Intro

It is with great pleasure that we welcome you to the International Cabernet Symposium.

Many people have made the observation that no organization or symposium has existed to provide for the exchange of viticultural and enological information among the producers of the world. In today’s changing and challenging world, the greatest error that we can make is to assume that there is no need to share information. In fact today, more than ever, we must work together to share ideas and best practices.

Th e International Cabernet Symposium has been designed to provide an intimate environment where viticulturists and winemakers can present their work and discuss their styles and philosophies. We are extremely appreciative of all those who have agreed to participate on a panel, make presentations, or host us at their wineries. However, the audience is equally essential to the success of the symposium. We encourage you to actively participate throughout the entire program – asking questions and presenting your ideas, philosophies and wines.

We hope that you will appreciate the program and feel at the end of the week that the symposium has met your expectations.

Paul Draper Winemaker, chief executive officer, Ridge Vineyards

Paul Draper is chief executive offi cer and winemaker with Eric Baugher and John Olney at Ridge Vineyards. He grew up on an eighty-acre farm in the Chicago suburb of Barrington, Illinois. Aft er attending the Choate School in Wallingford, Connecticut, Paul received a degree in philosophy from Stanford University. He lived in northern Italy for several years, and spent a year studying at the Sorbonne in Paris. Paul traveled extensively in France, gaining practical experience in traditional winemaking. In the mid-sixties, with a close friend, he set up a small winery in the coast range of Chile and produced several vintages of Cabernet Sauvignon from old non-irrigated vineyards.

Paul joined Ridge in 1969 to work with the cooler climate and lime stone soils of the Monte Bello vineyard on the hills atop the Peninsula. Th e vineyard is planted to the Bordeaux varieties and a limited amount of Chardonnay. At Ridge he also discovered old vine from vineyards in Sonoma and became a pioneer in the production of long-lived, complex wines from that varietal.

Philosophy

Draper believes fervently in single-vineyard winemaking and has sought out those vineyard sites where the wines “make themselves” in terms of balance and distinctive character. For Draper, the vintner’s role is that of guiding a natural process, not “making” the wine as in an industrial process.

Decisions on harvest, fermentation, barrel aging and bottling, are determined by tasting, not by recipe or production schedule.

Andy Erickson Winemaker, Screaming Eagle and Dalla Valle Vineyards

Andy Erickson has lived and worked in the Napa Valley since 1994. Th at year, Andy left life in San Francisco to pursue a dream of growing grapes and making wine. Aft er the harvest of 1994 at Stag’s Leap Wine Cellars, he worked under John Kongsgaard at Newton Vineyard. Following three years of marketing wine barrels for Seguin Moreau, France’s leading cooperage, Andy went to UC Davis to study enology, at the same time working with Spottswoode and Saintsbury wineries. Immediately aft er receiving his graduate degree, Andy was hired as the assistant winemaker at Harlan Estate in Oakville. He worked there until spring of 2001, when he was named winemaker at Staglin Family Vineyard in nearby Rutherford. Andy currently works as an independent consulting winemaker, making wine for Screaming Eagle, Dalla Valle, Arietta, Dancing Hares Vineyard and Ovid Vineyards in the Napa Valley, and consulting for Jonata in the Santa Ynez Valley. Dirk Hampson Director of Winemaking and Chairman, Nickel & Nickel

Few winemakers realize the opportunity to build a winemaking program from the ground up, living and growing with the vineyards over more than two decades. Dirk Hampson, chairman and director of winemaking at Nickel & Nickel, and sister wineries Far Niente and Dolce, counts himself among the fortunate.

Hampson joined Far Niente as assistant winemaker in 1982, the same year that winemaking returned to the historic property aft er an extensive, three-year restoration by proprietor Gil Nickel. Although Nickel produced Chardonnay in 1979, 1980 and 1981, the wines were produced at another location. Nineteen eighty-two also marked the fi rst harvest of Cabernet Sauvignon at Far Niente.

An Oregon native and enology graduate from the University of California, Davis, Hampson honed his craft at some of Europe’s greatest properties, including the Rheingau estate of Schloss Vollrads in Germany, followed by an apprenticeship in Burgundy at the Nuits St. Georges negociant fi rm of Labouré Roi. He then joined the Bordeaux First Growth Château Mouton Rothschild, where he was the fi rst American to apprentice with the winemaking staff .

Hampson brought his depth of knowledge and craft smanship to Far Niente, where he was charged with developing the fl edgling wine program focused exclusively on estate bottled Chardonnay and Cabernet Sauvignon. He was named winemaker in 1983, and in 1991, Hampson was made a partner and appointed to the board of directors. Six years later, Hampson was named director of winemaking.

In 1997, Hampson and his partners, Gil Nickel and Larry Maguire, founded Nickel & Nickel, a Napa Valley winery devoted exclusively to producing 100 percent varietal, single-vineyard wines. Th e fi rst wines – from the 1997 vintage – were released in 2000, and ground was broken on the new winery in Oakville, in 2001. Hampson was joined by the newest partner in the business, Erik Nickel, in the construction and historic restoration project. Nickel & Nickel opened to the public in July 2003.

Hampson strives to achieve a balance of intensity and elegance in his winemaking. Experimentation in the vineyard and the winery always remains important in his search to improve. It was this experimentation in 1985 that led to the creation of Dolce, a distinctive late harvest blend of Semillon and Sauvignon Blanc, regarded by many to be the fi nest late harvest wine produced in North America.

Today, although he has three winemakers reporting to him for Far Niente, Dolce and Nickel & Nickel, Hampson remains hands-on with his team and his partners, regularly tasting from the barrels, sourcing new vineyards and shaping the vision of the wineries’ futures. Speaker

Karen MacNeil Wine Educator, Consultant and Writer

In style, knowledge, skill, passion, and presentation, no one tops Karen MacNeil on wine. Th e preeminent wine educator, consultant and writer has earned her stripes, enchanting audiences and winning every major wine award in the English language. Her articles on wine and food have been published in more than 50 United States magazines and newspapers including Th e New York Times, Food & Wine, Saveur, and Town & Country. She is the author of the award-winning book, Th e Wine Bible, a best-selling wine book in the United States, with more than half a million copies sold since it was released. Ten years in the making, Th e Wine Bible has been called the most comprehensive and authoritative book on wine written by an American author, and Karen has been acknowledged as the “best wine teacher” in the country.

Karen is the host of Emmy-award winning Wine, Food & Friends with Karen MacNeil, the fi rst television series on wine in the United States. Th is thirteen-part series reached a national audience on PBS. In 2006 her companion book, Wine, Food & Friends, was released.

Karen is the creator and Chairman of the Rudd Center for Professional Wine Studies at the Culinary Institute of America in the Napa Valley. Th e multi-million dollar wine center has been called the “Harvard of wine education.”

With her team at Karen MacNeil & Company, Karen creates and consults on unique wine experiences, seminars and programs for corporate clients, businesses and individuals. Recent past clients have included Lexus, Merrill Lynch, Disney, General Electric, UBS, NBC, and Mattel, among numerous others. She is the immediate past wine consultant for Singapore Airlines and Sunset Magazine.

In March 2008, Karen launched one of her websites on erobertparker.com, where she provides online wine education and a monthly blogicle called One Woman’s View.

Finally, Karen has received numerous accolades. In 2004, the James Beard Foundation named her Outstanding Wine and Spirits Professional of the Year. Th e following year, she was named Wine Educator of the Year by the European Wine Council. Past recipients of the Council’s awards have included journalist Morley Safer (60 Minutes), fi lmmaker Francis Ford Coppola, and winemaker Robert Mondavi. In 2007, Karen was honored with the Wine Literary Award by the Wine Appreciation Guild for her substantial contribution to the literature of wine, joining laureates such as Hugh Johnson, Robert M. Parker Jr., and Jancis Robinson. Th e International Wine & Spirit Competition recognized Karen as “the voice that has most eff ectively communicated wine or spirits to the public in the past year” by awarding her the 2008 trophy for Communicator of the Year. In a profi le featured in Time Magazine in 2004, Karen was named America’s “Missionary of the Vine.” She holds an Advanced Certifi ed Wine Professional Degree. V I K L L A E O

Chris Phelps Winemaker, Swanson Vineyards & Winery

Winemaker Chris Phelps grew up in the hills of the Livermore Valley, east of San Francisco, in a family of wine lovers. His early interest in winemaking grew out of his parents’ practice of making a barrel or two of Zinfandel or Cabernet for family and friends. Chris attended UC Davis with the sensible plan of becoming a doctor. However, his love of wine and France pulled him into the school’s Enology and Viticulture department, an internship at Louis M. Martini in Napa Valley, and the world of professional winemaking,

Chris then embarked on a 16-month sojourn in Bordeaux, which begin with a year at the Institute of Enology. He met Christian Moueix, who persuaded him to stay on to manage the 1982 harvest at Château des Laurets, in the Puisseguin-St. Emilion district of Bordeaux. It was during this trial-by-fi re experience that Chris met his mentor, the brilliant Jean-Claude Berrouet, who served for 44 years as the winemaker of Moueix-owned Château Pétrus. To this day, Chris still credits much of his inspiration as a winemaker and his solid understanding of the technical challenges of the winemaking craft to Berrouet’s tutelage.

Upon returning to Napa Valley, Chris went on to spend twelve years as winemaker at Dominus, under Berrouet’s guidance. He considers the 1991 and 1994 vintages to be among the greatest wines he has helped to create. He then spent seven years at Caymus Vineyards, managing all red winemaking from 1999 through 2002. Swanson Vineyards then persuaded him to join them as winemaker, setting the stage for that winery’s current renaissance. Chris, who lives with his family in St. Helena, continues to shape wines of great balance, refi ned texture and singular aromatic and fl avor profi les that evoke their place of origin.

Paul Pontallier General Manager, Château Margaux

Born in 1956 in Bordeaux, in a family of longtime, established wineproducers. Married with 4 children.

Studied agronomy in Paris, viticulture in Montpellier, and came back to Bordeaux in 1978 to prepare a Ph.D of Oenology at the renowned Institute of Oenology. Became Doctor of Oenology in 1981, aft er a thesis on barrel ageing of red wines.

A few months later, went to Chile, South America, where he worked a year and a half and as a professor of Oenology at the University of Santiago, thus accomplishing his military service in what is more or less the equivalent to the Peace Corps.

Came back to France in 1983 and immediately started working as a winemaker, manager, and then general manager of Château Margaux.

Since 1990 he is also an owner of Domaine Paul Bruno, a Chilean winery which he and his friends Bruno Prats and Felipe de Solminihac founded in the well known Maijo Valley, near Santiago. It is composed of 60 acres of premium vineyards entirely dedicated to Cabernet Sauvignon. Th eir fi rst vintage was 1993.

Leonardo Raspini General Manager and Agronomist, Tenuta dell’Ornellaia

Leonardo Raspini was born in Montevarchi (Arezzo) on June 11 1965.

Aft er brilliantly obtaining his diploma as agriculturalist in 1984, he decided to continue his studies in the same sector, obtaining a Degree in Agricultural Sciences in 1991.

In 1992 he became a certifi ed Agronomist, working fi rst for the Regione Toscana and subsequently for the Cooperativa Agricola “Loppiano Prima” in Incisa. During these years he also worked with Arezzo’s Istituto Sperimentale di Viticoltura.

Until 1996 he provided technical assistance, promoted consortium activities, and provided fi nancial management for the Consorzio Vivaisti Toscani.

From 1997 to 1999 he was Technical Director of the Gruppo Lungarotti, and until 2001 Director of the Cantina Tenimenti Angelini San Leonino (Castellina in Chianti, Siena). Since 2001 he has been General Manager of Tenuta Dell’Ornellaia, Bolgheri (Livorno). Speaker

Michael Silacci Winemaker, Opus One

Michael Silacci joined Opus One in March 2001 as director of viticulture and enology and became winemaker in January 2004, taking on responsibility for all aspects of vineyard management and winemaking.

Prior to his appointment at Opus One, Mr. Silacci spent 6 years as winemaker at Stag’s Leap Wine Cellars, one year as winemaker at King Estate in Oregon, and 6 years at Beaulieu Vineyard. He also made wine in France and Chile. Mr. Silacci holds a master’s degree in viticulture from the University of California, Davis in addition to undergraduate degrees in enology from the University of California, Davis and the Institut d’Oenologie at the Université de Bordeaux.

Advancing a holistic vision of winegrowing as the ultimate expression of terroir, Mr. Silacci ensures that the connection between viticulture and winemaking at Opus One is seamless, refl ecting the philosophy of founders Baron Philippine de Rothschild and Robert Mondavi.

Jonathan Swinchatt EarthVision, Inc.

Jonathan Swinchatt is the co-author of “Th e Winemaker’s Dance: Exploring Terroir in the Napa Valley,” the premier book on Napa’s unique geology and its relationship to growing high quality grapes and making fi ne wine. Trained as a geologist at Yale and Harvard, Jonathan was a Professor of Geology and Environmental Education before becoming a builder of energy effi cient living spaces and then a producer of award-winning video programs. One of his early productions was “EarthNectar,” on the geology and wine of the Napa Valley. More recently he has been conducting geologic analyses of vineyards for winegrowers in California and Europe, including Opus One, Harlan Estate, and Rudd in the Oakville AVA. He also writes about North American wine regions for Th e World of Fine Wine. Speaker

ERICK TOURBIER Technical Director, Château Mouton Rothschild

Trained as an enologist at the Institut d’Oenologie at the Université de Bordeaux (in the same class as Opus One’s winemaker Michael Silacci), Erick Tourbier worked four years at the Centre d’Informations Oenologiques in Soussac among 150 winery proprietors, benefi tting from their enological expertise.

In 1989, Mr. Tourbier joined Baron Philippe de Rothschild, S.A. to work on its three Château wines from Pauillac: Mouton Rothschild, D’Armhailhac, and Clerc Milon. He also developed techniques for vinifying Aile d’Argent, a Bordeaux white wine from Mouton Rothschild refl ecting the terroir of Mouton itself.

Since 2000, Mr. Tourbier has been charged with integrating the technical aspects of Mouton’s vineyards and winemaking, and is part of the Production Consulting Group at Opus One. V I K L L A E O

Michael Weis Winemaker, Groth Vineyards & Winery

Michael Weis, winemaker at Groth Vineyards & Winery since 1994, brings more than three decades of experience with Oakville grapes and wines to the job of nurturing the best possible expression of the vineyards. In fact it was Michael’s vast experience in Oakville that drove the decision to replant the Oakville Chardonnay vineyard to Cabernet Sauvignon.

Michael obtained his undergraduate degree from UC Santa Barbara in 1969 and a Master’s degree in Microbiology from UC Berkeley in 1971. At Berkeley, Michael studied pathogenic fungi but was more fascinated with the Botany department. Weekend getaways included trips to Napa Valley where he tasted his fi rst sip of Mondavi Fumé Blanc in 1971. “It was the epiphany for me regarding what people then referred to as serious wine,” he remembers. Shortly thereaft er, Michael discovered an entire department dedicated to grape growing and winemaking at UC Davis. He immediately transferred.

Looking back on that decision, Michael refl ects, “aft er two years of research, a Master’s degree and the publication of a very esoteric article in an equally obscure international medical journal, I realized that winemaking might off er a more fulfi lling future.” Aft er graduate studies at Davis, he worked as an experimental enologist for Robert Mondavi (1973-74) and as winemaker/General Manager for Vichon (1985-93) before joining Groth in 1994.

Michael’s winemaking philosophy is simple. Be true to varietal integrity. Minimize manipulation through gentle handling. Express the character of the vineyard location. Take full advantage of years and years of experience working with the same vineyard sites. Make the best wine that a vintage has to off er from great vineyard sources. Strive to make better wine every year. Always searching for techniques that can help show off Groth’s exceptional fruit, Michael conducts experiments every year on small batches of grapes and wine, fi ne-tuning wines with an already established pedigree.

Th ere’s more to life than wine, and in Michael’s case, there’s Bocce—not just a form of recreation, but an addiction. Michael’s team, Th e Quatro Stupidos, is made up of winemakers, label printers, grape growers and wine equipment salesmen. He has not given up hope that Dennis and Judy Groth will someday let him install that Bocce court. V I K L L A E O INTERNATIONAL
