2 INTRODUCTION

The Right Ingredients Apple Spice opened their first box lunch delivery and catering company in 1988. Founders Randy Clegg and Wayne Curtis rented a storefront from 88 year old Fritz Haertel. Known as the legendary “Rye King” of Salt Lake City, Fritz’s age had required him to downsize his bakery. During those early days, Fritz would hang around the ovens and mixing bowls, offering suggestions on the art of baking bread and imparting other culinary wisdom. In addition to baking tips, Fritz taught the value of hard work, honesty, and giving back to your community.

Our Unlike many national brands, who use par-baked bread full of added preservatives, our bread is made from scratch daily. The smell of hot dough baking in the oven permeates our kitchens each morning as our bakers use only the finest ingredients. It’s no wonder our bread has become so popular with customers all across America.

Don’t Forget The Cookie Our commitment to dessert is unwavering! Inside every box lunch you’ll find a delicious wrap or sandwich made with premium meats and cheeses on our famous 13-grain, sourdough, or honeywheat bread. Packaged neatly to its side is a side dish of your choice, a mint and a freshly baked cookie to complete the meal. We don’t judge if you eat the cookie first!

3 POLICIES AND PROCEDURES

Booking: To ensure a successful event, please reserve your date as soon as possible. All catering requires 1 day advanced notice, a minimum of 15 people, and does not include a gratuity. Cancellations require 24-hour notice. Less than 24-hour notice incurs a minimum 50% charge.

Guarantee Policy: In order to accurately prepare for the event, we ask that you (client) provide the guaranteed number of guests 24 hours before the scheduled event. Food quantities, service items and billings will be based on this number. We will make every effort to accommodate changes after this final count is set; however, we cannot guarantee availability of all items, and additional charges may apply.

Cancellation Policy: Any event can be canceled without charge up to 24 hours prior to the scheduled event date. Cancellations of less than 24 hours will incur a cancellation fee of 50% of the estimated total.

Inclement Weather Policy: If the University officially closes during adverse weather, or threat of impending inclement weather, the client will not incur any charges associated with their event. If the University remains open or has yet to officially close, but the client makes the decision to cancel their event for any weather-related reason, they will be re- quired to inform the caterer 48 hours in advance for groups of less than 100 & 72 hours in advance for group of more than 100, to avoid any charges. If the client does not cancel within the designated time period, they are subject to be billed at the caterer’s discretion based on costs incurred. All other scenarios will revert to the normal cancellation policy as stated in the menu.

Leftover Policy: In accordance with the Wake County Health Department recommendations regarding food health & safety, it is the McKimmon Center Policy that all leftover food remains the property of the caterer & cannot be re- moved from the catered event space by the client. This policy is intended to limit the risk of food borne illness due to improper handling or storage of leftover food items. All leftover food & drink will be disposed of by the caterer at the conclusion of the meal function.

Staff Allowance: Up to two hour of staff time allotted. Service charge of 18% if time exceeds two hours.

Service Pricing: All box lunches come with a five piece cuttlery pack, cookie, mint, and condiments. Apple Spice does not offer china or linen service at this time.

Alcoholic Beverages: Apple Spice does not offer alcohol service at McKimmon at this time.

Billing: A deposit is not required at time of order. All forms of credit cards are accepted. Customers are billed day of event prior to delviery. Sales tax is not included. Contract is not required at time of booking. Net 30.
