MESSAGE FROM THE PRESIDENT b y A n d r e a Z a r a t t i n i

Cari Amici,

Antonella Castaldo Silvia Arnone Metzger Victor Laruccia Dear Friends,

The language courses are proceeding very well and we are all preparing for the new quarter which as usual will propose new courses. After many years we will resume offering courses for children! Yes, in this way we will give parents the opportunity to go shopping at the “Little Italy Farmers Market” or enjoy a good cappuccino while their son or daughter learns or perfects the Italian language. I sincerely thank all those who in recent years have helped to keep up the quality of our courses and all the students who have always trusted us.

Our workshops and events, which often could not accommodate all those interested in participating, were very successful. Perhaps not everyone knows or remembers that last year the ICC together with friends Stefano Ceresoli (Piazza 1909), Mario Cassineri (Founder and Chef of Bice and now culinary director of Blade 1936) and Marcello Avitabile (Buona Forchetta) ) organized two charity dinners raising around $ 17,000. Our donations have been divided between the Municipality of Montemonaco and the Ristorante il Tiglio. Over $10,000 has been donated to the Montemonaco City Council for the purpose of securing a building to be used as a primary school. At the Ristorante Tiglio di Montemonaco, the donation was designated to reconstruct the restaurant that had been badly damaged by the earthquake and no longer usable. After much bureaucracy the work is finally starting. I will keep you updated as to the completed work.

Unfortunately, our newsletter will be forced to take a break. I will try to do my best to republish it as soon as possible and keep in touch with all of you.

Andrea Zarattini - ICC President

ITALIAN FOOD IS UNDENIABLY THE MOST POPULAR IN THE WORLD AND BOLOGNA IS UNDOUBTEDLY ONE OF ITALY’S GASTRONOMIC CAPITALS, IF NOT THE CAPITAL. BOLOGNA IS A FOODIE’S PARADISE AND OFFERS AN INCREDIBLE ARRAY OF ITALIAN SPECIALTIES SURE TO PLEASE ANY PALATE. MEAT-FILLED TORTELLINI, TORTELLONI, LASAGNA AND TAGLIATELLE AL RAGÙ RULE THE LOCAL CULINARY DNA. LARD-DOTTED MORTADELLA ALSO BELONGS TO BOLOGNA.

Bologna, Bononia, Felsina, Bologna the fat, the learned, the red. Bologna, the capital of Italy's northern region Emilia Romagna, is known for these three curious nicknames: the red, the fat, and the learned. The red because Bologna was the anti-fascist capital during the Second World War. The fat for its cuisine and the learned because Bologna’s university - whose Latin name, Alma Mater Studiorum, means “nourishing mother of studies” is the oldest continuously operating university in the western world.

Bologna is also known with another nickname “la turrita”, meaning “the city with many towers”. It’s estimated that, between the 12th and 13th centuries, Bologna had as many as 180 towers, built by the wealthiest local families both as a symbol of their power and as a defense system during the bloody wars between the Guelphs and the Ghibellines, factions supporting the Pope and the Holy Roman Emperor, respectively. Over the centuries, many towers were severed or torn down, others collapsed; only 24 remain today, and often are not clearly visible, sometimes Bologna is also known with another almost disguised between two buildings, or nickname “la turrita”, meaning “the city much shorter than what they used to be. with many towers”. With all of the heat we’ve been having in San Ingredients: Diego, I wanted to share with you a classic and

cool dessert to impress your guests, that does not 6 egg yolks require any cooking! My hope is that this dessert 3 tablespoons sugar will “pick you up” and give you some energy on a 1 pound mascarpone cheese hot day! Tiramisu needs to be made one to two 1 1/2 cups espresso, cooled days before serving, so you can make it ahead of 24 packaged savoiardi ladyfinger time, which means you’ll have less to do the day cookies (crispy) of entertaining. It is pretty expensive to buy, so Cocoa powder try your hand at this simple recipe that I know you’ll love! Last month I taught this dish during my kid’s Italian cooking class at the ICC, and the kids each made their own tiramisu to take home. Buon appetito!

In a large bowl, using an electric mixer with whisk attachment, beat egg yolks and sugar until thick and pale, about 5 minutes. Add mascarpone cheese and beat until smooth. In a small shallow dish, add remaining espresso. Dip each ladyfinger into espresso for only 5 seconds. Letting the ladyfingers soak too long will cause them to fall apart. Place the soaked ladyfingers on the bottom of a 13 by 9 inch baking dish, breaking them in half if necessary in order to fit the bottom. Spread evenly 1/2 of the mascarpone mixture over the ladyfingers. Arrange another layer of soaked ladyfingers and top with remaining mascarpone mixture. Sift cocoa powder over the top, to cover entire surface. Cover tiramisu with plastic wrap and refrigerate overnight, or for about 8 hours. Cut into squares. Serves 8 to 10.
