His establishment closed shortly thereafter as the result of a lawsuit brought by a guild whose member claimed that Boulanger was infring- ing on their exclusive right to sell prepared dishes. Boulanger triumphed in court and later reopened. Boulanger’s establishment differed from the inns and taverns that has existed throughout Europe for centuries.
