Starting from a framing of the culinary and gastronomic industry within the sector of the Creative industries, literature from the fields of National cultures, organizational translation and legitimization and identity is reviewed, in order to give this study a solid theoretical foundation. Through the elaboration of cross-cultural studies from the perspective of Denmark and Italy, insights into the two national cultures are gained, useful for drawing practical managerial considerations. This study has a qualitative nature. The sources of empirical data are interviews and a survey. In one case also a field visit was performed. The interviews were performed with a semi-structured approach following the guidelines of the qualitative interview. The survey does not follow a quantitative approach. Through the interviews and analysis of cases, emerged the importance of maintaining a clear Nordic identity for New Nordic Cuisine in Italy. At the same time the Italian public thinks that an integration with Italian elements is needed in order to transpose successfully the Nordic cuisine.

Fast-paced diffusion was possible because NNC was conceived as an identity movement, triggered by active involvement of entrepreneurial leaders from the culinary profession, high-profile political supporters, legitimating scientists, disseminating media, and interpreting audiences. It was facilitated by three mechanisms: First, the use of an “empty” label, without a previous meaning in food, yet with positive connotations in other domains, allowed establishing a positive abstract notion open to interpretations and different practices. Second, the invitation for participation and financial support for innovative initiatives allowed for more actors and institutions to develop practices associated with the NNC label. Third, organized dissemination allowed the excitement and engagement with the new label to spread quickly.     FINOSE Evaluation report January 2021 2 Background FINOSE is a Nordic Health Technology Assessment (HTA) collaboration network between Finland, Norway and Sweden initiated in 2017 and established in 2018. The aims of the collaboration are to perform joint HTA assessments, gaining additional knowledge about the products, increasing quality of the assessment/s, as well as gaining insights in best practice and developing staff capacity. The collaborating agencies are Sweden’s Dental and Pharmaceutical Benefits Agency (TLV), the Norwegian Medicines Agency (NoMA) and the Finnish Medicines Agency (Fimea). The pilot stage of the collaboration ended in June 2020. In order to continue to explore ways to increase effectiveness and decrease administrative burden through the production of joint assessment reports across the Nordic countries, the three agencies Fimea, NoMA and TLV decided to prolong the FINOSE collaboration. Therefore, the Director Generals of each agency signed a new Memorandum of Understanding in June 2020. The collaboration under this Memorandum of Understanding will continue until 30 June 2023, with a possibility for extension if agreed by the involved parties. A flowchart of the assessment process is presented in Figure 1 below. Figure 1: FINOSE process The FINOSE collaboration network aims at (1): • Supporting timely and equal access to medical technologies • Gaining additional knowledge about the products • Increased efficiency in production of assessment reports • Less divergence in HTA methodologies and evidence requirements • Reduced complexity in industry submissions 3 Consequently, the collaboration is expected to result in reduced workload and time to market. During the first stage of the collaboration four workshops where held in order to assess and discuss different viewpoints on important topics related to Health technology assessments between NOMA, TLV and Fimea.

Ambassador Frijs-Madsen would like to say a very few words about his countryman, René Redzepi. JARL FRIJS-MADSEN: Thank you very much, Paul. You did a great job pronouncing my name, except my first name, which is “Yal,” but the rest of it was perfect. Ladies and gentlemen, it is a great pleasure to be here at the New York Public Library for an evening of Tasting Culture. Just thirty years ago, Copenhagen and the rest of Denmark had very few restaurants, and actually the food at those restaurants was really not worth eating. Today Copenhagen has twelve restaurants with Michelin stars, and this is one of the highest per capita anywhere in the world. The top star among these restaurants is, of course, Noma and their chef René Redzepi. I think that everyone who has had the pleasure of dining at Noma have their own little story to tell, and I have mine.
