Located in the heart of the South Dennis Historic District, the Red GE AY! Cottage sits on the site of the 1828 Capt. Wilbur Harden Home- OTTA ID stead, later the Capt. Obed Nickerson, Jr. Homestead, which RED C FR was “flaked” (an old Cape Cod term meaning dismantled piece S P M by piece) and moved to Pocasset, Mass. in 1926. Today’s “Red I -2P Cottage” actually started out as a one-room “camp” built in 1936 H 11 A M C F by Walter J. Weeman. This recipe is simple (and good) and anything cranberry goes hand-in-hand 1 cup ground young American cheese with Cape Cod! H cup ale (beer) H teaspoon dry mustard N cup crushed whole cranberry sauce H teaspoon paprika 2 tablespoons packed brown sugar H teaspoon salt G teaspoon rum extract G teaspoon white pepper 1 - 8 oz. brie cheese 2 strips bacon 2 tablespoons chopped (optional) 2 baked sausages (optional) Combine cranberry sauce, brown sugar, rum extract and nutmeg. Peel off 2 slices tomato (optional) top ring of brie cheese, leaving G inch rim. (This works best if Brie is Mix together all dry ingredients in a double boiler. Add cream sauce and ground allowed to sit at room temperature for a while.) Top Brie with cranberry cheese; let cook until cheese is melted , then add ale and Worcestershire sauce. Mix all ingredients together in a large bowl and combine with a mixer. Pack 1 doz. eggs G cheese into crocks. Makes 2 H cups. 1H tablespoons fresh parsley PIER 4 CHEESE SPREAD. 1H tablespoons fresh dill 2 tablespoons unsalted butter G cup cream cheese In a large, deep bowl, lightly whisk eggs, milk, salt and pepper. In another bowl G cup butter mash cream cheese with parsley and dill until well-blended. In a large skillet (non- 2 lbs Wispride cheddar cheese stick) heat butter until it’s sizzling, but not brown. Pour in egg mixture and over 1 tablespoon Worcestershire sauce low heat, gently stir eggs until they just begin to thicken. Immediately add the 1 tablespoon horseradish herbed cream cheese in several chunks and stir constantly until the eggs are set and 2 tablespoons sherry creamy. Serves 6. Addictive and guaranteed to be a smash hit! Blend cream cheese and butter. Add cheddar cheese in small amounts until well blended. Add remaining ingredients and blend until smooth. Refrigerate. Remove from refrigerator one hour before serving. BOURSIN CHEESE. 24 ounces (3 8-ounce packages) cream cheese, softened at room temperature 3 garlic cloves, crushed (more or fewer, cloves depending on taste) 2 tablespoons dry vermouth 2 tablespoons fresh parsley, minced I teaspoon salt or to taste H teaspoon dry basil or 2 tablespoons fresh G teaspoon dry tarragon or 1 tablespoon fresh G teaspoon dried thyme, or 1 tablespoon fresh G teaspoon dry sage or 1 tablespoon fresh G teaspoon white pepper (I’ve also been known to use black) Place all ingredients into a food processor (or blender) Process until well-blended and free of lumps. Chef Dan’s Recipe Vault SIMPLE RECIPES FROM OUR RED COTTAGE VAULT! CHICKEN WINGS. 1 small bottle soy sauce 1 teaspoon ginger 1 clove garlic N cup brown sugar 1 teaspoon dry mustard Place ingredients in small saucepan and bring to a boil. Pour over 4 to 5 pounds “River’s Edge,” along the shore at Bass River. Pictured on left: 1833 Toll House at Bass River of wings and let sit for a few hours, or overnight. Place evenly in foil-lined baking Upper Bridge, also known as High Bank Bridge, South Dennis, Mass. dish and bake in pre-heated 350 degree oven for one hour or until wings are tender. (This is the simplest and most delicious chicken wing recipe!)
MARINADE FOR LAMB OR CHICKEN – AND A SALAD DRESSING, TOO! This recipe doubles as a wonderful salad dressing! Experiment with propor- tions to suit your own taste. You can’t go wrong. Mix, to taste, the following: Worcestershire Sauce Fresh Lemon Juice Oregano Salt Minced Garlic Pepper CRAZY PAIRINGS! -Fresh grapefruit, sectioned, and drizzled with Worcestershire sauce. -Fresh hulled, washed and halved strawberries, marinated in balsamic vinegar “Row, Row, Row Your Boat!” and topped with freshly ground black pepper. Grand Cove, circa 1930, South Dennis, Cape Cod, Mass. -Vanilla ice cream sprinkled with chili powder. Kicks it up a notch! -Peanut butter, bacon and banana in a sandwich is an old New England classic! NEPTUNE’S DELIGHT Finally, we can’t leave Cape Cod without a couple of seafood recipes! SCALLOPS IN SHERRY-MUSTARD. Sauce: 1 pound bay scallops 4 tablespoons fresh thyme, chopped Juice of 1 lemon 1 teaspoon extra-virgin olive oil 2 tablespoons dry sherry 1 tablespoon Dijon-style mustard Chopped Italian parsley Mix scallops with thyme and lemon juice. Heat oil in skillet and saute scallops “A Day At the Shore,” High Bank Road, looking south, towards Dutch’s Way, South Dennis, Mass. for about 1 minute. Remove scallops to warm plate. Add sherry, mustard and reserved marinade to skillet. Bring to a boil. Reduce slightly and pour over scallops. Sprinkle with chopped parsley. Scallops may be served plain, over rice, or linguini. FLOUNDER OR SOLE VERMOUTH. Fillets of flounder or sole Italian seasoned bread crumbs Butter Salt Pepper Dry Vermouth Rinse filets, pat dry and place in lightly greased baking dish after coating with bread crumbs. Salt and pepper to taste. Dot with thin slices of butter. Drizzle with dry vermouth. Bake in 350 degree oven for 12 minutes and serve. “Watch Out! Drink Aptucxet Trading Post, Bourne in the surroundings of old Cape Cod at the c.1675 Hoxie House, thought to be the oldest on Cape Cod. The Dexter Grist Mill, and the Sandwich Glass Museum Heritage Museum and Gardens, Sandwich cap off the day with a visit to the Thornton Burgess Society’s Green Briar Nature Center and Green Briar Jam Center.
BARNSTABLE - Journey on a whale watch out of charming Barnstable Harbor. Drive Route 6A, also known as the Old King’s Highway and enjoy a taste of antique Cape Cod architecture. Along the way, the gardens behind St. Mary’s Episcopal Church are an oasis of beauty. Located between Hoxie House, Sandwich St. Mary’s and Barnstable Harbor be sure to visit the U.S. Coast Guard Heritage Museum in the historic 1855 United States Custom House located at the Donald G. Trayser Museum Complex. A perennial favorite, of course, is a walk along Main Street, Hyannis, where shops and restaurants of all varieties abound, and where Hyannis Harbor, and all it has to offer, is just steps away.
YARMOUTH - Options are many for children and adults of all ages alike in Yarmouth. Launch your tour of Yarmouth at the Barnstable/Yarmouth line on Route 28 and discover the Baxter Mill, the oldest surviving watermill on Cape Cod. Fun for the family abounds with kayaking, trampolines, miniature golf, souvenir ships, beaches and more! Take a winding drive through the beautiful and historic village of Bass River in South Yarmouth and stop at the 1791 Judah Baker Windmill. From there cut across the Cape to the northside of Yarmouth and enjoy bathing, picnicking, the boardwalk or a sunset on Grey’s Beach at Bass Hole for unparalleled views. While on Route 6A in Yarmouth Port visit the Historical Society of Old Yarmouth’s Capt. Bangs Hallett House, the Kelley Chapel. the Cobbler’s Shop, and the HSOY Walking Trails. Finish it all off with one of the many antique stores or a bookstore on Route 6A.
