Its development over the centuries has led to an incredibly diverse wealth of regional traditions, dialects, music… and food! Ask for Spain’s finest dish and the proud Madrileños are sure to boast about their classic cocido. Repeat the question further north, in Asturias, and locals will go on for ages about the region’s fabada. Head to the Mediterranean, and the Valencianos cannot say enough about their world-famous paella. But how does one decide which dish is best? Later, the chickpeas and vegetables are served. Finally, the tender meat –pork belly, chorizo, black pudding and chicken– is dished out. Commissario Montalbano, created by Andrea Camilleri, makes a point of praising the true Sicilian cooking of his housekeeper while despising the cuisine from distant, albeit Mediterranean, Liguria as prepared by his fi anc é e. The hero of Petros Markaris’s detective novels, Inspector Costas Charitos, a Rum – that is, a Greek born in Istanbul – explores contact zones and frictions between the often overlapping cuisines of the two communities. The detective created by Manuel V á squez Mont á lban constantly describes local and national dishes from his country in vivid detail, and mirrors the tension between local, Catalan and national cuisine. Why should this be so if these attitudes did not speak immediately to everyone? In every culture, “foodways constitute an organized system, a language that – through its structure and components – conveys meaning and contributes to the organization of the natural and social world” (Counihan 1999 , 19).

XXXVI (2002) Overview A recent English translation of Ruperto de Nola’s 1520 Libre del Coch intrigued me. As a student of Iberian culture, I envisioned a small dinner party (6-8 people), perhaps noble couples gathering at their evening meal. What might they eat? How would it be prepared? I set out to conquer the translated yet unredacted recipes of this cookbook. The life of this particular cookbook is somewhat convoluted. The translator explains in her introduction: “The Libre del Coch was published in 1520 in Barcelona. It was written in Catalan -- a language related to, but distinct from, Spanish. The author, listed only as "Maestre Robert", identified himself as the cook to Ferrando (or Fernando), King of Naples. The book was extremely successful. It was republished four more times in Catalan, and ten times in Spanish, and 55 of its recipes were plagiarized by Diego Granado for his 1599 cookbook. The first Spanish edition, in 1525, entitled Libro de Cozina, called the author Ruperto de Nola. He has been referred to by that name ever since. The author's identity and nationality are still matters of speculation. He may well have been Catalan, since he wrote in that language. If "Nola" was truly his surname, he may have been an Italian, from the city of Nola in the province of Naples.

Like Agra, India, and the Taj Mahal, the Andalusian city of Granada in southern Spain is so well known for a single monument—the Alhambra, a walled fortress housing magnificent 13th- to 15th-century Moorish palaces and gardens—that the city itself is sometimes overlooked. With more than two million visitors descending on the Alhambra, a Unesco World Heritage site, every year, the city’s tourism industry had settled into a somewhat formulaic routine of shuttling visitors in and out of the city in about 24 hours. But recently, some other ancient structures have been restored, and the region’s distinc- tive gastronomy has come into its own. The city that was home to the poet Federico García Lorca, the painter José Guerrero, and the composer Manuel de Falla has deep cultural roots, but now a new crop of small foundations and independent exhibition spaces has revived its arty buzz. Let the Alhambra wait a bit while getting seduced by the city that has grown up around it. His Gastronomic Persona By Lucio Sorré BACKROUND As a wine person, ergo a food person (as wine and food are intimately related) afflicted by Columbus quincentennial fever, inquisitiveness prompted a look at what the Admiral of the Ocean Sea and his crews ate during the four voyages to the New World. The first logical source of information was his diary. It provided the scantiest of information. He wrote that two main meals were served daily, cooked on wood fires set in sand boxes. In addition, at the beginning of his third voyage to the New World, he noted that they stopped in Gomera, Canary Islands where "we stocked up on cheeses of which there is a good deal of good quality." Attention was then turned to the books written by Gianni Granzotto as well as Samuel Eliot Morison, his indefatigable and lucid biographer. Granzotto cast a light on the Admiral's family life and overall behavior while Morison carefully recorded life aboard the caravels, listed the victuals supplied to them, the daily dietary routine (or perhaps we ought to say the gobbling and swilling routine). No recipes, however. A check of food historians' literature only highlights Columbus' and other explorers' agricultural contributions to the larders of the old world with yams, potatoes, pineapple, peppers, cocoa, vanilla, papaya, squash, corn, tomatoes and the turkey, a bird unknown to Europe and Asia. It was not a one-way street, as the Old World rapidly introduced sheep, goats, cattle, pigs, olive and walnut trees, wheat, rice, cinnamon, cloves, peaches, apricots and oranges.

Remove tuna skin, wash and dice into 1-inch cubes and place on a plate. 2. Peel and chop onion and 1 clove of garlic. De-seed, wash and chop green bell pepper. 3. Heat a stockpot or a deep wide casserole with 3 tablespoons of olive oil. When warm add the chopped onion, garlic and pepper. Cook, stirring occasionally over medium heat for 15 minutes. 4. Peel and chunk potatoes (1,5 inches cubes). 5. Peel and grate tomato. Add to the stockpot and sauté for 3 - 4 minutes. Then turn off the heat, add 1 teaspoon of Spanish sweet paprika and stir to combine. 6. Place 1 clove of garlic (peeled), 1 bunch of fresh parsley and 1 teaspoon of salt. Use a pestle to grind. 7. Add bay leaves, potato chunks, fish stock and the mixture from the mortar to the stockpot or casserole (place 1 cup of fish stock to the mortar with the mixture and then add the dissolution to the stockpot). 8.
