Market Refurbishment and European Union Hygiene Regulations Full Approval In the 1990’s the Market underwent a £70 million refurbishment to equip it for the future and enable it to comply with modern hygiene standards. The ancient meat market has been transformed into the most modern in Europe, possibly even the world. More recently the Market and its 42 meat traders each obtained full approval from the Food Standards Agency under EU Hygiene Regulations 853/2004 to continue to trade as a European Union wholesale market. Today, the refurbished buildings accommodate just 23 units in the East Building and 21 in the West rather than being of uniform size, these units have been tailored where possible to the tenants requirements. The units are divided into a number of temperature controlled-areas depending on whether they are boxed or carcass traders. The process of change at Smithfi eld has not been restricted to the buildings alone, but has extended to the whole environment and working practices that had hardly changed in 130 years. The result has been the creation of a thoroughly modern temperature controlled environment inside a magnifi cent Grade II listed Victorian building. 8 Smithfields 2009 (v4-fin).indd 8 09/04/2009 17:35:23 Smithfields 2009 (v4-fin).indd 9 09/04/2009 17:35:25 The International Meat & Poultry Specialists With 6 strategically located regional offices throughout the UK, Vestey Foods are
