Paul Rankin BIOGRAPHY Paul Rankin BIOGRAPHY Paul Rankin changed the face of culinary Northern Ireland when he opened Roscoff, the restaurant that was to become the first to win a Michelin Star in the country. In 2018, Paul moved to Scotland and became the Chef/Patron of the famous Stein Inn, in Waternish, Isle of Skye in the Hebrides. Paul is best known for being one of the longest standing and most successful chefs on Ready Steady Cook which regularly pulled in nearly 3 million viewers. Since 2011 Paul has presented Paul and Nick’s Big Food Trip, with fellow chef Nick Nairn, traveling around the coasts of Northern Ireland and Scotland by boat to explore their Ulster-Scots culinary heritage. The third and fourth series were filmed in the USA, following the trail of Ulster-Scots settlers who sailed to the New World three hundred years ago. Paul and Nick’s Big American Food Trip was shown on UTV and STV as well as internationally including on Asian Food Channel and Canada’s GustoTV. The fifth series, Paul and Nick’s Big Canadian Food Trip, aired in March 2017 on UTV in Northern Ireland and STV in Scotland. He has also appeared on Step up to the Plate (BBC1), Local Food Heroes (UKTV), Saturday Kitchen (BBC1), Ten Mile Menu (ITV1), and Celebrity X Factor (ITV1) as one of ‘The Chefs’; the group were so popular that they made it to the final stages of the competition. Paul has had several of his own series, including The Rankin Challenge, which won two coveted Glenfiddich awards, and Gourmet Ireland (BBC1) which was also transmitted on the PBS network in the USA and the accompanying book was published by KQED (USA). The series has also been sold to SBS in Australia, TVB in Hong Kong, TVNZ Pacific and TV2 in New Zealand, and CBET Windsor in Canada. In 2013 Paul appeared in Chefs: Put Your Menu Where Your Mouth Is, and on BBC One’s Pointless Celebrities in 2014 and 2015. In 2014 he appeared in three episodes of Win It Cook It on Channel 4, and as a panellist on BBC Two’s The Great British Bake Off: An Extra Slice. He is a regular guest chef on BBC One’s Saturday Kitchen. As a successful cookery author, Paul’s books include New Irish Cookery, Dublin Dining, Hot Food, Gourmet Ireland, and Gourmet Ireland Two, as well as contributions to books for BBC programmes Ready Steady Cook, and Saturday Kitchen. In 2005 he was asked to overhaul the menus at a Belfast care home for the elderly and his enthusiasm for this cause has led to him addressing conferences and events for care industry professionals and a Tonight with Trevor McDonald special programme for ITV1 in which Paul was heavily featured. Paul is an ambassador and consultant for Sodexo’s education programme, inspiring healthy eating and cookery skills among children in UK schools. Paul has a range of traditional Irish breads ‘Rankin Selection’ www.rankinselection.com, launched in 2002 through a partnership with Irwin’s Bakery. The phenomenal success of the breads in UK supermarkets inspired Paul to develop the brand further, and in 2004 he launched an Irish sausage range, expanding it with partner company Finnebrogue in 2009, and winning a Great Taste Gold award in 2010. • Db Eats: Skylon
3/22/2019 db Eats: Skylon DB EATS: SKYLON 11th March, 2019 by Lauren Eads db heads to Skylon on London’s Southbank to test-drive its new menu, devised by Finnish-born chef Helena Puolakka, gorging on cured salmon on rye, fresh pappardelle in a smoked tomato sauce with creamy goat’s cheese and a heavenly chocolate tart. Steak tartare The concept: Skylon is a riverside restaurant on London’s Southbank offering 180 degree views of the Thames from the first floor of the Royal Festival Hall and named after one of the original structures built for the 1951 Festival of Britain. With its touristfriendly location, it attracts a mixed crowd of theatregoers, tourists that pour in from nearby Waterloo and Londoners alike, but its fare is far from focused on entertaining the masses. Flying somewhat under the radar, a concise, clean and innovative menu, refreshed last month by incoming executive chef Helena Puolakka, awaits those in the know. A place to dine, no doubt, but one that also offers a spacious and buzzing bar, with excellent views to boot, for a liquid pitstop. Chef Helena Puolakka (a regular on Masterchef, Ready Steady Cook (Finland) and BBC’s Saturday Kitchen) took over as its new executive chef in September of last year. Her experience includes time spent at the three Michelinstarred restaurant Pierre Gagnaire at the Hotel Balzac, in Paris, and a stint at Pierre Koffmann’s three Michelin starred La Tante Claire in London. She joined D&D London in 2007 as executive chef at Skylon, where she stayed for six years.

Cooking Titles Spring 2020 {IPG} The Philosophy of Tea Tony Gebely Summary How did drinking the infusions of a unique plant from China become a vital part of everyday life? This gift book presents an entertaining and illuminating introduction to the history and culture of tea, from its origins in the Far East to the flavors and properties of different varieties, and the rituals of tea preparation and drinking around the world. This simple hot beverage is suffused with artistic and religious overtones. The Chinese Ch'a Ching gave very precise guidelines to the preparation and sipping of tea, and the Japanese tea ceremony elevated it to an art form. Following its introduction to the royal court in the 17th century, the British created their own traditions, from the elaborate etiquette of afternoon tea to the humble pot of tea at the heart of family life, and the modern appreciation for specialty infusions. To: ASMI Board of Directors FROM: Hannah Lindoff, Alexa Tonkovich International Marketing Program RE: International Program report This report covers activities occurring in the second, third and fourth quarter of FY 13 (Oct. 2012-June 30, 3013) and provides a general update of International Program progress. Detailed, region-specific updates follow. The FY 14/15 Unified Export Strategy was completed and submitted to the Foreign Agricultural Service (FAS) on May 28th. The final FY 13/14 (July 1, 2013-June 30, 2014) budget maintains similar regional funding distributions as in FY 12/13, as approved by the International Marketing Committee, though most program budgets were reduced due to the consolidation of research funds under the “Global” designation. MAP funds were reduced slightly this year but have been offset by industry/State of AK funds to maintain funding 2012/13 levels. In December 2012, ASMI conducted a second trade mission to Brazil as a follow-up to the March 2012 mission. While progress has been slow due to the lengthy DIPOA process, significant quantities of Alaska product is now en-route to Brazil and should be available in the marketplace by the end of the summer. This timing is important as a key sales period in Brazil is “Fish Week” in early September. Despite hurdles, progress in this market is positive and Alaska exports are poised to register exponential growth in the market in the coming years. ASMI hosted major retail buyers from Brazil in Alaska this summer as well as DIPOA officials. We recently completed a China Program Evaluation. Mr.

Detailed, region- specific updates follow. The FY 14/15 Unified Export Strategy is in its final phases of completion and the bulk of it has already been uploaded online. The final submission deadline is May 28 and ASMI will easily meet this. The final FY 13/14 (July 1, 2013-June 30, 2014) budget was sent out to IMC members in early April and no comments or suggestions have been received. However, all committee members were supportive of maintaining similar regional funding distributions as in FY 12/13. For FY 13/14, proportions are consistent with FY 12/13 though most program budgets were reduced due to the consolidation of research funds under the “Global” designation. MAP funds were reduced slightly this year but have been offset by industry/State of AK funds to maintain funding 2012/13 levels.
