle

DOMAINE PARPETTE “LE PLOMB” CÔTE-RÔTIE 2016 $150 “Once you taste the wine, you’ll find it very hard to believe Cédric Parpette was more into cars then he was wine. Not that the two can’t exist together, but the elegance and beauty of his wines would make you think he’s been a winemaker his whole life, and not a previous auto mechanic. These Rôties have all the power and finesse of their famous neighbor Guigal, without the price tag. Is this your first time visiting the Northern Rhône? Start with the “Le Plomb” and see what it’s all about. You’ll be so happy you did.” –Amy

The actual château has resided in the village of Gigondas since 1416. Wine is so much more than what is in the glass, it’s about family and history. People sometimes refer to Gigondas as Châteauneuf-du-Pape’s little brother. Yeah… okay. If that’s the truth, Châteauneuf-du-Pape’s little brother can be compared to that rugged, brooding type of man that women swoon over. Or maybe that’s just me. “ – Amy

RÉSERVE DE LA COMTESSE, PAUILLAC 2015 $175 “Réserve de la Comtesse is the second wine from Château Pichon-Longueville Comtesse de Lalande a second growth from Pauillac. With vineyards adjoining Château Latour, a first growth, it’s easy to see why this wine is serious in its own right. Having all of the hallmarks of a Pauillac, dark fruits, cedar, and pencil lead, the Réserve de la Comtesse is graceful and pure; but behind that purity is a definite swagger. Layers of cassis, blackberry, black cherry and chocolate are supported by a perfect balance of acidity and fine-grained tannins. -Amy

“California owes the success of "King Cabernet" to this region, which has been producing world renowned wines since the late 12th century. Benchmark red blends like Opus One based their formula on grape blends and techniques learned from the great producers of Bordeaux. Looking to explore Bordeaux wines? Start with a young Pomerol, with plush fruit and a more polished finish thanks to a little more Merlot in the blend. The true pinnacle of elegance is found in a well- aged bottle with earthy subtleties, super sexy mouthfeel, and ethereal flavors. We've had the pleasure of uncorking examples from as far back as 1874 - chat with a captain to hear why these magnificent wines can truly stand the test of time!” –T.J.

QUINTARELLI VALPOLICELLA SUPERIORE 2011 $250 “I can’t think about the Veneto without Giuseppe Quintarelli coming to mind. Known as the Godfather of Amarone, his wines are a true work of art. Although he passed away in 2012 at the age of 84, his legacy continues with his family. The details are paramount, from the handwritten labels, the quality of the corks, to the time and patience it takes for the wine to develop. It’s such an honor being able to have these wines on the list. Every time I sell a bottle, I get a little bit sad. It’s human nature to want to hang on to beautiful things and I am no different. These wines are true masterpieces”-Amy

“Wine geeks and aficionados alike often talk about a wine's structure when pairing with food. Flavor profiles of wine are up for debate (do you smell red cherries or raspberries?!?), but structure is not. Wine contains physical compounds like acids, tannins, and sugars that chemically react with food. Barolo typically has high levels of acid and tannin, which bind with the proteins in steak and soften the wine's profile while enhancing the mouthfeel of the steak. Aged Barolo with a rich ribeye - sublime! Add some truffles and experience true meaty ecstasy. Science has never been so delicious!” – T.J.

CASTELLARE CHIANTI CLASSICO 2018 $68 “Italian wine went through a Renaissance back in the early 70’s, transitioning from the table wine in straw bottles to the sublime, transcendent and majestic wine that it is today. At the forefront was Paolo Panerai, who intiated the union of four wine estates; Castellare, Caselle, San Niccolò, and Le Case. Walking that fine balance between tradition and innovation, Castellare di Castellina was able to help bring Italian wine into the future. I love this wine, it’s lush, rich and balanced. This is one of my crowd pleasers that I suggest when no one can agree on anything. By the end of their 2nd bottle, their cares and disagreements are usually a thing of the past.”- Amy

FINCA ALLENDE “MINGORTIZ”, RIOJA 2015 $185 “Considered to be Spain’s first Terroirist (sorry T.J.), Miguel Ángel de Gregorio, founded Finca Allende in Rioja Alta with the intent to craft specific terroir driven wines. With a sincere dedication to creating the perfect Rioja expression, Miguel Ángel practices natural farming; plowing vinyards by mule, hand harvesting and triple sorting. Gaminde and Mingortiz are two single vineyard wines that best express his dedication and hardwork. Gaminde, planted in 1942 is rich and lush while Mingortiz, planted in 1964 is high toned and more delicate. May I recommend Mingortiz with your first course and Gaminde with your second? “ - Michelle

KEEP AUSTRALIA SEXY!!!
“Whatever you do, don’t google “Sexy Kangaroo”. I got the photo I wanted (see above) but now some things just can’t be unseen. In my defense, I needed a photo and a theme that might stop you in your tracks. Just look at those sexy beasts!! They need our help. We all know of the devastation that has hit the wildlife in Australia. They are still recovering and they still need our help. May I recommend drinking all things Australian?!? Supporting the wine economy, may seem like a small action, but it’s the small actions that help the most. Drink Australia people…. And help keep it sexy!” Amy

CABERNET FRANC DAMA 2015 $140 “After a long week of running the wine program, I usually like to open up a bottle of wine and do some painting on Sunday nights. I’m not an artist. I just need to get out of my head sometimes. Mary Derby, the co-owner and wine maker for DaMa wines, saw my painting on Facebook and decided to use it for her Cabernet Franc label…. Such an incredible honor. Mary is the winemaker and co-owner of DaMa wine and she is the real deal. She might be one of the original female pioneers of Washington wine, but you wouldn’t know it by her unassuming demeaner and mischevious smile. Each of her wines features a work by a female artist on the label. A lover of the arts and an incredible wine maker, Mary is an inspiration. ” -Amy

RÔTIE CELLARS NORTHERN BLEND SYRAH, WALLA WALLA 2015 $135 “Old World Wines made from New World Vines”. That is an absolute perfect way to describe what Rôtie Cellars is accomplishing in Walla Walla. I love all of the wine that is coming out of Washington these days, but for me, the syrah’s are singing. The Northen Blend is 94% Syrah and 6% Viognier and it’s smooth like buttah people. Coming from the Rocks District in Walla Walla, this wine is lush, with loads of red fruits, blood oranges, and smoked meats. Perfectly balanced and ready to be enjoyed. Pairs well with wood grilled steaks, and rainy days” -Amy

ANTICA TERRA BOTANICA 2017 $245 “Maggie Harrison worked for nine amazing vintages under the tutelage of Elaine and Manfred Krankl of Sine Qua Non. In 2005 she was asked to become the winemaker at Antica Terra, she emphatically refused but was persuaded to take a look at the vineyard and offer her opinion about the site. She reluctantly agreed. Twenty-six seconds after arriving among the oaks, fossils, and stunted vines, she found herself hunched beneath one of the trees, phone in hand, explaining to her husband that they would be moving to Oregon.”-Frankie

“Tucked away in the Eola Hills of Willamette Valley, Cristom produces true expressions of Pinot Noir. Cristom is hallmarked by organic/biodynamic farming practices, and a minimalist approach during the winemaking process. The four estate vineyards (named for the Gerri Family matriarchs) each possess natural variations of soil, elevation, and exposition. They age miraculously and should not be missed, especially by lovers of world class Pinot Noir”. -Michael

CARPENTER LA TACHE CLONE, SONOMA COAST 2014 $150
“I met Laura Carpenter and her husband Jake Hawkes when I went to The Alexander Valley Cabernet Camp. (Jake Hawkes makes a killer Cabernet as well.) I certainly wasn’t expecting to find a Pinot Noir that would rock my wine world….. but that’s what happened. Her husband, Jake, is the wine maker while Laura manages the business. I immediately snagged 5 cases each of the Pommard Clone and La Tâche Clone for the restaurant and good thing I did, because they are now sold out. Just like Maple & Ash, these wines are sexy as hell. Here’s my recommendation… start with a Carpenter Pinot and end with a Hawkes Cabernet. Amy

PEAY VINEYARDS POMARIUM 2017 $145
“Andy really did say it best. “To the south, far in the distance, I could see vineyards renowned for Pinot noir and Chardonnay. But no one had grown grapes this far northwest in Sonoma County. It was too cold. And god-forsakenly remote! Right here, this was frontier land. It was breath taking.” As you get further up the coast of Sonoma, into the mountains and close to the Pacific Ocean, it can get cold, foggy and a bit rugged by valley floor standards. Pretty damn perfect for Pinot Noir if you ask me. Pomarium is plush, rich and savory, While Scallop Shelf is more aromatic and high toned. Want a little more complexity and earth in your wine? Go for the 2007!” - Amy

CHATEAU MONTELENA, NAPA VALLEY 2018 $165 “Last week in Paris, at a formal wine tasting organized by Spurrier, the un-thinkable happened; California defeated all Gaul. The four winning whites were, in order, Chateau Montelena ’73 from Napa, French Meursault-Charmes ’73 and two other Californians, Chalone ’74 from Monterey County and Napa’s Spring Mountain ’73. The U.S. winners are little known to wine lovers, since they are short in supply even in California and rather expensive ($6 plus). Jim Barrett, Montelena’s General Manager and part owner said: “Not bad for kids from the sticks.”

"In October 1971 my wife Barbara and I drove up to Mayacamas Winery on a beautiful, sunny autumn day and set about picking Cabernet Sauvignon grapes as volunteers for the Mayacamas annual ‘Old Vine Cabernet Harvest Party’. It got quite warm by mid-day and we had worked our way down to just a Tee shirt and Jeans for each of us when Noni Travers, wife of owner and winemaker Bob Travers, came out to the vineyards with a tray of sandwiches and a tub of cold beer. There was a dozen of us, and we sat down in the dirt, surrounded by grapevines loaded with ripe grapes, and began to devour our lunch. Off in the distance you could see the skyline of San Francisco against a beautiful blue sky and that bright yellow sun. It was the most beautiful sight I could recall ever having seen, and I remarked to Barbara how great it would be to move up here and find jobs. Maybe even one day we could start our own winery. I went to work there in January 1972."-Bruce Neyers

LAMBORN FAMILY VINEYARDS 2016 $235 “When Mike Lamborn first showed up at Maple & Ash one afternoon, I must admit I was a little skeptical. Napa royalty, Heidi Barrett, was his winemaker? Riiiiiiiight. Lamborn? Never heard of it. I know, I know, I was a jerk. I love being proven wrong though (only in this situation) and man was I WRONG. Mike Lamborn and Heidi Barrett are making some absolutely stunning under the radar, Howell Mountain cabernet’s. While I couldn’t get a lot of back vintages and will most likely not be able to get any in the future, it’s truly an honor to be able to have these wines on the list. As a side note, Mike had the absolute best “Napa Gossip”… maybe we should get him out here for a little wine and conversation in the near future?” - Amy

GRGICH HILLS, NAPA VALLEY 2017 $110 “In 1973, Miljenko ‘Mike” Grgich was simply a hardworking wine maker crafting that vintage’s chardonnay. In 1976, that chardonnay was pronounced the best in the world at the 1976 Paris tasting. In 1977, Mike founded Grgich Hills. In 2008 he was inducted into the Vitners Hall of Fame for his contribution to the world of wine. What a timeline! With his signature blue beret, Miljenko remains humble despite his mark on wine history. ‘Every day do your best, learn something new and make a new friend’-Mike Grgich. Beautiful advice. “-Amy

ARGENTINA MALBEC
CATENA ZAPATA ARGENTINO 2015 $250 “Ten Centuries of Life, Death and Rebirth in a bottle. While Argentina has claimed Malbec for its own, it’s journey there has a long and rich history. The wine label for Argentino tries to tell that story through four women. Eleanor of Aquitaine represents the birth of Malbec in France. The immigrant tells the story of the journey to the new world and the unknown. Phylloxera personifies the death of Malbec in the old world and finally Adrianna Catena depicts the birth and motherhood of Malbec in the New World. A beautiful label, a fascinating story and an extraordinary wine!” - Michelle

MEET THE MAPLE & ASH WINE TEAM
AMY MUNDWILER - Wine Director
“My passion for wine started with a glass of cabernet franc from Chinon. I had just come off of a 15-year retail management career and was feeling a bit lost. After spending 6 weeks in Spain traveling around the country, I decided to get a serving job until I decided what I wanted to do with my life. I had always had a passion for the rituals and history behind food and wine. Spain intensified that. I was hired at a little wine bar that happened to serve a cabernet franc by the glass. Cab franc hadn't been in my wheelhouse and it really was an ah-ha moment for me. I grabbed a copy of The Wine Bible, an empty wine glass and I got to work studying and tasting. 6 years and 3 restaurants later, Belinda Chang gave me the opportunity to be her assistant wine director here at Maple & Ash. 9 months later, I was the Wine Director. It's been a seriously wild ride. Outside of wine, I sing a little jazz around the house, paint and have deep philosophical conversations with my 2 cats, Gigondas and Louis Armstrong,
MICHELLE CRABTREE - Assistant Wine Director
“I come from humble beginnings of working in a, small town Italian restaurant, where the only wine served was Chianti, Pinot Grigio and White Zinfandel. Many horrible hangovers later, my love for drinking wine grew past my humble beginnings. I have worked in over 30 restaurants (almost more than I care to admit) I went through my “I only drink Merlot” stage to graduating to drinking all things Italian when I worked at Osteria Langhe here in Chicago. My Heart lies in Italy!!!! I LOVE Champagne as well, and love to host a great brunch where plenty is served and enjoyed! Beyond wine my greatest loves in life are my son Conal, my mom and my niece Josie.
MIKE LOVEISKY - “Doc Love”
“Musician with a finance degree, night owl by nature, and lover of all things wine & food. I was raised in the Northwest suburbs of Chicago and come from a large family with five siblings. My first job in a restaurant was as a bus boy in a small family owned wine bar; I was 19. I knew nothing about wine at the time, but very quickly became consumed by it. My quintessential “Ah-Ha!” moment was a bottle of 2003 Freemark Abbey Sycamore Vineyards. What started out as a hobby turned into a passion, and somehow years later, into a career. My father raised me on The Beatles and America’s Pastime. So, in the words of the Great Bambino “Remember kid, there’s heroes and there’s legends. Heroes get remembered but legends never die, follow your heart kid, and you’ll never go wrong.”
TJ BOZEK - “The Professor”
“I found myself in the restaurant business as a means to put myself through college, and more than 22 years later, I’m still here and having more fun with it than ever. When I’m not thinking about food and drink, I like to be outside (especially if it involves disc golf), Chicago sports, and traveling around the world with my girl. I’m a big science nerd at heart and naturally got more curious about wine the more time I spent around it. However, my moment of flavor revelation came back in 2004 while tasting food and beer together during a training for a new restaurant opening. Somehow, some way, the flavors perfectly mingled to create something memorable enough to recall in detail all these years later. I may have missed out on a lot of great foods and wines from being a picky eater as a kid (and oldest of 5), but I’m all about making up for lost time! If you like exploring new wines or getting nerdy about them, I’m your guy.”
