WELCOME

BOTTLE AND WINE GLASS ON TABLE by Pablo Picasso

In 1912, artist George Braque created the first Cubist Paper Collé by gluing strips of wood- grained wall paper to a drawing. As the way art is, another artist drew inspiration from the idea. Pablo Picasso created ‘Bottle and Wine Glass on Table’ in 1912 using charcoal, ink, graphite and cut newspaper.

Like the art you see in a museum, is an art that is passed on generation after generation. Some generations stay true year after year honoring the style their family has honed for decades. Some leave the nest and take what they’ve learned to create their own style. Others take tradition and find ways to stay true but also innovate. Either way, it brings me great pleasure to be able to bring their art and lifes work to Maple & Ash.

Curating a wine list is a treasure hunt that never ends. Sometimes I’m able to find 6 bottles of something rare and wonderful. Sometimes I can only find 1. If you’ve stumbled upon a wine that you are excited about and anticipate needing more than 1-2 bottles, please ask for a Wine Captain and we’ll be happy to search the cellar for every last bottle we can find.

Bawdy at times, serious the next, you don’t know what’s going to come out of his mouth at any given moment. Patrick worked under Olivier Leflaive for 4 years honing his craft and diving deep into the appellations of Chablis. After a stint with Verget, and 3 years with Brocard, he was ready to start his own winery. Patrick believes that the true personality of Chablis is found in the acidity and minerality. Much like Patrick Piuze himself, there is an honesty to them, that I absolutely love.”- Amy

“I met Laura Carpenter and her husband Jake Hawkes when I went to The Alexander Valley Cabernet Camp. (Jake Hawkes makes a killer Cabernet as well.) I certainly wasn’t expecting to find a Pinot Noir that would rock my wine world….. but that’s what happened. Her husband, Jake, is the wine maker while Laura manages the business. I immediately snagged 5 cases each of the Pommard Clone and La Tâche Clone for the restaurant and good thing I did, because they are now sold out. Just like Maple & Ash, these wines are sexy as hell. CHATEAU MONTELENA, NAPA VALLEY 2018 $165 “Last week in Paris, at a formal wine tasting organized by Spurrier, the un-thinkable happened; California defeated all Gaul. The four winning whites were, in order, Chateau Montelena ’73 from Napa, French Meursault-Charmes ’73 and two other Californians, Chalone ’74 from Monterey County and Napa’s Spring Mountain ’73. The U.S. winners are little known to wine lovers, since they are short in supply even in California and rather expensive ($6 plus). Jim Barrett, Montelena’s General Manager and part owner said: “Not bad for kids from the sticks.”

"In October 1971 my wife Barbara and I drove up to Mayacamas Winery on a beautiful, sunny autumn day and set about picking Cabernet Sauvignon grapes as volunteers for the Mayacamas annual ‘Old Vine Cabernet Harvest Party’. It got quite warm by mid-day and we had worked our way down to just a Tee shirt and Jeans for each of us when Noni Travers, wife of owner and winemaker Bob Travers, came out to the vineyards with a tray of sandwiches and a tub of cold beer. There was a dozen of us, and we sat down in the dirt, surrounded by grapevines loaded with ripe grapes, and began to devour our lunch. Off in the distance you could see the skyline of San Francisco against a beautiful blue sky and that bright yellow sun. It was the most beautiful sight I could recall ever having seen, and I remarked to Barbara how great it would be to move up here and find jobs. Maybe even one day we could start our own winery. LAMBORN FAMILY VINEYARDS 2016 $235 “When Mike Lamborn first showed up at Maple & Ash one afternoon, I must admit I was a little skeptical. Napa royalty, Heidi Barrett, was his winemaker? Riiiiiiiight. Lamborn? Never heard of it. I know, I know, I was a jerk. I love being proven wrong though (only in this situation) and man was I WRONG. Mike Lamborn and Heidi Barrett are making some absolutely stunning under the radar, Howell Mountain cabernet’s. While I couldn’t get a lot of back vintages and will most likely not be able to get any in the future, it’s truly an honor to be able to have these wines on the list. As a side note, Mike had the absolute best “Napa Gossip”… maybe we should get him out here for a little wine and conversation in the near future?” - Amy

MEET THE MAPLE & ASH WINE TEAM

AMY MUNDWILER - Wine Director

“My passion for wine started with a glass of cabernet franc from Chinon. I had just come off of a 15-year retail management career and was feeling a bit lost. After spending 6 weeks in Spain traveling around the country, I decided to get a serving job until I decided what I wanted to do with my life. I had always had a passion for the rituals and history behind food and wine. Spain intensified that. I was hired at a little wine bar that happened to serve a cabernet franc by the glass. Cab franc hadn't been in my wheelhouse and it really was an ah-ha moment for me. I grabbed a copy of The Wine Bible, an empty wine glass and I got to work studying and tasting. 6 years and 3 restaurants later, Belinda Chang gave me the opportunity to be her assistant wine director here at Maple & Ash. 9 months later, I was the Wine Director. It's been a seriously wild ride. Outside of wine, I sing a little jazz around the house, paint and have deep philosophical conversations with my 2 cats, Gigondas and Louis Armstrong,

MICHELLE CRABTREE - Assistant Wine Director

“I come from humble beginnings of working in a, small town Italian restaurant, where the only wine served was Chianti, Pinot Grigio and White Zinfandel. Many horrible hangovers later, my love for drinking wine grew past my humble beginnings. I have worked in over 30 restaurants (almost more than I care to admit) I went through my “I only drink Merlot” stage to graduating to drinking all things Italian when I worked at Osteria Langhe here in Chicago. My Heart lies in Italy!!!! I LOVE Champagne as well, and love to host a great brunch where plenty is served and enjoyed! Beyond wine my greatest loves in life are my son Conal, my mom and my niece Josie.

MIKE LOVEISKY - “Doc Love”

“Musician with a finance degree, night owl by nature, and lover of all things wine & food. I was raised in the Northwest suburbs of Chicago and come from a large family with five siblings. My first job in a restaurant was as a bus boy in a small family owned wine bar; I was 19. I knew nothing about wine at the time, but very quickly became consumed by it. My quintessential “Ah-Ha!” moment was a bottle of 2003 Freemark Abbey Sycamore Vineyards. What started out as a hobby turned into a passion, and somehow years later, into a career. My father raised me on The Beatles and America’s Pastime. So, in the words of the Great Bambino “Remember kid, there’s heroes and there’s legends. Heroes get remembered but legends never die, follow your heart kid, and you’ll never go wrong.”

TJ BOZEK - “The Professor”

“I found myself in the restaurant business as a means to put myself through college, and more than 22 years later, I’m still here and having more fun with it than ever. When I’m not thinking about food and drink, I like to be outside (especially if it involves disc golf), Chicago sports, and traveling around the world with my girl. I’m a big science nerd at heart and naturally got more curious about wine the more time I spent around it. However, my moment of flavor revelation came back in 2004 while tasting food and beer together during a training for a new restaurant opening. Somehow, some way, the flavors perfectly mingled to create something memorable enough to recall in detail all these years later. I may have missed out on a lot of great foods and wines from being a picky eater as a kid (and oldest of 5), but I’m all about making up for lost time! If you like exploring new wines or getting nerdy about them, I’m your guy.”
