The nose, extremely elegant, at first reveals flavors of ripe red fruits that burst on the tongue, before gradually giving way to violets and lilacs. This generous wine offers an astonishingly long and subtle finish. It is extremely complex and is distinguished by great freshness. On the palate, strong notes of fruit recall the refined nose. Sommelier Snapshot: "The Punt" and why it is there... During second fermentation, which ultimately gives champagne it's bubbles, considerable pressure is built up inside the fragile glass wall of the bottle. The champagne bottle's prominent punt allowed for a more even distribution of pressure inside the bottle, preventing the disastrous explosions that were common for early champagne makers.

Varietals Grapes

Sommelier Snapshot: Different varieties of grape have differing aroma and flavor characteristics. Varietal character, however, while somewhat predictable, is not precise; variations occur, since virtually all vines are propagated by cloning. Some grape types are more prone to clonal variation, than others. The name of a particular varietal, therefore, should be considered a "surname" for vines that share a genetic history. Each varietal "family" may, in turn, include only a few or very many individual "sibling" clones, each with its own particular traits.

(1857) ..2012 - Gavi ,Principessa Gavia Banfi $40 From: Piedmont, Italy Grapes: 100% Tasting Notes: It begins with pleasant aromas of green apple, a little graphite minerality and a nice light floral component. The light-bodied wine tastes fresh, fruity and fun. Green apple, luscious lime and a little pear and grapefruit combine with a great texture and lively acidity to make a crisp and delicious wine. Sommelier Snapshot: In the 6th century, Principessa Gavia fell deeply in love with a soldier. Her father, Clodimir, King of the Franks, forbade their marriage, so the lovers eloped to a remote village in Northwestern Italy. Charmed by the local white wine, the newlyweds revealed their identity and were brought before the king. But when he discovered their happiness, he forgave the couple. The King blessed their union and named for his daughter, Gavia, both the village and its wine - Gavi.

(1698) ..2012 - Rodney Strong Pinot Noir $48 From: Sonoma, USA Tasting Notes: Soft and silky, with intriguing floral and crushed pomegranate aromas, this medium bodied wine was aged for nine months in small, French oak barrels which added a hint of toasty vanilla and spice complexity. Ideal for current enjoyment, this Pinot Noir will age nicely over the next two to four years. Score: Captain G. GGGG

(1660) ..2011 - Chateau St. Jean Pinot Noir $55 From: Sonoma, USA Tasting Notes: This full-bodied wine offers savory notes of leather, soy and even black tea which add complexity. The wine is well-balanced with well integrated tannins and a persistent core of fruit flavors that lend to the sumptuous, long finish.

(1662) ..2011 - Drouhin Oregon Pinot Noir $88 From: Oregon, USA Tasting Notes: Delicious, well-structured, well-balanced. On the nose and on the palate, with a touch more black cherry and black fruits than usual. As with 2010, the acidity is bright, and overall there is nice structure and very good length. (1666) ..2011 - Cooper Mountain Reserve Pinot Noir $60 From: Willamette Valley Oregon, USA Tasting Notes: Moderately light reddish-purple color in the glass. Very fruity, upfront nose offering aromas of strawberry, cherry, red fruit punch and sandalwood. A styled wine, with pleasant flavors of red fruits including red plum and a subtle hint of savory herbs. Mild, but evident tannins, with a bright finish. Score: Captain G. GGGG

Sommelier Snapshot: Typically grapes make medium to full-bodied wines with tannin structure ranging from medium-soft to firm. Dominate flavours associated with Sangiovese derived wines include: cherry, plum, strawberry, cinnamon and vanilla, the finish can range from elegant to bitter. Well-matched for the flavours of chicken, red meat, fish, lamb, pork, pastas, stews or well-aged cheeses. Excellent wine for Italian foods, especially with tomato-based sauces.

(1620) ..2010 - Siro Pacenti Rosso di Montalcino $70 From: Montalcino, Tuscany, Italy Grapes: Sangiovese Tasting Notes: The 2010 Rosso di Montalcino is sleek, perfumed and elegant. Freshly cut flowers, licorice, spices and red berries are woven together nicely in this articulate, finessed Rosso. Floral notes reappear to frame the suave finish. Score: Captain G. GGGG
