Phylogenetic Analysis of Bacillus Strains Isolated from Fermented Soybean Foods of Asia: Kinema, Chungkokjang and Natto

ABSTRACT

Kinema. chungkokjang and natto are sticky, non-salty.flavouresomefermented soybeanfoods ofAsia. A total 0/38 .strains ofdominant endospore-forming and rod-shaped hacteria were isolatedfrom thesefermented soybeanfoods andstudied phenotypically. On the basis ofselected criteria andAP/50CHB tests, all endospore-forming rods were identifiedas BaciIlus suhtilis. The identification was confirmed by phylogenetic analyses carried DuI on six randomly selected strains (?(Bacillus subtilis by sequencing ofthe J6S rRNA gene.
