Initial experiments are reported in which coffee was brewed at different temperatures for different lengths of time. The resultant drink was found to undergo changes in the objective properties of acidity and total dissolved solids (TDS), as well as changes in the subjective measurement of flavor depending on brew parameters. This discovery indicated that the flavor of coffee could be improved through precise control of coffee brew parameters, namely brew temperature and duration. A business model and internet-connected system for coffee brewing is presented.

Tamping compresses the ground coffee, slowing the rate at which the espresso is extracted, liberating the full flavour of the coffee. Coffee prepared without tamping will tend to be watery, have a straw like flavour, and will lack any crema. Things to consider when choosing your tamper Base Diameter When choosing a tamper, it is important to select one with the diameter appropriate for your machine. Look at the list below and, if your brand/model is not specified, we recommend bringing in your filter basket to the Rosebery Coffee Hub for a perfect match. If your tamper is too small for the basket, certain areas in your ‘puk’ will experience higher pressure than others, which will result in uneven extraction and a very unpleasant cup. A Flat or Convex Base Convex tampers are designed to redistribute ‘mounded’ coffee in the basket when tamping. With that said, we recommend instead leveling the ‘mound’ with your finger (or dosing tools for higher accuracy) and using a flat tamper for an easier, even distribution. Some baristas do prefer tamping with a light convex tamper if choosing not to level the mound with their hands or any dosing tools. Note if you do choose a convex base, you may need the extra attention to your dosing and distribution.

Hermann Simon Abstract The white goods sector represents one of the hallmarks of the Italian economy; it is considered the second manufacturing industry after the automotive. This sector is fragmented into a wide range of products such as chimneys and smoke ducts, hoods, air-conditioning and heat pumps, large appliances, small appliances, freestanding cookers, electric boilers, professional equipment for the food service and so on. The dissertation examines in depth only one of them, the segment of the Professional Equipment for the Food Service. Although the manufacturers of Professional Equipment represent a market niche and they generate only a small share of the total turnover of the white goods sector, the Confindustria association CECED Italia identifies the Professional Equipment as the healthiest branch inside the white goods. Unlike other sectors, the figures show how the domestic production of Professional equipment for the Food service has not suffered from the arrival of the Low Cost Countries in the international scene.
